CALAMARI SALAD

5 pounds calamari tubes and tentacles, cleaned
3 large garlic cloves
4 tablespoons red wine vinegar
1/4 cup lemon juice
1/2 cup extra-virgin olive oil
1 tablespoon capers
Salt

Steps:

  • Cut tubes of calamari into 1-inch rings and cut the tentacles in half. In a large pot bring water and 2 tablespoons of salt to a boil. Carefully place the calamari in the pot. Cook the calamari until tender, about 2 minutes. Be sure not to overcook.
  • Strain the calamari and place in a mixing bowl. Add all of the ingredients and mix well. Add salt and pepper, to taste. Serve the calamari cold.

2 pounds cleaned squid
Juice of 1/2 lemon
Salt
2 tablespoons light soy sauce
1 tablespoon rice vinegar
1 teaspoon Japanese wasabi paste
Juice of 1 lime
1 tablespoon minced fresh ginger
2 tablespoons sesame oil
1/2 cup finely chopped scallions
1/2 cup coarsely chopped roasted unsalted peanuts
1 cup chopped fresh pineapple
Freshly ground black pepper to taste
1/4 cup finely chopped fresh coriander leaves

Steps:

  • Slice the squid into thin rings. Coarsely chop the tentacles. Bring two quarts of water to a boil and add the lemon juice and salt to taste. Add the squid. When the water returns to a boil, drain the squid thoroughly and transfer to a mixing bowl.
  • Add the soy sauce and rice vinegar to the warm squid. Dissolve the wasabi in the lime juice and add it along with the ginger and sesame oil. Refrigerate and allow to marinate at least two hours.
  • Before serving, fold in the scallions, peanuts and pineapple. Season to taste with pepper and, if needed, some salt. Scatter the chopped coriander on top.

1 lemon, juiced
Salt
16 cleaned squid, cut into rings
1/2 cup chopped white onion
1/2 cup chopped celery
3 cloves garlic
2 tablespoons Italian parsley, chopped
1/2 cup olive oil
1/4 cup red wine vinegar
Pinch thyme
Pinch basil
Pinch oregano

Steps:

  • To a large pot of boiling water, add lemon juice and salt. Add squid rings and cook for about 1 1/2 to 2 minutes. Drain.
  • Combine onion, celery, garlic, parsley, olive oil, vinegar and herbs with cooked squid and serve at room temperature or cool.

1/2 cup fresh lime juice
1/3 cup fish sauce
1 tablespoon sugar
1/2 tablespoon minced garlic
1/2 tablespoon minced ginger
3 each Thai bird chiles, minced
1/4 cup minced cilantro
1/4 cup thinly sliced mint
1/4 cup thinly sliced Thai basil
2 pounds fresh calamari, cleaned and cut into 1/2 inch rings, slice head in half lengthwise
2 large, ripe tomatoes, medium dice
2 pounds washed arugula in a large salad bowl
Baguette croutons for garnish

Steps:

  • In a bowl, mix together juice, fish sauce, sugar, garlic, ginger, chiles, mint and basil. Add the calamari and marinate for only 30 seconds. Take the calamari out of the marinade and add to a very hot skillet, lightly oiled. Toss calamari quickly around and cook only 2-3 minutes until done. Cook in two batches. Remove calamari and place on top of the arugula. In the same hot skillet, add the tomatoes and 1/3 cup of the marinade. Bring to a boil then add to salad and mix well. Check for seasoning and serve.

1 1/2 lb cleaned squid
2 tablespoons fresh lemon juice
1 tablespoon red-wine vinegar
1/3 cup extra-virgin olive oil
1 large garlic clove, minced
1/2 teaspoon salt
1/4 teaspoon black pepper
1 small red onion, halved lengthwise, then thinly sliced crosswise (1 cup)
1/3 cup pitted Kalamata olives, halved lengthwise
2 cups cherry or grape tomatoes (3/4 lb), halved or quartered if large
2 celery ribs, cut into 1/4-inch-thick slices
1 cup loosely packed fresh flat-leaf parsley leaves

Steps:

  • Rinse squid under cold running water, then lightly pat dry between paper towels. Halve tentacles lengthwise and cut bodies (including flaps, if attached) crosswise into 1/3-inch-wide rings.
  • Cook squid in a 5- to 6-quart pot of boiling salted water , uncovered, until just opaque, 40 to 60 seconds. Drain in a colander and immediately transfer to a bowl of ice and cold water to stop cooking. When squid is cool, drain and pat dry.
  • Whisk together lemon juice, vinegar, oil, garlic, salt, and pepper in a small bowl, then stir in onion and let stand 5 minutes.
  • Meanwhile, combine squid, olives, tomatoes, celery, and parsley in a large bowl. Toss with dressing and season with salt and pepper. Let stand at least 15 minutes to allow flavors to develop.

4 lbs calamari, cleaned and skinned
1/2 cup diced red onion
2 fresh jalapenos, minced seeds and veins removed
1 cup red bell pepper, diced seeds and veins removed
1 cucumber, peeled seeds removed diced
1/2 cup celery, diced
1/4 cup fresh cilantro, diced
salt and pepper
1/4 cup fresh lemon juice
3 tablespoons champagne vinegar
1/2 cup extra virgin olive oil
2 pressed garlic cloves

Steps:

  • Clean calamari remove the fins and skin.
  • If you wish to use the tenacles cut them off above the eyes remove the hard center.
  • Cut the calamari into small rings.
  • Cook the calamari in boiling salted water for approx 1 minute drain and rinse under cold water.
  • Put into serving bowl add all the chopped ingredients stir to combine.
  • In a small bowl add vinegar and lemon juice wish in olive oil to make an emulsion
  • add to salad and stir to combine.
  • Refrigerate for several hours before serving.
