These healthy cookies are vegan, paleo, gluten free, grain free, and dairy free.

2 Ripe Bananas (with spots)
1 1/3 C. Unsweetened Shredded Coconut

Steps:

  • Preheat oven to 350 degrees F. Line a baking sheet with parchment paper or silicon liner.
  • Add bananas to a bowl and mash with a fork until smooth (no lumps). One of my tricks to getting things extra creamy and smooth is to use a handheld immersion blender (see recipe video).
  • Once banana is mashed and smooth, add the shredded coconut. Mix with a fork then use your hands to make sure the coconut is fully incorporated into the banana. **Add a pinch of sea salt (optional).
  • Separate mixture into 8 equal parts. Roll the mixture into a tight ball then flatten into a cookie shape (about 1/2 inch thick) and place onto the baking sheet. Repeat this process until you've formed 8 cookies.
  • Bake cookies for 20-25 minutes or until tops are golden. **It took mine exactly 22 minutes. Once done, transfer cookies to a cooling rack and let cool completely before serving. ENJOY!!

2 ripe bananas (mashed)
3/4 cup coconut sugar (If using honey, add only 1/4 cup coconut oil instead of 1/3 cup)
2 large eggs
1/3 cup coconut flour
1/4 cup oat flour (I grounded gluten free oats)
1/3 cup melted coconut oil (cooled (use only 1/4 cup, if using honey instead of coconut sugar))
1/2 teaspoon pure vanilla extract
1 teaspoon baking powder
1/4 teaspoon salt
1/2 cup chocolate chips or chopped dark chocolate chunks
1 Tablespoon chocolate chips or chopped dark chocolate chunks
1/2 Tablespoon melted coconut oil

Steps:

  • Preheat oven to 375 F. In a medium mixing bowl, mix bananas, coconut sugar and eggs with a mixer on medium speed until well combined. It's okay if there are some banana chunks.
  • Add coconut flour, oat flour, coconut oil, vanilla extract, baking powder and salt to the mixing bowl and mix well (on low speed, if using the mixer).
  • Fold in dark chocolate chunks. If you don't like chocolate or want to avoid using chocolate, you can just omit it, or add instead nuts of your choice (like chopped walnuts or pecans). It will turn out great that way too!
  • Spread mixture in a 8 x 8 baking dish and bake in a preheated 375 F oven for 25 minutes.
  • Place the baking dish on a cooling rack and let brownies stand for 5 minutes before cutting.
  • Melt chocolate chips/chunks in a glass bowl over pan with boiling water. Drizzle some melted chocolate on top of already cut brownies and enjoy! It is hard to eat only one brownie. :)

8 tablespoons refined coconut oil

1 very ripe banana

  • In a medium bowl mix the coconut flour and the baking soda together.
  • In a large bowl mix together the coconut oil,banana, eggs, and vanilla.
  • Then mix the dry ingredients into the wet.
  • Add the chocolate chips.
  • Bake at 350oF or 180oC for 12 minutes.

These healthy banana pumpkin cookies make a fun aip dessert. They're soft and chewy with a sweet spiced flavor.

1 medium banana (pureed)
3/4 cup pumpkin puree
1/2 cup tapioca flour
2 tbsp coconut flour
1/4 tsp baking soda
5-7 chopped pitted dates (for AIP) (or 1/3 cup chocolate chips)
1 tsp pumpkin pie spice (or cinnamon (for AIP))

Steps:

  • Pre-heat the oven to 350°. Use a blender, food processor or stick blender to mix all ingredients except the dates (or chocolate chips).
  • If using the dates, chop the dates. Add the dates to the batter and stir gently with a spoon. If using chocolate chips, add them to the dough and fold into the dough.
  • Place parchment paper or a silpat on a cookie sheet (you need parchment paper or else the cookies may stick).
  • Place spoonfuls of the cookie dough onto the cookie sheet. The batter will be more moist than regular cookie dough. Use the spoon to shape the batter into a flat circle cookie shape. Repeat until all of the batter is out.
  • Bake the cookies at 350° for about 10 minutes or until a toothpick inserted comes out clean.
