3 -5 leaves garlic
5 Thai red chili peppers
200 g shrimp
100 g holy basil
2 tablespoons oyster sauce
2 teaspoons sugar
1 tablespoon soy sauce
1 tablespoon fish sauce
2 tablespoons vegetable oil

Steps:

  • Pound or chop the garlic and chilli.
  • Stired fry the pounded garlic and chilli in the hot oil.
  • Put shrimps into the pan. When the shrimps are half cook, put all seasoning and sugar.
  • Once the shrimps is well done, put the holy basil leaves into the pan with well mix and turn-off the heat.

1 lb shrimp
1 (8 ounce) package tempura batter frying mix
2 cups panko breadcrumbs
2 cups vegetable oil

Steps:

  • Devein the shrimp and remove the shells. You may leave the shell on the tails if desired.
  • Pat the shrimp dry and set aside.
  • In a mixing bowl, make up the tempura batter per the package instructions.
  • Put the panko breadcrumbs in a shallow dish, like a pie plate.
  • Heat the oil in a saucepan or other vessel over medium-high heat until hot.
  • Dip each shrimp in the tempura batter and then coat well with the panko bread crumbs.
  • Fry the shrimp, in batches, until golden brown. Place the cooked shrimp on paper towels to drain, until all of the shrimp has been fried. Serve immediately.

vegetable oil
1/2 cup flour
1 teaspoon salt
1/2 teaspoon onion salt
1/2 teaspoon pepper
1/4 teaspoon garlic powder
2 large eggs
2 tablespoons water
1 cup panko breadcrumbs or 1 cup dry unseasoned breadcrumbs
1 lb large shrimp, uncooked peeled and deveined (about 35)
lemon wedge (optional)
seafood cocktail sauce (optional)
tartar sauce (optional)

Steps:

  • Heat 2 to 3 inches oil to 365ºF in a deep fryer or heavy deep saucepan.
  • Combine flour, salt, onion salt, pepper and garlic powder in shallow bowl. Beat eggs and water in separate shallow bowl. Place bread crumbs in another shallow bowl.
  • Coat shrimp with flour mixture. Dip in egg mixture. Drain off excess. Coat lightly with crumbs.
  • Fry shrimp, a few at a time, 2 to 3 minutes or until golden brown. Turn as needed for even browning. Drain on paper towels. Serve with lemon wedges and cocktail and/or tartar sauce if desired.

Chicken stir-fried with holy basil is a favorite Thai dish for many Westerners. Simple to prepare, it is a quick one-dish meal. The addition of fresh chilies makes the dish spicy, but you may adjust the recipe to taste by adding fewer chilies. This is a recipe of cooking instructor and cookbook author Kasma Loha-unchit. ====== NOTES: If you are not able to find fresh holy basil, this recipe can be substituted with any fresh basil... or a mixture of fresh Thai sweet basil and fresh mint leaves. Good results have been reported using ground turkey. In Thailand, this dish is often made with chopped pork, especially in fast-food, curry-rice shops, where an enormous variety of dishes are prepared ahead of time and served over steaming white rice to order. Some of the best pad gka-prow can be had at these inconspicuous, no-frills, open-air places. They are made particularly spicy to help preserve the meat, as the dishes are prepared early in the morning and served throughout the day until they are sold out. Try the above recipe also with fresh seafood (in this case, no need to chop) - shrimps, scallops, mussels, clams, crab and firm-flesh fish, such as fresh halibut and salmon.

1 lb boneless chicken thighs (coarsely chopped, or cut into small bite-size pieces. Smallest pieces soak up most sauce!)
4 -6 garlic cloves, finely chopped
2 -3 shallots, thinly sliced (or substitute with 1/2 cup sliced onion)
2 -3 tablespoons peanut oil, for stir-frying
2 teaspoons black soy sauce (the semi-sweet kind, siew dohm)
1 -2 tablespoon Thai fish sauce, to taste (nam bplah)
1 cup fresh Thai holy basil (bai gka-prow (In a pinch, use ANY basil, SEE NOTES ABOVE.)
2 small kaffir lime leaves, very finely slivered (bai ma-gkrood) (optional)
2 -3 fresh jalapenos or 2 -3 fresno bell peppers, cut into large slivers (these have the least amount of heat)
1 dash white pepper

Steps:

  • Leave the fresh basil leaves whole; the flowers may also be used. The dried holy basil will soften when soaked in tap water for 10-15 minutes. Pull off and discard the hard stems. Drain.
  • Heat a wok until the surface is smoking hot.
  • Swirl in the oil to coat the wok surface.
  • Wait a few seconds for the oil to heat, then stir in the garlic, followed a few seconds later with shallots.
  • Stir another few seconds before adding the chicken.
  • Stir-fry a minute or two, or until most of the chicken has started to change color on the outside and is no longer pink.
  • Toss in the chillies, slivered kaffir lime leaves and reconstituted dried holy basil (if using).
  • Sprinkle black soy sauce over the mixture and stir-fry another 15-20 seconds.
  • Then add fresh basil leaves and fish sauce to taste. Stir and mix well.
  • Stir-fry another half a minute, or until the basil is wilted and the chicken is cooked through.
  • Sprinkle with white pepper.
  • Stir and transfer to a serving dish, or spoon directly over individual plates of plain steamed rice.

  • As soon as the chicken is cooked through, add the basil leaves and stir them through the chicken until they are wilted. Serve with steamed rice.

2 lbs shrimp, jumbo whole and deveined
1 cup extra virgin olive oil
1/2 cup lemon juice
2 tablespoons marjoram
2 teaspoons lemon zest
2 teaspoons salt
1 teaspoon ground black pepper
1 tablespoon parsley, freshly chopped
1 lemon, cut into wedges

Steps:

  • Place whole shrimp in a large shallow dish.
  • Whisk olive oil, lemon juice, marjoram, lemon zest salt and pepper in a medium bowl.
  • Pour the marinade over the shrimp.
  • Cover the shrimp and refrigerate up to 2 hours. Turn the shrimp to the other side half way through the marinade.
  • Remove the shrimp from the marinade and place in a large frying pan over medium heat.
  • Cook for 2-3 minutes per side.
  • Remove from the pan once the shrimp turn orange in color.
  • Season the shrimp with the salt and chopped parsley.
  • Garnish with lemon wedges.

I've guessed on cook time here. These are the crunchiest shrimp I've had outside of a restaurant! This makes alot, but if you are going to make these you may as well go all out!! Everyone loves them! These have received so many mixed reviews that I thought maybe I should mention that I deep fry them in a Presto Fry Daddy and not very many at a time. I never said they were easy...and I get better each time I do it. Thanks for giving them so much attention!

Crisco shortening, melted in deep fryer (till full by manufacturer standards)
2/3 cup flour
1 1/3 cups cornstarch
1/2 teaspoon salt
1/2 teaspoon baking powder
6 egg whites
2/3 cup water
4 tablespoons vegetable oil
corn flake crumbs

Steps:

  • In a medium bowl, stir flour, cornstarch, salt, baking powder, egg whites, water and oil together with a whisk.
  • Pour out a liberal amount of cornflake crumbs on a dinner plate.
  • Roll each shrimp well into batter mixture and quickly roll in cornflake crumbs.
  • Deep fry shrimp about 7 at a time till golden brown.
  • Drain on paper towels.
  • Serve with cocktail and/or tartar sauce.
