This is one of a number of historical recipes I am posting from my cookbook collection. It is adapted from the 1953 edition of Adventures in Good Cooking, by traveling salesman and food critic Duncan Hines, and featuring recipes collected from around the USA. This recipe is from Hotel Taneycomo in Rockaway Beach, Missouri. If the use of raw eggs concerns you, use pasteurized eggs. The can size is a guess; the recipe specifies only a "small" can. Peaches may be substituted for the pineapple. Cooking time is chilling time.

1/2 cup butter
1 cup sugar
2 eggs, beaten
1 cup chopped nuts
1 (8 ounce) can crushed pineapple, drained
8 ounces graham crackers, crushed, divided
whipped cream, for serving

Steps:

  • Beat butter and sugar together until light and creamy.
  • Stir in eggs, nuts and pineapple.
  • Line a dish with a thick layer of crushed graham crackers.
  • Top with pineapple mixture.
  • Spread remaining crackers on top.
  • Refrigerate for at least 12 hours.
  • Top with whipped cream.

Old Fashioned Recipe!

4 tablespoons butter (softened)
1 cup brown sugar
2 eggs
1 teaspoon vanilla extract
1/2 cup all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1 teaspoon ground cinnamon
1 1/2 cups peeled and chopped apples (I use 2 medium sized Gala apples)
1 cup chopped walnuts

Steps:

  • Cream butter, brown sugar, eggs and vanilla with a mixer. In another bowl whisk together flour, baking powder, salt and cinnamon.
  • Add to creamed mixture and mix until all ingredients are wet. Fold in chopped apples with a spoon. Spray a 9 inch deep dish pie plate with cooking spray.
  • Pour in batter and sprinkle chopped nuts on top. (You can fold nuts into batter if you want) Bake in a preheated 350 degree oven for 30 to 35 minutes testing center to see if done. Serve with ice cream or whipped cream on top while warm from the oven.

I found this in a box of very old recipes. It is listed as one of Mrs. Harry Truman's Favorites. can be served with whipped cream, ice cream or sherry sauce. The original recipe only says nuts but doesn't say what kind. Walnuts sound good in this.

  • Beat eggs and sugar until smooth.
  • add flour, baking powders and salt.
  • add nuts, apple and vanilla.
  • bake in a buttered 8" pie pa 35 minutes @ 350 degrees F.

My sister found this recipe some 30+ years ago...President Truman requested this often and Bess would go to the kitchen and make this for him herself. This is best served warm with FRESH whipped cream.

2 eggs, beaten till thick &,lemon colored
1 1/3 cups sugar
2/3 cup flour
1/2 teaspoon salt
3 teaspoons baking powder
2 cups chopped raw apples
1 cup black walnut, chopped

Steps:

  • Beat eggs well until thick and lemon colored.
  • Gradually add sugar to eggs.
  • In separate bowl mix together flour, salt and baking powder.
  • Stir into egg mixture.
  • Chop apples (with skins) and nut meats- fold into batter.
  • Grease 9x9 pan well with butter.
  • Pour in batter.
  • Bake in preheated 325º oven approximately 30-40 minutes or until done.
  • Pudding falls slightly after baking.

Yield Makes 6 to 8 servings

Number Of Ingredients 9

1/4 cup all-purpose flour
2 1/2 teaspoons baking powder
2 large eggs
1/2 teaspoon kosher salt
1 1/2 cups sugar
1 tart cooking apple, peeled, cored, and cut into 1/2-inch pieces (about 1 cup)
1 cup pecan pieces
1 teaspoon pure vanilla extract
Lightly sweetened whipped cream, for serving

Steps:

  • 1 Preheat the oven to 325°F. Butter a 9-inch square baking dish.
  • 2 Whisk together the flour and baking powder in a small bowl. In a large bowl, whisk the eggs and salt until blended and frothy. While whisking vigorously, slowly add the sugar and whisk until thick. Stir in the apples, pecans, and vanilla. Stir in the flour mixture, stirring well to incorporate the dry ingredients.
  • 3 Scrape the batter into the prepared dish and smooth the top. Bake until the top crust is browned and the filling is bubbly around the edges, about 40 minutes. Let cool at least 10 minutes before serving hot or at room temperature with the whipped cream.

1 1/4 teaspoons baking powder
1/8 teaspoon salt
1 egg
3/4 cup sugar
1/2 cup apple, peeled and chopped
1/2 cup pecans, chopped
1 teaspoon vanilla

Steps:

  • Preheat oven to 325°F Butter 1-quart casserole or souffle dish.
  • Sift together flour, baking powder and salt.
  • Beat egg and sugar until light and fluffy. Sir in vanilla.
  • Add flour mixture and blend well.
  • Fold in apple and nuts.
  • Spoon into prepared dish and bake 30 minutes.
  • Serve warm with whipped cream or vanilla ice cream.
