HAM SLICE BAKED IN MILK
An old-fashioned way of cooking ham. From the Laura Secord Canadian cookbook, which says this recipe comes from PEI.

Steps:
- Trim the excess fat off the ham and put in a shallow baking dish.
- Combine the mustard and sugar and spread over the ham.
- Cover with the milk and add in the spices.
- Put a lid on the dish or cover the top with foil and bake for 30 minutes in a 300 F oven.
- Bake 30 minutes longer uncovered.
- Remove from liquid and serve.

PA. DUTCH - HAM SLICE BAKED IN MILK
I just found this recipe among my Mother's handwritten recipe cards circa 1976. As I remember, we enjoyed it often. I think it came from a Pa. Dutch cookbook we had. That book might have been a gift from my Pa. Dutch mother-in-law. We never used the pineapple, though.

Steps:
- Rub ham slice with dry mustard.
- Place ham in large skillet or glass baking dish.
- Cover with brown sugar.
- Add enough milk to barely cover the ham.
- Bake 1 hour to 1-1/4 hours at 325. Milk should be almost all absorbed.
- You can add pineapple slices 1/2 hour before done. We preferred not to use the pineapple.

These sandwiches are delicious. I got the recipe a long time ago from a television show called "Cooking From Quilt Country" with Marcia Adams. Plan ahead as the filling needs to chill overnight.

Steps:
- In a medium bowl, combine everything but the bread and the butter.
- Chill overnight.
- Spread butter on one side of each bread slice.
- Top with cheese/ham mixture and another slice of buttered bread.
- Cut diagonally to serve.

HAM POT-PIE
This is a Pennsylvania Dutch recipe my mom has made all my life and it is my favorite dish. She usually serves it alone or with some small side dish, because everybody fills there plate with the pot-pie. My husband never heard of it till I made it for him. Now it is one of his favorite dishes.

Steps:
- Place ham in large pot and cover with water.
- Boil to make ham broth.
- Cut ham into cubes and set aside.
- Place potatoes in broth to cook while you are mixing dough.
- In large mixing bowl, mix flour, eggs, and milk to form soft dough.
- You may need to add a little more milk.
- Roll dough to 1/8" to 1/4" thickness (depending on preference).
- Cut dough into 1" by 3" rectangles.
- Drop dough into broth one piece at a time.
- Cook until dough is done.
- Add ham.
- Salt and pepper to taste.
- Add parsley for color.
