Categories     dessert

Time 55m

Yield 4 servings

Number Of Ingredients 9

2 apples (recommended: Fuji or McIntosh)
1 teaspoon lemon juice
1/4 cup strawberry jam, jelly or preserves
2 tablespoon all-purpose flour
3 tablespoons butter, cold and diced
3 tablespoons brown sugar
1/2 cup oats, uncooked
1/4 teaspoon ground cinnamon
Pinch salt

Steps:

  • Preheat oven to 350 degrees F.
  • Cut each apple in half along its equator. Using a melon baller, cut out each side of the core, creating a rounded hole. Rub exposed apple flesh with lemon juice. Place 1 tablespoon of jam into each hole. For the topping: in a small bowl mix together flour, butter, brown sugar, oats, cinnamon and salt. Press this mixture on the top of each apple, covering jam. Place in a baking dish filled with about a 1/4-inch of water. Bake until top is golden brown and apple is tender, about 35 to 40 minutes.

APPLE CRISP WITH OAT TOPPING

Apple Crisp with Oat Topping image

This is the best dessert for the early fall when the sweet and firm apples are just in season. Use the best quality cinnamon you can get and get it from a spice merchant or even a store where you can get it bulk; it does make a difference. Within ten minutes of going in the oven the scent will fill the house and neighbors you loaned things to years ago will return them just to invite themselves in and wonder aloud if there is any left (Note: there isn't). Optional accompaniments would be caramel sauce, ice cream, and whipped cream.

PAMMY'S BAKED APPLE DESSERT WITH OATMEAL AND BROWN SUGAR TOPPING

Pammy's Baked Apple Dessert With Oatmeal and Brown Sugar Topping image

I am trying to "re-do" some of our older recipes to be lower in fat, as hubby has heart disease. This ended up being a combination of two. I am going to try this with peaches also as this is one of the few ways I can get fruit into him! AND, he liked this. Guessing on prep time.

Provided by Packer Backer Pammy

Categories     Dessert

Time 1h5m

Yield 6 serving(s)

Number Of Ingredients 15

3 cups granny smith apples, peeled, cored and cut into small bite size pieces
1 tablespoon apple juice, and
1 teaspoon apple juice
1 tablespoon white sugar, and
1 teaspoon white sugar
1 teaspoon skim milk
1/4 cup fat-free cottage cheese
1/4 cup plain fat-free yogurt
1 egg white
1/4 teaspoon cinnamon
1/4 cup quick oatmeal, and
2 tablespoons quick oatmeal
1/4 cup brown sugar, and
2 tablespoons brown sugar
3 tablespoons margarine, stick kind

Steps:

  • Preheat oven to 350.
  • Spray a 10 inch glass pie pan with Pam.
  • Pour apples into pie pan and add all apple juice, stir.
  • Sprinkle all white sugar over the top of the apples and then stir well.
  • I put the skim milk, cottage cheese, yogurt, egg white and cinnamon in my mini chopper to blend well (I do this after the topping so that I don't have to wash it out twice).
  • Pour over apples and mix well.
  • (I chop my oatmeal in my mini chopper to make it finer in texture, then I measure it out to 1/4 cup + 2 tablespoon).
  • In a small bowl, melt margarine in microwave.
  • Stir in all brown sugar and oatmeal(mix very well).
  • Crumble over the top of the apples, covering as well as possible.
  • Bake 350 for 45 to 50 minutes --
  • IF you ARE NOT using 10 inch glass pie pan you will have to judge your timing.

  • In a separate bowl, whisk together brown sugar, milk, and egg. Pour on top of oats, making sure everything is submerged in liquid.
  • To make streusel topping, combine flour, 1/4 cup brown sugar, salt, and butter in a small bowl. • Core each apple, leaving the bottom of the apple intact. Use a small melon baller or spoon to scoop out a little bit of the top and inside flesh to form a cavity. Alternately: Halve each apple lengthwise and use a melon baller or small spoon to scoop out the core and form a cavity.
  • For the filling: combine flour, brown sugar, cinnamon, salt, nuts, and oats. Add the butter, and stir to combine. The mixture should hold together if you gather clumps and press them together.
  • Divide the filling between the prepared apples. I used between 3-4 tablespoons of filling per apple (this will depend on the size of your apples, and how large of a cavity you created). Place the filled apples in a baking dish, and fill the bottom of the baking dish with about an inch of water.
