Cod with Asian Orange Glaze combines all the wonderful flavors of the East with ginger, sesame, soy and the sweetness of oranges.

2 Tbsp Orange marmalade
2 tsp Sesame oil
1 tsp Soy Sauce, low sodium
1/2 tsp Ginger (Grated)
1 Clove Garlic (Minced)
1 Tbsp Rice wine vinegar
1/4 tsp Miso
1 Tbsp Olive oil
2 4 oz portions Cod filet
1/4 tsp Pepper

Steps:

  • Preheat oven to 400 degrees F
  • In a sauce pan over medium high heat add orange marmalade, sesame oil, soy sauce, ginger, garlic, rice vinegar and miso. Stir until thoroughly combined and just beginning to boil. Set aside.
  • Add oil to ovenproof frypan and turn to medium high heat. As it warms pepper both sides of cod and add to frypan. Saute cod 3-4 minutes until browned. Flip filets over and spoon about a Tbsp of sauce over each filet.
  • Place in oven 5-6 minutes until fish flakes easily.
  • Spoon remaining sauce over baked portions.

60 ml light soy sauce
40 ml rice wine vinegar
1 pinch five-spice powder
40 ml sesame oil (original recipe uses double this but I think it kills the flavour of the fish)
salt and pepper
1 bunch spring onion, finely shredded
1 red chile, very finely chopped
6 blue-eye cod fish fillets (175-225g each)
plain flour, seasoned with
salt and pepper, for dusting
1 tablespoon butter

Steps:

  • To make the dressing, boil the soy sauce, vinegar and 5 spice powder together.
  • Remove from the heat, mix in the sesame oil and season with salt and pepper.
  • Set aside.
  • Mix the spring onions with the chilli.
  • Lightly coat the fish fillets with seasoned flour.
  • Heat the knob of butter in a fry pan and cook for about 3-4 minutes on each side (depending on thickness) until cooked.
  • Reheat the dressing and add the onions and chilli-cook for 1-2 minutes more.
  • Serve the fish with the dressing spooned over.

Black or White Pepper
Garlic or Garlic Powder
Onion Powder

Steps:

  • 1 - In a bowl mix egg and milk together, add a pinch of your seasonings , in another dish put your bread crumbs , then in another dish put flour and a pinch of your seasonings together. 2 - Season your cod with a pinch of salt, pepper, onion powder and garlic. Start rolling your cod in the egg mixture then roll your cod in the bread crumbs then after roll in your flour mixture. 3 - Preheat frying pan on medium heat for couple of minutes , then add one tbsp of olive oil after it starts to warm place your cod filets to pan start frying. 4 - Fry cod for 5 minutes on one side or until it's golden brown. Flip to other side and fry for another 5 minutes or until golden brown add more oil if needed. 5 - After all cod have been fried you can season again if needed , if you are not ready to serve your cod put on glass plate or rack and place in your oven on 170° , don't cover. This will keep your cod from going soggy and it will stay crisp. "Please note you can leave out the bread crumbs if you only like to fry your fish in flour."

Translated from Karlos Arguiñano's "Atrévete a cocinar". I've never found green peppers like the fine ones in Spain. They look much like poblanos but they're not spicy in the least, and they don't taste as strong. Red bell peppers might make a good substitute. Spring onions in Spain are about the size of a small regular onion in the US. I would use maybe 4-6 green onions if I'm in the US. The author doesn't recommend measuring equipment, so a tbsp means a soup-spoonful.

2 (200 g) fresh cod fish fillets, cut in half
3 green peppers
1 spring onion
2 garlic cloves
5 tablespoons olive oil
salt

Steps:

  • Peel green onion and julienne. Clean peppers, remove stems and seeds and cut into strips.
  • Without peeling them, crush garlic cloves with broad side of chef's knife.
  • Heat oil in large frying pan, add garlic cloves (still unpeeled) and fry until they start to turn golden. Transfer garlic to plate, peel and reserve.
  • Add cod to pan and fry 3 minutes each side. If the skin is still on, it's very important not to fry the skin side first. Fry the side with no skin first. After frying remove from pan, place on plate.
  • Add green onion and pepper to pan, add salt to taste and cook 12 minutes on med-low heat.
  • Return fish to pan with any liquid on the plate (the fish will release some liquid while it sits), also return peeled garlic to pan and cook on medium-low heat for 1 minute.
  • Serve fish and vegetables together.

1 (8 ounce) fillet cod fillet
¼ cup bread crumbs
1 egg, lightly beaten
1 tablespoon minced parsley
1 tablespoon grated Parmesan cheese
1 clove garlic, finely chopped
¼ teaspoon ground black pepper
3 tablespoons olive oil

Steps:

  • Place potatoes into a large pot and add salted water to cover by 1 inch; bring to a boil. Reduce heat to medium-low and simmer until tender, about 20 minutes. Add cod fillet to water and continue to simmer until fish starts to flake, 10 to 15 minutes. Drain and transfer potatoes and fish to a mixing bowl.
  • Add bread crumbs, egg, parsley, Parmesan cheese, garlic, and pepper to the fish and potatoes. Mash until thoroughly mixed. Form mixture into 6 discs.
  • Heat 1 tablespoon oil in a skillet over medium heat. Fry 2 cod cakes at a time in the hot oil until golden brown on each side, 5 to 10 minutes. Repeat with remaining cod cakes, adding more oil as necessary for each batch.
