My family loves this fresh crispy salad. I got this recipe many years ago from a co-worker. It is different from most oriental salad recipes in that it does not use the ramen noodle spice packet.

1 bag of prepared coleslaw cabbage mix
2 bunch green onions
3-4 Tbsp butter
2 pkg ramen noodles - discard spice pack
4 Tbsp sesame seeds
1/2 c sliced almonds
2 Tbsp soy sauce
1/4 c white vinegar
1/2 c sugar
3/4 c vegetable oil

Steps:

  • 1. Chop green onions and add to coleslaw mix. Chill.
  • 2. Break up the ramen noodles and brown in 3-4 tbsp of butter. Add sesame seeds and almonds to toast. Set aside to cool.
  • 3. Mix soy sauce, vinegar, sugar, & oil in sauce pan and bring to boil. Boil for 1-2 minutes, or until the sugar has completely dissolved. Place in separate container and chill.
  • 4. Just before serving add the toasted noodle mix and the dressing to the coleslaw mix.

This is a salad that even non-cabbage eaters love. It is nice and crunchy with great flavor. I once took it to a potluck in my apartment complex and then had to put the recipe up on the bulletin board because everyone wanted the recipe!

Number Of Ingredients 12

2 -3 cups chopped cooked chicken breasts (depending on the amount of chicken you like)
1 head cabbage, shredded or chopped
1 bunch green onion, finely chopped (or to taste)
2 (2 1/2 ounce) packages slivered almonds
3 tablespoons sunflower seeds
2 packages Top Ramen noodles or 2 packages other ramen-type soup
3 tablespoons oil
3/4 cup vegetable oil or 3/4 cup canola oil
4 1/2 tablespoons seasoned rice vinegar
4 1/2 tablespoons sugar
2 teaspoons salt
1 teaspoon pepper

Steps:

  • Prepare dressing and set aside.
  • Smash noodles of Top Ramen (discard seasoning packets) and brown over medium heat in 3 tbs oil.
  • Once noodles have begun to slightly brown, add slivered almonds.
  • If you start to brown the Ramen and almonds at the same time, the almonds will burn before the Ramen browns.
  • Once the ramen noodles have turned a dark golden brown, remove from heat and set aside.
  • Combine cabbage, green onions, chicken and sunflower seeds in a large bowl.
  • Add the ramen/almond mixture and stir well.
  • Add dressing and stir to coat.
  • I generally prepare the dressing right before serving.
  • If it sits in the refrigerator too long, it gets very thick and won't remix well.
  • Also, this amount of dressing is just the right amount to give the salad a good coating.
  • If you are one of those who likes more dressing, I would recommend making 1/2 batch of extra dressing.
  • If you plan on eating this left over, keep in mind that the noodles will not stay crunchy.

1/2 cup white vinegar
2 packages Oriental ramen noodles with seasoning packets
1 head cabbage, shredded
1 bunch green onions, , chopped
1 cup , sliced almonds, , toasted
1 cup roasted sunflower seed

Steps:

  • Mix oil, sugar, vinegar and seasoning packets from noodles together refrigerate overnight. Crush noodles in a serving bowl add cabbage, onions, almonds and sunflower seeds. 1 medium head cabbage, shredded
1 medium red onion, thinly sliced
1/2 cup chopped green pepper
1/2 cup chopped sweet red pepper
1/2 cup sliced pimiento-stuffed olives
1/2 cup white wine vinegar
1/2 cup canola oil
1/2 cup sugar
2 teaspoons Dijon mustard
1 teaspoon salt
1 teaspoon celery seed
1 teaspoon mustard seed

Steps:

  • Combine cabbage, onion, peppers and olives. In a large saucepan, mix remaining ingredients; bring to a boil. Cook and stir 1 minute. Pour over vegetables, and stir gently. Cover and refrigerate overnight. Mix well before serving.

1/2 head cabbage, shredded or 1/2 head romaine lettuce, mix
1/4 bunch cilantro, chopped
1/4 cup sliced almonds
1 (4 ounce) can mandarin oranges (optional) or 1 -2 tomatoes, instead
1 (3 ounce) package chicken-flavored ramen noodles
1 -2 cooked chicken breast, charbroiled (leftovers work great)
1/2 cup seasoned rice vinegar
2 tablespoons water
1 tablespoon sesame oil
ramen seasoning (dry pouch from 3 oz ramen noodles)
1 cup red wine vinegar
1/4 cup apple cider vinegar
3/4 cup sugar
kosher salt
fresh ground black pepper
1 1/2 tablespoons dark sesame oil

Steps:

  • toss greens and cilantro together and just before serving add 1 pkg crumbled dry ramen noodles over the top and toss to distribute - garnish with oranges (or tomatoes) and almonds - add leftover chicken breast (dice or cube if using).
  • stir together 1/2 cup seasoned rice vinegar, 2 TB water, 1 TB sesame oil, add dry seasoning packet from the ramen noodles and mix well - pour over salad when ready to serve.

  • combine vinegars, sugar, salt and pepper to taste in mixer bowl and mix at low speed until sugar and salt are dissolved.
  • add oils and continue to mix until blended, refrigerate until ready to use,.

I have been making this salad for at least 25 years. I think I got it from my friend, Cloetta. We served it at a church party for over 150. I like to make this the day before and refrigerate, individually, in ziploc bags. When we are ready to eat mix together. (Add chow mein noodles last if desired. I don't use them at all)

1 head iceberg lettuce
3 tablespoons green onions (some tops)
2 tablespoons sesame seeds, toasted
1 (3 ounce) package almonds, toasted
1 (8 ounce) can mandarin oranges (drained)
5 ounces chow mein noodles (optional)
2 tablespoons sugar
1/2 teaspoon salt
1/2 teaspoon pepper
1/4 cup vinegar
3/4 cup salad oil

Steps:

  • Wash, dry and tear lettuce. I like to prepare my lettuce hours earlier and refrigerate in a ziploc bag, so that it will be crisp.
  • Wash and chop onions.
  • Toast sesame seeds and almonds in small skillet. I don't toast them together.
  • Drain mandrian oranges.
  • Prepare dressing.
  • Mix everything right before serving.
  • Add chow mein noodles last minute.
