The Best Easy Beef and Broccoli Stir-Fry image

I clipped this recipe from Taste of Home magazine several years ago and have found it to be the best-tasting easy beef and broccoli stir-fry. It is credited to Ruth Stahl. I often use charcoal chuck steak, which is very tender and lean. I also like that it doesn't call for any unusual ingredients.

3 tablespoons cornstarch, divided
1/2 cup water, plus
2 tablespoons water, divided
1/2 teaspoon garlic powder
1 lb boneless round steak or 1 lb charcoal chuck steak, cut into thin 3-inch strips
2 tablespoons vegetable oil, divided
4 cups broccoli florets
1 small onion, cut into wedges
1/3 cup reduced sodium soy sauce
2 tablespoons brown sugar
1 teaspoon ground ginger
hot cooked rice, for serving
toasted sesame seeds, for serving (optional)

Steps:

  • In a bowl, combine 2 tablespoons cornstarch, 2 tablespoons water and garlic powder until smooth.
  • Add beef and toss.
  • In a large skillet or wok over medium-high heat, stir-fry beef in 1 tablespoon oil until beef reaches desired doneness; remove and keep warm.
  • Stir-fry onion in remaining oil for 4-5 minutes until softened. Add the broccoli and cook for 3 minutes until the broccoli is tender but still crisp. Return beef to pan.
  • Combine soy sauce, brown sugar, ginger and remaining 1 tablespoon cornstarch and 1/2 cup water until smooth; add to the pan.
  • Cook and stir for 2 minutes.
  • Serve over rice and garnish with toasted sesame seeds (optional).

  • Liberally season the sliced steak with salt and pepper. Heat a large sauté pan over medium heat and let it get hot. Add slices of beef, without overcrowding, and cook 30 seconds per side. Remove from pan and repeat with remaining beef (I had to do this in 3 batches).
  • Leave the beef juices in the pan and add chopped broccoli. Add about 2-3 tablespoons of the sauce and cover with a lid. Cook for 3-5 minutes until tender. Remove from the pan and set aside.
  • Add remaining sauce to the pan and bring to a simmer. Reduce to medium low and cook until thickened and coats the back of a spoon, about 3-4 minutes. Add back in beef and broccoli and stir to combine and heated through, about 1 minute. Be careful not to add the liquid from the beef and broccoli as it will thin the sauce. Serve with cauliflower or white rice, top with optional toppings, and enjoy!
