A classical Swedish dish. Oxjärpe (singular) means 'Beef hazel hen' which alludes to its shape resembling a hazel hen breast. Maybe not an everyday dish for weight watchers, but they melt in your mouth. Kids usually love it. In Sweden it's often served with cucumber and jelly, but personally I think it doesn't fit.

800 g ground beef
300 ml heavy cream
milk (see below)
200 ml dry breadcrumbs
2 eggs
2 egg yolks
1 onion, finely chopped
1 tablespoon butter
salt
pepper
1 pinch nutmeg
75 g butter, at room temperature
3 tablespoons parsley, chopped
1 dash Worcestershire sauce (optional)
salt

1 tablespoon butter
1 tablespoon wheat flour
350 ml beef stock (cubes+water)
1 teaspoon soy sauce
250 ml heavy cream
salt
pepper

Steps:

  • Heat the oven to 235 C/455°F.
  • Soak the breadcrumbs in the cream. Different brands of breadcrumbs absorb different amounts of liquid, so add some milk if it becomes very dense. Stir to avoid lumps.
  • Mix butter, parsley, Worcester sauce, salt and pepper to a parsley butter. Divide in eight balls.
  • Fry the onion in the butter until transparent. Let cool.
  • Mix ground beef, breadcrumbs, eggs, egg yolks, fried onion, salt, pepper and nutmeg.
  • Using wet hands, make eight croquettes with a round shape, like chicken breasts. Fill them with the parsley butter balls. Put in a greased oven casserole.
  • Bake in the oven for 20 minutes, turning once.
  • In the meantime, make the sauce: Slowly fry the flour in the butter until browned. Add stock and soy sauce and simmer for five minutes. Add cream and reduce the sauce to desired thickness. Season with pepper and salt if necessary.
  • There will probably be some fat from the croquettes in the tray. Discard that.
  • Serve the croquettes hot with sauce, boiled or fried potatoes, pickled cucumber and blackcurrant jelly.

Another Swedish recipe that I am posting for ZWT6. On Herrgårdsost Herrgårdsost is a semi-hard yellow cheese made from cow's milk with a mild nuttiness similar to Gruyere or aged cheddar. It has a few small holes (like Swiss cheese does) and is produced in large wheels coated with yellow wax. The name means "manor house cheese."

8 ounces smoked ham, cubed

1 cup sour cream
1/4 lb gruyere cheese, shredded

Steps:

  • Press pastry dough into baking pan.
  • Set oven to 350°F
  • Combine egg yolks, sour cream, ham, and cheese. Pour over dough, like a pizza.
  • Bake at 350°F for 40-60 minutes, depends on oven as they vary.

14 ounces cow meat
3 chorizo sausage, slices
pepper (to taste)
nutmeg (to taste)
oregano (to taste)
olive oil
1 medium onion
4 garlic cloves
1 egg yolk
1 egg
breadcrumbs
1 tablespoon all-purpose flour
parsley (to taste)
salt (to taste)
vegetable oil (for frying)

Steps:

  • Cut the meat into pieces. Place the meat, chorizo slices and the oregano in a food processor and pulse until slightly chopped. Season with salt, pepper and nutmeg and mix the spices into the meat with your hands.
  • Place the olive oil, the chopped onion and the chopped garlics in a saucepan and saute over low heat until the onion starts to turn golden brown. Add the meat, stir and simmer about 15 to 20 minutes, stirring occasionally. Remove briefly the saucepan from heat and mix well the egg yolk into the meat. Then, sprinkle with flour, stir and place the pan back on the stove about 3 to 4 minutes. Turn off the heat and sprinkle with chopped parsley.
  • Place the meat in a dish and let cool to room temperature. Mold with your hands small portions of the meat in the shape of croquette.
  • In a bowl, whisk the eggs with a fork. Coat the croquettes in breadcrumbs, then dip in the eggs mixture and finally, coat once more in breadcrumbs.
  • Heat the oil in a skillet. When the oil is hot, add the croquettes and fry them until golden. Once the croquettes are fried, place them on a plate with absorbent papper.
  • Serve the meat croquettes with rice or just with salad.

These individual sandwich cakes are based on the large Swedish sandwich cake. Don't let the name fool you though, it's not really a cake, but a sandwich made to look like one. These savory treats are like a little bite of Sweden.

18 slices bread, white or 18 slices rye meal
1 small fennel
9 asparagus, cooked
8 ounces cream cheese
3 tablespoons mayonnaise
2 tablespoons dill
1/4 cup capers
8 ounces cream cheese
1 cup sour cream
1 cup spinach leaves
6 shrimp, cooked or 6 ounces smoked salmon, sliced
3 hard-boiled eggs

Steps:

  • Use a biscuit cutter or large glass to cut the bread into rounds so that you have 18 rounds of bread.
  • Chop fennel and asparagus into chunks, reserving the asparagus bulbs for later. In a food processor, mix fennel, asparagus, cream cheese, mayonnaise, dill, and capers.
  • Spread cream cheese filling onto 12 of the bread rounds and stack to 6 sandwiches. Top each one with another plain bread round.
  • Use a hand blender or mixer to whip the remaining cream cheese and sour cream together. Spread sour cream mixture around the outside and top of the cakes.
  • Press spinach leaves around the outside of the cakes.
  • Decorate the top of each cake with a shrimp or slice of salmon, half of a boiled egg, and asparagus buds.
  • Garnish with dill sprigs and/or lemon slices.

Yummy Japanese croquettes combine ground beef with mashed potatoes and onions; formed into patties, then coated with panko and deep fried to a golden brown. Absolutely mouth-watering! They make a delicious snack! I prefer to make them in smaller bite-size pieces so it's easier to pick up with fingers. Serve with Tonkatsu sauce available at Japanese stores or major supermarkets.

3 medium russet potatoes, peeled, and chopped
1 tablespoon butter
1 tablespoon vegetable oil
3 onions, chopped
¾ pound ground beef
4 teaspoons light soy sauce
all-purpose flour for coating
2 eggs, beaten
panko bread crumbs
½ cup oil for frying

Steps:

  • Add potatoes to a large pot of salted water, and bring to a boil; cook until tender, about 15 minutes. Drain, pour potatoes into a large bowl. Stir in butter, and mash with a fork or potato masher. Set aside.
  • Heat 1 tablespoon oil in a large skillet over medium heat. Stir in onions, and cook until soft. Stir in beef and soy sauce. Cook, stirring continuously, until beef is browned and all the liquid is evaporated. Combine beef and onions with potatoes, and stir well.
  • Heat 1/2 cup oil in a deep skillet or wok over medium-high heat.
  • Shape potato and beef mixture into 10 similar-size balls, and flatten into patties. Dredge patties in flour. Then dip in egg, and coat with panko bread crumbs. Carefully place patties into oil, and fry until golden brown on each side.

This came out of a small Dutch cookbook that my brother sent me from Australia. I remember my mother making these, but it had been years since I'd had them. When I got the booklet, I tried it, and it was loved by all. It takes a bit of work, but is delicious. You can substitute any kind of meat. This is great for leftovers!

1 lb minced meat
2 ounces butter
2 ounces plain white flour
16 ounces beef stock
1 onion, finely chopped
3 eggs
salt
pepper
1 teaspoon chopped fresh parsley
toasted breadcrumb
corn flake crumbs

Steps:

  • Day 1: Melt butter in saucepan, slowly add in the flour, mix into a smooth paste.
  • Add in the stock and stir, cook for 10 minutes.
  • Fry onions and meat in a frying pan until brown, add to saucepan. Add salt, pepper, parsley, and cook for 1 minute. Pour into a dish and allow to cool overnight.
  • Day 2: Divide up into equal amounts, and roll into small oblong shapes. Roll into breadcrumbs. Beat eggs, and coat the croquettes, then roll into cornflake crumbs. Refrigerate overnight.
  • Day 3: Heat oil in a deep fat frying pan, add croquettes and fry until golden brown.
  • Makes approx 12 croquettes.
