BEST EVER SAUSAGE WITH PEPPERS, ONIONS, AND BEER!
This is an excellent recipe I came up with one day. Serve with some nice Italian bread, and a bottle of your favorite beer.

Steps:
- Heat olive oil in a large heavy skillet over medium high heat. Cook sausage until browned on all sides. Remove sausage from pan, and set aside. Pour in 1 bottle of beer to deglaze the pan, scraping up any blackened bits from the bottom. Place the red peppers, green peppers, onions and garlic in the pan. Stir in the remaining beer and the tomato paste. Season with oregano, cilantro, hot sauce, salt and pepper. Cover, and simmer until onions and peppers are tender. Slice the sausages into bite size pieces, and add to the peppers. Cover, and simmer until sausage is cooked through.

EASY FRIED POTATOES & ONIONS
This is so good. My grandmother was from Ireland and she used to make this dish all the time. When I make it, it always reminds me of her. I hope you enjoy it :)

- Heat oil and butter in a skillet. Add the onions and cook until soft and lightly browned. Remove the onions from the pan and reserve.
- Slice the potatoes into 1/4 inch slices. Add them to the hot pan and brown on both sides.
- Return the onion to the pan, toss and season. Serve warm.

- In a hot sauté pan, add the lard and melt. Add the onions, season with salt & pepper. Cook over medium heat until they start to caramelize about 4-5 minutes, stirring frequently to avoid burning.
- Add in the linguica and heat until the linguica is cooked all the way through and the skin casing is just beginning to burst, 6-8 minutes.
- Transfer to platter and serve.

- In a large skillet, melt 2 tablespoons of the butter with 1 tablespoon of the olive oil over medium heat. Add the onions and cook, stirring occasionally, until golden, about 15 minutes. Transfer the onions to a bowl and set aside.
- Generously season both sides of the steak with salt and pepper. Add the remaining 1 tablespoon of the oil to the skillet and fry the steak over medium heat, turning once, until browned, about 6 minutes per side for medium. Transfer the steak to a serving platter and cover to keep warm.
- Add the bourbon to the skillet and, over medium heat, scrape up any bits that cling to the pan. Allow the liquor to simmer until reduced by half, about 1 minute. Add the onions and the remaining 2 tablespoons of butter and stir until the butter is melted. Reduce the heat and gently simmer until the onions are heated through, about 2 minutes. Season, to taste, with salt and pepper and stir in any juices that have run off from the steak.
- To serve, cut the steak into 1/4-inch-thick slices and top with the onions.

- Heat the olive oil in a dutch oven or large sauce pan over medium heat. Add the sliced garlic, quartered tomato, tomato paste and dry seasonings. Let everything cook until a sauce forms. You can break the tomato up with a wooden spoon to help it cook down faster.
- Add the onions and a splash of water to the sauce and cook for about 1 minute. Then add the peppers and linguiça. Keep the heat at medium and toss the linguiça, onions and peppers in the tomato sauce. Add the fresh cilantro.
- Once you start to smell the linguiça, add the rest of the water to the pan, cover it and let simmer over low heat for 10-15 minutes. Lift the lid to stir occasionally and then re-cover and continue to let simmer (you’ll only need to do this once or twice).
- Once the linguiça, peppers and onions are done simmering, lift the lid and taste the sauce. Add more salt and pepper if needed and give one last stir before turning the heat off.
