Steps:
- Remove tenders from chicken breasts and save for another use.
- Pound chicken breasts to 1/4 inch thickness.
- Place flour in a dish.
- Sprinkle chicken with salt and pepper; dredge in the flour to coat.
- Melt 2 tablespoons butter in large skillet over medium high heat; add chicken and saute until cooked through, about 2 minutes per side.
- Transfer to platter; tent with foil.
- Melt remaining butter in same skillet over medium high heat; add shallots and grapes. Saute for 2 minutes.
- Add wine; bring to a boil, stirring up any browned bits from the bottom of the pan and cook.
- Add cream; bring to a simmer.
- Stir in the tarragon and season with salt and pepper.
- Spoon sauce over chicken and serve immediately.

CHICKEN HAM PARMESAN
This is a really great recipe for Chicken Parmesan! Plan ahead, the chicken has to soak in the egg/water mix for 1 hour.... Try using smoked sliced ham for this, it's really good, although the recipe does call for ham, it is still really good made without it, just with the cheese and sauce on top of the breasts.

Steps:
- Slightly beat together the eggs, milk (or water), salt, pepper, onion and garlic.
- Let the chicken soak in the egg/milk mixture for 1 hour.
- Mix the crumbs with herbs, grated Parmesan cheese, and (more salt and pepper if desired, I use seasoning salt).
- Remove the breasts from egg mixture.
- Roll in flour, then dip in the egg/milk mixture, then roll/coat in the breadcrumb/Parmesan mixture (shaking off extra crumbs).
- Fry the chicken in oil until cooked; drain on paper towels.
- Arrange breasts in a baking dish side by side.
- Top each breast with a slice of ham, then two slices (can use one if desired) of mozzarella cheese.
- Cover with pasta sauce (any amount desired).
- Bake for 20-22 minutes.

- Pat chicken cutlets dry. Season on both sides with 1/2 tbsp dried oregano, 1/2 tsp salt and 1/2 tsp black pepper. Coat the chicken cutlets with the flour; dust off excess. Set aside briefly.
- Heat 2 tbsp olive oil in a large cast iron skillet with a lid like this one. Brown the chicken cutlets on both sides (3 minutes or so). Transfer the chicken cutlets to a plate for now.
- In the same skillet, add more olive oil if needed. Add the mushrooms and saute briefly on medium-high (about 1 minute or so). Then add the tomatoes, garlic, the remaining 1/2 tbsp oregano, 1/2 tsp salt, and 1/2 tsp pepper, and 2 tsp flour. Cook for another 3 minutes or so, stirring regularly.
- Now add the white wine, cook briefly to reduce just a little; then add the lemon juice and chicken broth.
