SLOW-COOKER GRITS RECIPE
Classic Southern grits just got a slow cooked makeover and you're going to love it. We love grits, but don't love spending time standing over a hot stove stirring as our arm steadily turns to jelly. Finally, we have a solution. Enter, our Slow Cooker Grits. They have the same great flavor we love, but with a set-it-and-forget-it mentality that we can really get behind. Be sure to opt for stone-ground grits-this is not the time to sub in the quick-cook variety. You'll stir together the grits and 6 cups of water in your slow cooker. Allow the grits to settle into the bottom of the slow cooker by letting the combination sit for about 2 minutes. You'll want to skim the solids off the top of the liquid. To make it easier, tilt the slow cooker slightly and use a fine-mesh strainer. Let the grits sit for 8 hours. A few hours before you're ready to serve, turn the slow cooker on high and cook the grits for two hours stirring after one hour. Once two hours has elapsed, stir in cream, butter, salt, and pepper. You can either transfer the grits to a covered dish or let friends and family scoop straight from the slow cooker for a casual, no-fuss meal.

This recipe skips all the extra work by using a slow cooker, yet still delivers a batch of deliciousness for a crowd.

- Add the grits to a medium bowl and cover with water by 2 inches. Stir gently and allow the grits to settle for about 2 minutes. Skim off any bits of grits that have floated to the surface, then drain them in a fine-mesh sieve, discarding the liquid.
- Add the grits to a 6-quart slow-cooker insert with 7 cups of water and 1 tablespoon salt and stir to combine. Cover and cook until the grits are tender and have absorbed most of the liquid but are still loose enough to pour off a spoon, about 2 hours on high or 4 hours on low. Continue to cook, covered, up to 30 minutes more to achieve a thicker consistency.
- Add the milk and butter, stirring to fully combine. Serve immediately with desired toppings, or cover and keep warm for up to 2 hours.
