A delicious seasoned dip filled with our favorite fiesta flavors!

1 ¼ cups salsa
16 ounces refried beans (canned)
2 tablespoons milk
8 ounces cream cheese (softened)
½ cup sour cream
2 tablespoons taco seasoning
1 cup guacamole (prepared)
1 ½ cups cheddar cheese
½ cup black olives ( or tomatoes)
4 sliced green onions

Steps:

  • Place salsa in a sieve to drain any liquid (this keeps your dip from getting runny).
  • Combine refried beans and milk (or you can use the liquid from the salsa if you prefer) until smooth. Spread in the bottom of a 9x13 pan.
  • Combine cream cheese, sour cream and taco seasoning with a mixer on medium. Spread over refried beans.
  • Spoon guacamole over cream cheese and gently spread. Repeat with drained salsa.
  • Top with cheese, olives/tomatoes and green onions.
  • Chill 1 hour before serving. Serve with tortilla chips or crackers.

For this recipe, the traditional 7-layer dip has been revisited so that each layer is good enough to eat on its own, but isn't so much effort that the whole thing can't be finished in 20 minutes. The order of the layers offers some delightful moments, like where the cheese melts into the warm refried beans or where the cool sour cream meets the fiery salsa. Cilantro and scallions serve as a refreshing counterpoint, and Fritos lend added crunch. No need to dig out your trifle bowl: A platter with a lip is preferred here for easier scooping.

3/4 cup sour cream
1 jalapeño, finely chopped (about 2 tablespoons)
Kosher salt and black pepper
2 medium ripe avocados
2 tablespoons freshly squeezed lime juice (from 1 lime)
1 (16-ounce) can refried beans
1 teaspoon ground cumin
1 cup freshly grated Cheddar (about 4 ounces)
1 cup sliced black olives (about 4 ounces)
3/4 cup good-quality, store-bought red salsa, fresh or jarred and any heat level (drained if watery)
1/2 cup Fritos or corn nuts, crumbled
1/4 cup thinly sliced scallions (about 2 scallions)
1/4 cup tightly packed cilantro leaves
Tortilla chips, for serving

Steps:

  • In a small bowl, stir together the sour cream and half the jalapeño (about 1 tablespoon). Season with salt and pepper. In another small bowl, coarsely mash the avocado, lime juice and remaining 1 tablespoon jalapeño, then season with salt and pepper.
  • In a small saucepan over medium-low heat or in a microwave, warm the refried beans with the cumin. Season with salt and pepper.
  • Spread the beans on a platter with a rim or lip. Top evenly with the cheese, followed by the olives, avocado mixture and salsa. Top with dollops of jalapeño-sour cream and sprinkle with crumbled Fritos, scallions and cilantro. Serve with tortilla chips.

1 (16 ounce) can refried beans (traditional variety)
1 (4.5 ounce) can chopped green chiles, undrained
1 tablespoon fresh lime juice, plus
2 tablespoons fresh lime juice for avocado layer
2 teaspoons chili powder
¼ teaspoon ground cumin
Salt
3 avocados, halved, pitted, flesh spooned out
1 cup sour cream
½ cup mayonnaise
1 cup salsa (drain to equal 1 cup if salsa is especially runny)
¾ cup sliced canned black olives, drained
1 cup grated pepper Jack cheese
½ cup thin sliced scallion greens, green part only

Steps:

  • Mix beans, chiles, 1 Tb. of lime juice, chili powder, cumin, and a pinch of salt in a small bowl. In a second small bowl, mash avocados with a fork; stir in remaining 2 Tbs. lime juice and 1/2 teaspoon of salt to make guacamole. In a third small bowl, mix sour cream and mayonnaise.
  • Spread bean mixture, then guacamole, then sour cream mixture, and finally salsa over the bottom of a 9-inch deep-dish pie plate or similar size pan. Sprinkle with olives, then cheese. (Dip can be covered and refrigerated up to 2 days) To serve, sprinkle with green onions.

1 (15 ounce) can old el paso jalapeno bean dip (or regular bean dip if you can't find this)
1 (10 ounce) can black olives, drained
2 -3 ripe avocados (mashed, with lemon, salt & pepper)
1/2 cup light sour cream
1/2 cup light mayonnaise
1 (1 1/4 ounce) packet taco seasoning
4 bunches green onions, chopped
shredded monterey jack and cheddar cheese blend
1 tomatoes, chopped

Steps:

  • Mix the sour cream, mayo and taco seasoning packet together and set aside.
  • Chop the black olives and cut green onion-set aside.
  • In shallow dish (maybe a round pizza pan) start layers: bean dip on the bottom, guacamole, sour cream & mayo mix, black olives, green onion, tomato, and top with cheese.
  • Cover and refrigerate until ready to serve.

  • For the bean layer, mix the refried beans and salsa together until creamy and smooth. Evenly spread in a 9X13-inch (or slightly smaller) dish.
  • For the guacamole, mash the avocados, lime juice, cilantro and salt and pepper together until desired consistency (for this recipe, I like the guacamole mostly smooth with just a few small chunks). Spread the guacamole evenly over the refried beans.
  • For the sour cream layer, stir together the sour cream and all the seasonings until smooth and evenly combined. Spread evenly over the guacamole, covering completely all the way to the edges so the guacamole doesn't turn brown.
