Steps:
- Preheat oven to 350 degrees F. Line a baking sheet with parchment paper or silicon liner.
- Add bananas to a bowl and mash with a fork until smooth (no lumps). One of my tricks to getting things extra creamy and smooth is to use a handheld immersion blender (see recipe video).
- Once banana is mashed and smooth, add the shredded coconut. Mix with a fork then use your hands to make sure the coconut is fully incorporated into the banana. **Add a pinch of sea salt (optional).
- Separate mixture into 8 equal parts. Roll the mixture into a tight ball then flatten into a cookie shape (about 1/2 inch thick) and place onto the baking sheet. Repeat this process until you've formed 8 cookies.
- Bake cookies for 20-25 minutes or until tops are golden. **It took mine exactly 22 minutes. Once done, transfer cookies to a cooling rack and let cool completely before serving. ENJOY!!

Steps:
- Preheat oven to 375 F. In a medium mixing bowl, mix bananas, coconut sugar and eggs with a mixer on medium speed until well combined. It's okay if there are some banana chunks.
- Add coconut flour, oat flour, coconut oil, vanilla extract, baking powder and salt to the mixing bowl and mix well (on low speed, if using the mixer).
- Fold in dark chocolate chunks. If you don't like chocolate or want to avoid using chocolate, you can just omit it, or add instead nuts of your choice (like chopped walnuts or pecans). It will turn out great that way too!
- Spread mixture in a 8 x 8 baking dish and bake in a preheated 375 F oven for 25 minutes.
- Place the baking dish on a cooling rack and let brownies stand for 5 minutes before cutting.
- Melt chocolate chips/chunks in a glass bowl over pan with boiling water. Drizzle some melted chocolate on top of already cut brownies and enjoy! It is hard to eat only one brownie. :)

HEALTHY BANANA PUMPKIN COOKIES (AIP, PALEO, VEGAN, SUGAR FREE)
Steps:
- Pre-heat the oven to 350°. Use a blender, food processor or stick blender to mix all ingredients except the dates (or chocolate chips).
- If using the dates, chop the dates. Add the dates to the batter and stir gently with a spoon. If using chocolate chips, add them to the dough and fold into the dough.
- Place parchment paper or a silpat on a cookie sheet (you need parchment paper or else the cookies may stick).
- Place spoonfuls of the cookie dough onto the cookie sheet. The batter will be more moist than regular cookie dough. Use the spoon to shape the batter into a flat circle cookie shape. Repeat until all of the batter is out.
- Bake the cookies at 350° for about 10 minutes or until a toothpick inserted comes out clean.

- Preheat the oven to 350°F. Line a baking sheet with parchment paper or greased foil. Set aside.
- Add all ingredients (coconut, almond flour, oil and maple syrup) to a food processor. You must use large coconut flakes to ensure flat cookies. If you use small coconut flakes, the cookies will not spread.
- Blend until you get a thick and sticky mixture that holds together, with smaller, but still noticeable coconut pieces. If any maple syrup remains at the bottom of the processor, fold into dough until well mixed.
- Using a cookie scoop, scoop firmly packed balls of coconut mixture. Drop onto the prepared baking sheet, making sure to space balls evenly apart–they will spread quite a bit.

- Using a mixing machine combine the banana and the egg. Slowly add the coconut oil (coconut oil must not be hot or it will cook the egg. You just need to the coconut oil slightly warmed enough to mix smoothly).
- Add the coconut flour, vanilla, baking soda and sea salt. Mix until smooth. Lastly add the chocolate chips.
- Using a spoon, drop 1" balls of batter onto the baking tray leaving space between each cookie. Use the back of the spoon to smooth the cookies to a flat cookie shape (the cookies will not naturally flatten, you must do this manually).
