6 ounces of Salmon, I use the Boneless, Skinless Pouch from Chicken of the Sea
1 small jalapeño, seeded and diced
2 tablespoons chopped green onion
2 tablespoons mayonnaise
1 egg
1 cup almond flour
1 tablespoon coconut flour
2 teaspoons Old Bay, or your favorite Cajun seasoning
2 teaspoons lemon juice

Steps:

  • In a mixing bowl combine all of the salmon patty ingredients and mix until well combined.
  • All the mixture to rest for 5-10 minutes so the coconut flour can absorb any extra moisture. If you have excess moisture allow the mixture to sit a little longer in the refrigerator.
  • Using a 2 inch scoop, scoop the mixture out into 5 equal patties and pat out. See video for a helpful tip.
  • Place the patties in the freezer for 10-15 minutes.
  • Heat a large skillet to medium heat and add 3-4 tablespoons of oil.
  • Carefully slide the patties into the hot oil. Cook 3 minutes on each side or until golden brown and crispy.
  • Remove from heat and sit on napkins to absorb an additional oil.
  • Enjoy with a low carb Jalapeno Ranch or Tarter Sauce!

  • Bring the salmon to room temperature 10 minutes before cooking.
  • Warm a large nonstick skillet with oil over medium-low heat. Season the fish with salt and pepper. Raise the heat to medium-high. Place the salmon, skin-side up in the pan. 1/4 teaspoon black pepper
½ teaspoon garlic powder
¼ teaspoon dried thyme
1 tablespoon olive oil
1 tablespoon butter
4 lemon slices (¼-inch thick)
2 tablespoons chopped parsley

Steps:

  • Season the salmon with salt, pepper, garlic powder, and dried thyme.
  • Heat the olive oil and butter over medium-high heat in a large nonstick skillet, swirling to coat.
  • When the butter starts foaming, add the salmon fillets to the pan, skin-side-down. If using, add the lemon slices too.
  • Fry the salmon, undisturbed, until the skin is crisp and browned, about 4 minutes.
  • Flip the fish and the lemon slices over, lower the heat to medium, and continue cooking until the fish is cooked through, 2-3 more minutes.*

2 x 150g salmon fillets (about 4cm thick), skin on
½ tbsp olive oil
20g unsalted butter
½ lemon, juiced

Steps:

  • Generously season the salmon fillets with salt and pepper. Put the oil and butter in a non-stick frying pan over a medium heat, swirling around the pan until melted and foaming, then turn up the heat. Once the butter starts bubbling, add the salmon fillets to the pan, skin-side-down, and fry for 3 mins until crisp. Flip the fillets over, lower the heat and cook for 2 mins more, then drizzle with the lemon juice. Transfer the salmon to a plate and baste with any of the buttery juices left in the pan.

This full sheet-pan dinner, ready in 30 minutes, couldn't be any smarter or easier. Here, salmon, potatoes and asparagus are all added to the same tray at different points for a one-pan meal that makes cleanup seamless. A marinade infused with Cajun seasoning and paprika infuses the salmon, adding smokiness and some color. The bite in the asparagus plays off the flaky tenderness of the salmon, and the baby potatoes round it out. This meal stands on its own, but you could also put the leftovers over lettuce for a lunch salad the next day.

4 (8-ounce) skin-on salmon fillets, pin bones removed
4 tablespoons extra-virgin olive oil
1 teaspoon Cajun seasoning
1 teaspoon smoked paprika
Kosher salt and black pepper
1 pound baby potatoes
1 pound thick asparagus stalks, trimmed (see Tip)
2 garlic cloves, chopped

Steps:

  • Heat oven to 425 degrees. Place salmon on a plate, skin side up. Using a sharp knife, make a cut into the skin about 1/8-inch deep, in 3 different places, making sure not to cut all the way through the flesh. In a medium bowl, mix together 2 tablespoons olive oil with the Cajun seasoning, paprika and 1 teaspoon salt. Pour over the salmon to coat it on both sides and set aside to marinate.
  • To a rimmed sheet pan, add potatoes, 1 tablespoon olive oil, 1 teaspoon salt, and pepper to taste. Toss to coat and roast for about 15 minutes until tender. (Larger potatoes may take longer.)
  • As potatoes roast, toss the asparagus with the garlic, the remaining 1 tablespoon oil, 1 teaspoon salt, and pepper to taste.
  • Move the potatoes to one end of the pan and place salmon skin side up next to them. Add asparagus in an even layer to the other end of the pan, and roast everything together for 10 to 13 minutes, until the asparagus is tender and the salmon is cooked to taste. If you'd like the skin to be crispy, you can transfer the vegetables from the pan to a serving platter and pop the fish under the broiler for 1 to 2 minutes. Serve hot.

Steps:

  • Fry for a further 4-5 minutes, until the salmon is cooked through.
  • Meanwhile, mix the pepper, onion, cucumber and tomatoes in a bowl. Stir in the olive oil, vinegar and cilantro and season to taste.
  • Serve the salmon and the salsa with your choice of green vegetables.
