PAN-FRIED CHEESE TOASTIE
It's as simple as a toasted sandwich but it tastes better! In this recipe you don't need to put in the ham or the chives but you can add extra ingredients (onions etc.)

Steps:
- Butter the bread and arrange the cheese and ham over half of the slices, buttered side down.
- Sprinkle over the chives and cover with the remaining slices, buttered side up.
- Preheat a frying pan and cook the sandwiches for 2 mins on each side, until golden brown and the cheese has melted.
- Cut into triangles and serve.

- Preheat skillet over medium heat. Generously butter one side of a slice of bread. Place bread butter-side-down onto skillet bottom and add 1 slice of cheese. Butter a second slice of bread on one side and place butter-side-up on top of sandwich. Grill until lightly browned and flip over; continue grilling until cheese is melted. Repeat with remaining 2 slices of bread, butter and slice of cheese.

While pan-frying cheese may not sound particularly healthy, as it caramelizes, it gives up a fair amount of butter fat, which stays behind in the pan. This might just be the new way to breakfast!

- Sprinkle Cheddar cheese into a nonstick skillet over medium heat, forming a circular shape. Fry until cheese is bubbling and starts to brown around the edges, about 2 minutes. Sprinkle red pepper flakes over the cheese.
- Crack egg over the center. Poke the tip of your spatula through the egg white until some of it runs out and flattens over the pan. Cook until cheese is browned to your liking and egg white starts to set, 3 to 5 minutes more. Scrape up the sides using your spatula and fold them over the yolk. Continue cooking for a few seconds until egg is securely encased but still runny.
- Transfer onto toast and top with green onions. Break open the yolk and sprinkle salt on top.

Just make sure that the water doesn’t touch the bread at all.Alternatively, if you want to avoid all water – you can add the lid right after adding the cheese to the bread, before making it into a sandwich. Leave the lid on just long enough for the cheese to start melting, remove the lid, create the sandwich, and flip it over to continue cooking until ready.

- To one piece of bread, add a nice grating of good-quality cheese that melts well, like Cheddar, Red Leicester or a mixture of the two.
- Place your second piece of bread on top, then cook in a sturdy non-stick frying pan on a medium heat for about 3 minutes on each side. This is important, because if it gets too coloured too quickly you won’t get the gorgeous ooze and melt in the middle, and this is all about encouraging that internal cheese lava flow.
- When lightly golden on both sides, lift the toastie out of the pan and grate a little layer of cheese into the pan where it was sitting, then add a little pinch of cayenne pepper.
- Place the toastie back on top. Leave it for just over 1 minute – wait for the cheese to bubble and the fat to spill out of it.
- Give the toastie a poke with a fish slice, and once it has a cheesy, doily-like crust on the bottom that moves as one, lift the toastie out of the pan and hold it on the fish slice for 30 seconds so the melted cheese hangs down, sets hard and forms an impressive cheese crown.
- Flip it onto the other side and once golden, serve, remembering to let it cool for a couple of minutes before attempting to tuck in.
