Egg Batter Pan-Fried Flounder With Green Garlic image

For savory, moist, delicate flounder, it is difficult to beat this fast, easy method. Lightly coat the fillets in flour, then dip them in a mixture of beaten egg and milk. Slide them into a hot skillet filled with oil to a 1/4-inch depth and let them fry until golden, a mere two minutes or so per side, without jostling them around too much. Serve with a sauce of green garlic cooked in butter, with the juice of half a lemon providing a jaunty, bright finish. A sprinkling of chopped parsley makes for an elegant presentation, lifting an already elevated weeknight dish. Use fluke or sole in place of the flounder if you'd like, or scallions for the green garlic.

1 1/2 pounds boneless flounder or sole fillets, preferably 4 6-ounce pieces
Salt and pepper
2 large eggs
1/2 cup milk
1/2 cup all-purpose flour for dredging
Mild olive oil or vegetable oil for frying
4 tablespoons unsalted butter
1/3 cup finely chopped green garlic, both white part and tender green stalks
Juice of 1/2 lemon
3 tablespoons chopped flat-leaf parsley
Lemon wedges

Steps:

  • Season the fish fillets with salt and pepper. Make the egg batter by whisking together the eggs and milk in a shallow bowl, along with a pinch of salt.
  • Put the flour on a plate. Coat each fillet lightly on both sides, then submerge the fish in the egg batter. (This can be done up to 30 minutes ahead.)
  • Pour about 1/4 inch oil in a wide skillet over medium-high heat. When the oil looks wavy, lift the fish from the egg batter one piece at a time, allowing excess batter to drip off. (Discard remaining batter.) Carefully lay each fillet in the pan and let fry gently until golden, about 2 minutes per side. Remove and blot briefly on paper towels, then transfer to a warmed serving platter.
  • Pour off any remaining oil and return the pan to the heat. Melt the butter in the pan and add the green garlic, and a little salt and pepper. Let cook without browning for about 1 minute, then add the lemon juice.
  • Spoon the green garlic butter over the fish. Sprinkle with parsley, garnish with lemon wedges and serve immediately.

Cornmeal and pancake or biscuit mix provide a crispy coating for this deep-fried flounder. Serve the flounder fillets with fries and tartar sauce.

8 flounder fillets (skin removed)
2 cups whole milk (or buttermilk)
1 cup pancake mix (or biscuit baking mix )
1 cup cornmeal
3 cups of oil (for deep-frying )
Dash of salt (to taste)
Garnish: lemon wedges
Garnish: parsley sprigs

Steps:

  • Gather the ingredients. Heat the oven to 200 F, to keep fried fish warm while frying subsequent batches.
  • Place the flounder fillets in a shallow baking dish; pour in enough milk or buttermilk to cover the fillets. Set aside.
  • In a mixing bowl, combine the pancake mix or baking mix and cornmeal; stir to blend.
  • In a deep heavy skillet or sauté pan, heat about 1 1/2 to 2 inches of oil to 365 F (185 C). If you don't have a deep-fry thermometer, toss a 1-inch cube of bread into the hot oil. It should turn golden brown in 1 minute.
  • Drain the fish using a colander.
  • Dredge each piece in the baking mix and cornmeal mixture, coating the fillets thoroughly on both sides. Shake off any excess.
  • Add the fish fillets to hot oil and fry.
  • Turn once after about 2 minutes, until golden brown and crisp on both sides (about 4 minutes total). Fry a few at a time to keep the oil temperature from dropping. If the temperature drops significantly and does not recover quickly, the coating will absorb more oil.
  • Drain the flounder fillets on paper towels and sprinkle lightly with salt, to taste.
  • Transfer the fried fish to a rack in a baking pan and keep warm in the preheated oven for up to 20 minutes, if desired.
  • Serve fried flounder hot, garnished with lemon wedges and parsley sprigs, if desired.

Fried Flounder with Tartar Sauce image

This is my family's method of making fried flounder. It is tried and true, and I have made only one change to it since the 1970s: I add a little mustard to the egg wash mix, which I learned in Louisiana. It adds a ton of flavor. You'll also see the homemade fries on the plate. If you want to make them, I followed this recipe from The Splendid Table.

1 cup mayonnaise
2 teaspoons mustard, (Dijon or brown)
2 teaspoons lemon juice
A few drops of Tabasco sauce
1/2 cup chopped pickles
1 teaspoon small capers
1 shallot, minced fine
1 tablespoon minced chives
Salt and black pepper
2 to 3 pounds skinless flounder fillets
Salt
1 cup flour
2 eggs
1/2 cup milk
1 tablespoon mustard
1 cup breadcrumbs
Oil for frying

Steps:

  • For the tartar sauce, mix everything in a bowl and set it in the fridge. Salt the fish lightly on both sides and set aside.
  • Set up a breading station. You will want plates or shallow bowls or somesuch. The first has the flour in it -- and if you want more seasoning than I am suggesting in this recipe, this is where you add it -- then another basin with the eggs, milk and mustard all beaten together, then the final basin with the breadcrumbs.
  • Dredge the flounder in the flour first, pressing it into the fish and making sure you get it totally covered. Now sweep the fillet through the egg wash, again making sure you get it totally coated. Finally, set it in the breadcrumbs and press them in to make a good coating. Set each fillet on a plate or tray in the fridge and let it rest 1 hour, and up to all day.
  • When you are ready to fry, pour in enough oil to get to a depth of about 1 inch in a large frying pan. If you happen to me making the fries to go with this, make them first and hold them in the oven. Heat the oil over high heat. Set a rack over a baking sheet and put that in the oven. Set the oven to "warm."
  • When the oil hits 350F, fry your fish, right from the fridge. This works because they are very thin, and you want a pretty golden crust without overcooking the fish. Room temperature flounder fried this way will overcook. It take about 3 to 5 minutes per side to get golden brown. Move each finished fillet to the rack in the oven. When they're all done, serve it up with the tartar sauce.

Flour, for dredging fish
2 tablespoons vegetable oil
3 tablespoons butter, divided
1 lemon, juiced
1 small bottle capers

Steps:

  • Wash fillets in cold water and pat dry. Sprinkle with salt and pepper. Dredge fillets in flour. Place oil and 2 tablespoons butter in flat, heavy-bottomed skillet and heat on medium-high until butter melts. Keeping heat at medium-high, cook fish on 1 side about 3 minutes (more or less, depending on size of fillets), until deep brown and crispy. Turn fish and cook on second side, about 3 minutes. Turn fish only once.
  • Remove fish to serving platter. Turn off heat. Into hot skillet, whisk in remaining 1 tablespoon butter. Add lemon juice. Pour in capers, liquid and all. Whisk. Pour thin sauce over fish fillets. serve at once.

  • In a medium bowl, whisk the egg yolks with the milk. Spread the flour and bread crumbs in 2 separate wide, shallow bowls; season with salt.
  • Dredge the fish in the flour, dusting off the excess. Dip the fish in the egg mixture, then dredge in the bread crumbs. Transfer to a large plate.
  • In a 12-inch cast-iron skillet, melt 2 tablespoons of the butter in 2 tablespoons of the olive oil. Add 2 fish fillets and cook over moderate heat, turning once, until golden and crispy outside and white throughout, about 6 minutes. Transfer the fish to plates. Wipe out the skillet and repeat with another 2 tablespoons of butter and the remaining oil and fish.
  • Wipe out the skillet. Whisk in the remaining 4 tablespoons of butter and the 2 tablespoons of lemon juice; season with salt. Spoon the sauce over the fish, garnish with parsley and serve with lemon wedges.

  • Remove skin from top side of flounder: first make an incision through to the flesh close to the tail on the top, darker side of the fish. Peel some of the skin away from the flesh and, when you have enough of a grip, place one hand firmly on the fish and with the other pull towards the head. The skin should come away quite easily in one large piece (especially if very fresh). Cut the skin where the body reaches the head and discard.
  • Heat a large frying pan with the oil. Lightly dust the first flounder in flour on both sides and shake off any excess. Cook the fish for about five minutes on each side, seasoning with salt. Remove to a dish, cover with foil and keep warm while you cook the other fish. Repeat as before, remove fish, then add the butter and almonds to the pan and cook for a few minutes, stirring, until the almonds turn golden and the butter turns brown.
  • To serve, add the chopped parsley and a squeeze of lemon and pour over the fish. Serve immediately.
