I love Oysters although I am not so keen on them natural, I enjoy oysters mornay, oysters Rockefeller and kilpatrick. I am posting a recipe for oysters kilpatrick as I made these last night as a starter they are very quick and easy and they taste great. A great starter as they are not as time consuming as oysters mornay.

2 dozen oysters, half shell (I can only buy whole oysters where I am and this takes a bit of time opening them. If you have to op)
4 -5 tablespoons Worcestershire sauce
250 g bacon, chopped
rock salt

Steps:

  • Cook bacon in pan until crisp, drain on absorbent paper.
  • Pour rock salt into a couple of oven proof dishes, enough to cover bottom, arrange oysters on top. (the salt helps to keep them in place as the shells are so uneven.).
  • Divide bacon between each oyster and pour Worcestershire sauce into each oyster bake in oven 180c for 5 Min's until heated through serve immediately.

A classic Australian dish which will be found in many Australian restaurants, and which is a brilliant way to enjoy oysters. I checked out a few sources before posting this recipe, for the 2005 Zaar World Tour, but primarily Huey (Australian chef Iain Hewitson) and the Australian publication by Reader's Digest of a book jam-packed with traditional Australian recipes: 'Family Recipe Scrapbook: tried and trusted recipes for today's cooks'. The recipe I've posted here is taken primarily from the Reader's Digest publication, but I've included details of a variation (from Huey) in the notes. By the way, if you're watching your salt intake and you're concerned about the unspecified amount of rock salt, don't be: you won't be eating it! Not in this recipe! But DO buy your oysters from someone or somewhere you can trust, so that you KNOW they are fresh.

24 fresh oysters, in their shells
rock salt
1 tablespoon Worcestershire sauce
30 g butter
4 slices bacon, rind and all fat removed, finely diced
sea salt, to taste
fresh ground black pepper, to taste
2 tablespoons flat leaf parsley, chopped
lemon wedge, to serve

Steps:

  • Preheat the grill to the highest temperature.
  • Arrange the oysters on a bed of rock salt in a large, shallow, ovenproof dish.
  • Combine the Worcestershire sauce and butter in a small saucepan and heat the butter until it melts and the mixture begins to bubble around the edges of the saucepan. Remove from the heat.
  • Spoon a little of the Worcestershire sauce and butter mixture over each oyster, and top evenly with the diced bacon and season with sea salt and freshly ground black pepper, to taste.
  • Cook under a preheated grill for 3-4 minutes, or until the bacon is crisp.
  • Sprinkle with parsley, and serve with lemon wedges.
  • Variation: The recipe for Oyster's Kilpatrick on Huey's website is Cath Claringbold's (from Mecca Bah in Melbourne), and varies from this more traditional recipe by including 100g finely chopped onion which is gently sautéed with the bacon in some olive oil. When the onions and bacon are removed from the stove, 2 drops of Tabasco sauce (this is for 3 dozen oysters) are added along with the Worcestershire sauce. Otherwise, the steps are much the same. I'm including this variation here, because unlike me some chefs I know are always looking for ways to add extra heat!

2 tablespoons Worcestershire sauce
1/4 cup balsamic vinegar
2 tablespoons butter
1 to 2 dashes of Tabasco sauce
Optional: 1 tablespoon vegetable oil
2 slices (rashers) smoked bacon (rindless, finely sliced)
12 to 24 oysters ( shucked )

Steps:

  • Gather the ingredients.
  • In a small pan, gently heat the Worcestershire sauce, balsamic vinegar, butter, and Tabasco sauce. Stir until combined.
  • Remove from the heat and set aside.
  • In a frying pan, cook the bacon slices until crispy.
  • Transfer to a paper towel to drain.
  • Once cooled, dice the bacon and set aside.
  • Place the oven shelf in the topmost position under the broiler and set the oven to broil. On a baking sheet, using aluminum foil, create pockets for the oyster shells to sit in without toppling over.
  • Arrange the shucked oysters in the foil pockets.
  • Top each oyster with a spoonful of sauce.
  • Scatter each with diced bacon.
  • Broil for 50 to 60 seconds, watching carefully.
  • Arrange on a serving platter and enjoy.

12 fresh oysters (shucked)
Lemon wedges (for serving)
Rock salt (for serving)
1 Guinness Stout Beer (for serving)
6 slices of bacon (diced)
½ cup of parsley (chopped)
¼ cup of Irish cheddar (shredded)
2 tbsp of Worcestershire sauce
2 tbsp of lemon juice
1 tbsp of olive oil
½ tbsp of hot sauce
½ tbsp of sea salt

Steps:

  • In a bowl, mix all of the oyster sauce ingredients (except for bacon & Irish cheddar). Set aside.
  • Build a medium-high heat fire for direct grilling. Add cast iron skillet to fire 1 minute before cooking to pre-heat. Cook bacon in skillet until done and put aside.
  • Add oyster sauce to the top of the shucked oysters, and place them over the fire. Cook for 2-3 minutes or until they begin to bubble. Pull off the grill immediately once done.
  • Top cooked oysters with bacon and shredded Irish cheddar. Pour a glass of Guinness into your pint glass and enjoy!

12-24 Shelled Oysters
2 finely chopped smoked Bacon
4 dessert spoon of Balsamic Vinegar
1 to 2 drops of unique odor Tabasco sauce
1 dessert spoon refined oil
2 dessert spoon of Worcestershire Sauce
2 dessert spoon butter

Steps:

  • At first collect all the ingredients at a place
  • Then heat a small saucepan, within it add 2 dessert spoon of butter, Worcestershire sauce about 2 dessert spoon, 4 dessert spoon of Balsamic vinegar and 2 drops of Tabasco sauce
  • Stir until all the ingredients mix properly, remove the saucepan from heat and keep beside
  • If the Bacons are skinny then add 1 dessert spoon of refined oil in a frying pan and broil the Bacon until they are crunchy.
  • Shift the fried bacon into a paper, to drain out the extra oil, and then slice them after cooling
  • Put the oven in the top position of the roaster and preheat it.
  • Outline the baking flat pan with crunched foil to make the mold for shells of oysters that are placed without plunge.
  • Properly place the shelled oyster in the baking flat pan.
  • Over each oyster add a spoon of sauce and spread 2 finely chopped fried Bacon and roast for a period of 50 to 60 seconds
  • Put off from the roaster and place on a serving tray

18 oysters (fresh and shucked)
1 bacon (chopped, or 50g shredded ham)
1 tbsp tomato sauce / ketchup
1 tbsp Worcestershire sauce
1 tbsp barbecue sauce
6 drops liquid smoke (optional)
1 tbsp soy sauce
1 tsp minced ginger
1 tbsp ponzu
1 tsp fresh lemon thyme (or regular thyme)
1 tsp chives (chopped)

Steps:

  • Preheat your oven to 200˚C / 400°F.
  • Pop the bacon or shredded ham in a small frying pan and sauté in its own fat until cooked through and crispy. (You can add a dash of oil if needed to give it more colour).
  • Mix the tomato sauce, Worcestershire sauce, BBQ sauce and optional liquid smoke in a small bowl.
  • Top your oysters with the cooked bacon and and drizzle with lashings of sauce. Bake in the oven for 5-10 minutes until sauce has started to caramelise and oysters are cooked. Serve hot, but be careful not to burn your fingers or your tongue!
  • Mix the soy sauce and minced ginger together, then drizzle over fresh oysters. No cooking required, so get stuck in!
  • Pour ponzu over fresh oysters, then garnish with lemon thyme and fresh chives. Simple, fresh and delicious!

Steps:

  • Preheat grill on high, or set oven to grill.
  • In a small bowl, mix together the strips of bacon and Worcestershire Sauce.
  • Place the rock salt on a baking tray, deep enough for the oysters to keep level while cooking. Position oysters on the rock salt, and spoon the bacon on top of the oysters.
  • Grill the oysters for 5-10 minutes, or until the bacon is cooked and crispy. Serve immediately with a lemon wedge.

  • If the oysters are not already shucked, open them up and discard the top of the shell. Sit the oyster in the bottom cup-like part of the shell and loosen the oyster if it is attached. Drain off excess liquid and remove any pieces of shell/grit that may have fallen in during opening.
  • Mix together the tomato ketchup, Worcestershire sauce and tabasco, if using (see notes re quantities). Set aside.
  • Finely chop the bacon into thin strips, cutting larger pieces in half if they bacon is wide. Warm a small skillet/frying pan and cook the bacon (you don't need to use any additional fat) until the bacon is cooked and just starting to crisp/brown.
  • If cooking on the grill/BBQ, rest the oysters on some scrunched foil or in the container they came in, if you have one, to keep them relatively level. If using oven/broiler (overhead grill), place some rock salt in a baking dish or on a baking sheet (if the dish is too big, make a smaller holder for the salt using foil as in video). Nestle the oysters in the salt to keep them level. You can also use a layer of scrunched up foil.
