OYSTER SOUP WITH WINE, CREAM AND SAFFRON

Oyster Soup With Wine, Cream and Saffron image

This is a rich and flavorful, easy to prepare soup. The longer you cook the bouillon, the thicker the broth will become; you can choose the exact thickness you want before you proceed with the oysters.

Time 50m

Yield 4 serving(s)

Number Of Ingredients 9

12 large oysters
8 ounces matchstick frozen mixed vegetables
4 saffron strands
1 fish bouillon cube
1 tablespoon butter
1/2 cup dry white wine
2 tablespoons cream
1/4 teaspoon salt
1/4 teaspoon white pepper

Steps:

  • Open the oysters over a bowl to collect all the juice. Put the juice in a one-pint measuring jug. Add to this the 1/2 cup dry white wine, then fill to the top with water to make a total of one pint.
  • Pour this into a wide pot, bring to the boil. Add the bouillon. Simmer around 30 minutes over low heat.
  • While it's cooking, heat the butter in a medium pot, add the frozen matchstick vegetables (typically carrot, green pepper, onion or leek). Cook this about 5 minutes. Salt and pepper the vegetables.
  • After the soup broth has cooked 30 minutes, add the matchstick vegetables. Add the cream and the saffron. Blend this all, at a low simmer, and taste for seasoning.
  • Add the 12 oysters.
  • Cook only 30 seconds to 1 minute.
  • Serve.

ELEGANT OYSTER AND ARTICHOKE SOUP

Elegant Oyster and Artichoke Soup image

This silky concoction makes an elegant starter, or a light supper if paired with the Parisienne Bistro Crudité Plate (p. 102) or the Bayona House Salad with Balsamic Vinaigrette (p. 95) and a warm baguette. Oysters and artichokes are another favorite New Orleans combination. For your convenience I've called for canned artichoke hearts, but if you're feeling expansive (and industrious), use fresh artichoke hearts. Your efforts will be rewarded.

Yield makes 6 servings

Number Of Ingredients 15

3 tablespoons olive oil or butter
1 medium onion, finely chopped
2 celery stalks, finely chopped
1 (12-ounce) can artichoke hearts, rinsed and chopped, or an equal amount of fresh hearts
1 garlic clove, minced
3 tablespoons flour
1/2 cup dry white wine
2 cups milk
1 pint oysters, drained (reserve the liquid) and coarsely chopped
1 cup heavy cream
4 scallions, minced
Salt and pepper
Hot sauce
Fresh lemon juice, as desired
Classic Croutons (p. 88), optional

Steps:

  • In a 2-quart saucepan, heat the olive oil over medium-high heat until it starts to sizzle. Add the onion, celery, artichoke hearts, and garlic and stir. Sauté for 5 minutes, then sprinkle with the flour and stir. Slowly whisk in the white wine, milk, and the oyster liquid. Bring to a boil, stirring or whisking, then add the cream, reduce heat, and simmer for about 10 minutes. Stir in the oysters, scallions, and a little salt and simmer about 5 more minutes. Season to taste with salt, pepper, and hot sauce. Add a squeeze of lemon and garnish with croutons.

OYSTER SOUP

Oyster Soup image

Provided by Alton Brown

Categories     appetizer

Time 35m

Yield 4 servings

Number Of Ingredients 10

4 cups heavy cream
1 pint oysters and liquor, separated
1 tablespoon unsalted butter
1/2 cup finely chopped celery
1/2 cup finely chopped onion
1 teaspoon celery seed
1 1/2 teaspoons hot pepper sauce
1 tablespoon lemon juice
2 tablespoons freshly chopped parsley leaves, chervil, or chives
Salt and pepper

Steps:

  • In a heavy 2-quart saucepan over medium heat, bring the heavy cream and oyster liquor from the oysters to a simmer. Remove from the heat.
  • Meanwhile, in a large saute pan over medium heat, melt the butter. Add the celery and a pinch of the salt and sweat for 3 to 4 minutes. Add the onion and continue cooking until translucent, about 4 to 5 minutes. Add celery seed, hot pepper sauce, and oysters and cook for 1 to 2 minutes, or until the edges of the oysters start to curl.
  • Transfer the oysters to the carafe of a blender and add enough of the cream just to cover.*
  • Puree until the mixture is smooth. Return the remaining cream to medium heat, add the pureed mixture, and cook until heated through.
  • Just before serving, add the lemon juice, chopped herbs, and season with salt and pepper, to taste.
  • *When blending hot liquids: Remove liquid from the heat and allow to cool for at least 5 minutes. Transfer liquid to a blender or food processor and fill it no more than halfway. If using a blender, release one corner of the lid. This prevents the vacuum effect that creates heat explosions. Place a towel over the top of the machine, pulse a few times then process on high speed until smooth.
