COUNTRY FRIED FLOURED BACON
OOh's and Mmmm's before, during, and after eating this bacon will become common place for your household. Every time I just suggest cooking this recipe, those sounds begin. My grandmother, my mother, and I cook this bacon for our family and friends, and it is always a favorite once it has been tried by one and all. This is excellent for breakfast, snacks, or upgrade your BLT to a place it has never been before. Once you have had bacon this way, it will be very hard to go back to the way you did it before you discover this treasure of a recipe. Something so simple CAN be so wonderful!

Steps:
- Cut the bacon strips in half, and place into a shallow dish with the half-and-half, crisscrossing the bacon in a star pattern. Soak the bacon a minimum of 30 minutes, but no more than 2 hours. This step helps reduce the curling of the bacon during frying, tenderizes it, and adds a wonderful flavor.
- Stir together the flour, salt, pepper, and sugar in another shallow dish until blended; set aside. When the bacon has finished soaking, remove it from the half-and-half, and shake off the excess. Press each piece into the flour mixture to coat, then set aside. If desired, you can place a sheet of wax paper between the rows of bacon once the plate is covered. However, the flour does a good job of keeping the bacon from sticking to each other.
- Heat the vegetable oil in a deep skillet over medium-low heat. Fry the bacon in batches until browned and cooked to desired degree of crispness, 2 to 3 minutes. Drain on a paper towel.

- Heat a cast-iron or other heavy skillet over medium heat. When hot, add bacon strips in a single layer. Cook until browned on bottom, 3 to 4 minutes.
- Flip bacon, using tongs, and cook until browned on both sides, about 2 minutes.
- Drain and reserve fat for another use, and repeat with remaining bacon. Drain bacon on paper towels. Serve immediately.
CRISPY DEEP FRIED BACON
Battered and fried bacon that is even better after cooking in the oven for 7 minutes. My husband and I saw the idea of fried bacon on the travel channel where they just battered and fried it and we decided to make it. It was so good. But then we cooked in the oven and it was even better. Serve with white gravy and it is a heart attack waiting to happen but tastes so good!

- Whisk together the eggs and milk in a bowl until smooth. Separate the bacon strips, and soak in the milk mixture for 30 minutes.
- Preheat oven to 350 degrees F (175 degrees C). Heat oil in deep skillet to 375 degrees F (190 degrees C).
- Whisk together the flour, salt, and pepper in a separate bowl. Remove the bacon from the egg mixture, and toss with the flour to coat. Line a baking sheet with aluminum foil.
- Fry the bacon strips 3 to 5 slices at a time until golden brown, about 4 minutes. Drain on a paper towel-lined plate. Once all of the bacon has cooked, place onto the prepared baking sheet, and bake in the preheated oven until crispy, about 7 minutes.

SHAD ROE PAN FRIED WITH BACON

- In a shallow bowl, combine flour, salt and pepper. Dredge roe in seasoned flour. In a saute pan over medium heat, heat oil until hot. Add roe to pan and cook top side (side without vein) until well browned. Reduce heat, turn roe over, and continue to cook on second side until well browned and almost firm. Cover pan slightly to avoid dangerous splattering. Remove roe and blot on paper. Return saute pan to heat. Add butter, let melt, and cook until brown. Add lemon juice, allow to sizzle, and add chopped parsley. Plate roe and drizzle lemon butter over top. Serve smoked bacon on top of roe.;
OVEN FRIED BACON - NO MESS, NO CLEANUP!
This is my favorite way of making bacon, no mess, no cleanup! Comes out just like fried bacon crispy, fries in the oven in it's own bacon grease. The pepper is optional.

Steps:
- Use a 4 sided pan like a jelly roll pan.
- Line pan with tinfoil.
- Fold parchment paper to fit over tinfoil in pan. Must use parchment paper & line the pan for easy cleanup, important step!
- Set oven to 400*.
- After lining pan lay strips of bacon on parchment paper.
- Put in preheated 400* for 15 minutes, I turn bacon over after 10 minutes.
- Take out when crispy & lay on paper towels.
- When pan cools roll up tinfoil & parchment paper & throw away, no pan to wash!

- Cut the cabbage into quarters. Remove any wilted or discolored outer leaves. Cut out the core from the cabbge quarters. Cut into large 1-inch dice.
- Cook the bacon and onion in a 4-quart pan over medium heat until bacon is crisp, and the onion is wilted.
- Remove the bacon and onion to paper towels to drain. There should be about 1/2 cup of bacon drippings in the pan.
- Add the cabbage to these drippings and cook without stirring until it begins to brown, about 3 minutes.
- Add the water, sugar, salt and pepper and cook until the cabbage is tender, about 20 minutes.
- Crumble the cooked bacon into the cabbage and serve hot.

- Place the bacon under a preheated hot grill (broiler) and cook for 1-2 minutes or until crispy.
- Place the maonnaise, garlic, lemon juice, chives and chicken in a bowl and mix well to combine.

- The amount of scallops depends on their size, and of course, how much you want to eat!
- Scallops (no shell) with their roe if you can get them, as the nice orange colour of the roe looks good and more important it tastes good!
- Streaky bacon is best because of the fat in it. You want about 3 or 4 rashers each.
- Fry the bacon in a pan over a moderate heat until nice and brown and only just starting to get crispy.
- With the bacon still in the pan, add the scallops and move them about in the pan to get them nicley coated with all the pan juices. They will only take a couple of minutes to cook.
- It's as simple as that! Serve immediately.
