FRIED BREAD

Fried Bread image

My mom used this on the mornings when we had run out of bread. She also used it to make sandwiches if needed. It came from my Granny who used it to round out meals during the Depression.

Time 20m

Yield 9 biscuits

Number Of Ingredients 4

4 teaspoons baking powder
2 cups flour
1 cup water
oil or lard (for frying)

Steps:

  • Mix flour and baking powder. Add water to make a soft dough. Pat dough out on a sheet of plastic wrap to about 1/2" thick.
  • Heat up about 1/4" of oil or lard to medium heat in a cast iron or non stick pan.
  • Cut dough into about 9 biscuits.
  • Fry on one side until brown. Flip and cook about 2-3 minutes more. Test for doneness by flaking the side of a biscuit with a fork. If it seems dry inside it is done.

PAN-FRIED TROUT

Pan-Fried Trout image

Provided by Anne Burrell

Categories     main-dish

Time 55m

Yield 4 servings

Number Of Ingredients 10

1 1/2 cups bread crumbs
1 clove garlic, smashed
2 tablespoons finely chopped flat-leaf parsley
2 tablespoons finely chopped fresh oregano leaves
Pinch crushed red pepper flakes
3 lemons, juiced and 1 lemon, zested and reserved
Kosher salt
1/2 cup Dijon mustard
4 (10 to 12-ounce) trout, boned, belly flap removed, rinsed and patted dry, heads and tails left on
Extra-virgin olive oil

Steps:

  • In a wide flat dish, combine the bread crumbs, garlic, parsley, oregano, red pepper flakes, zest of 1 lemon and salt, to taste.
  • In a small bowl, mix together the mustard and the juice of 1 lemon. Brush both sides of the trout with mustard mixture. Coat the fish on both sides with the seasoned bread crumbs and press firmly to adhere the crumbs to the fish.
  • Preheat the oven to 250 degrees F.
  • Coat a large skillet with about 1/4 to 1/2-inch of olive oil and bring to a medium-high heat. Add the fish to the pan, skin side down, and cook the fish 2/3's of the way, about 6 to 7 minutes. Carefully turn the fish over and cook the other side until the fish is brown and crispy, about 2 to 3 minutes. Remove the fish from the pan and drain on paper towels. You will probably need to work in batches to do 4 fish. After the first batch is done and dried on paper towels reserve it on a rack in a warm oven.
  • When all the fish has been fried, remove the oil and any brown bits from the pan. Add the butter and remaining lemon juice and swirl to combine as the butter melts. Season with salt, to taste, and reduce by about half. Transfer the fish to a serving platter, drizzle with the butter lemon sauce and serve.
  • What a fishtale!

  • Stir in milk, and mix until the dough comes together. The amount of milk is an approximation. Just add a little at a time until it comes together. With the einkorn, you will need a lot less milk, like maybe 1/4 cup less.
  • Add more flour if necessary to be able to handle the dough. On a floured surface, knead the dough until smooth, at least 5 minutes. Let the dough rest for 5 minutes.
  • Heat oil in a large, deep heavy skillet to 365 degrees F (180 degrees C). Oil should be anywhere from just coating the bottom of the pan to 1 1/2 inches deep.

  • Combine the warm water, yeast, and 1 teaspoon of sugar in a cup or small bowl and set aside. In a large bowl, thoroughly mix the 2 cups of flour, baking powder, remaining 1 teaspoon of sugar, and salt then add the yeast mixture to it, along with the yogurt and oil and use a fork to bring it all together. The dough will be very sticky.
  • Use a bowl scraper to coax the dough out onto a well floured counter and knead it until soft and smooth, 3 to 5 minutes. Return the dough to the empty bowl, cover with a tea towel, and set aside at room temperature for 2 to 4 hours.
  • Scrape the dough out onto a floured counter and divide into six pieces. Roll each piece of dough in flour, pat it down with your hand, then use a rolling pin to evenly roll each one out into about a 7"-8" circle or tear drop shape.
  • Heat a heavy griddle or large frying pan on high until a few drops of water immediately sizzle and evaporate. Pick up one of the rolled-out naan, stretch it out a little if it has started to shrink, then lightly dampen one side of the dough by dipping your fingers in the bowl of water and spreading a little water on the dough. Using a sort of slapping motion, place that wet side of the dough down onto the hot pan and press it down with a spatula.
