Alton Brown's Overnight Oatmeal recipe couldn't be easier: Combine the ingredients before you go to bed, and breakfast will be waiting for you in the morning.

Steps:
- In a slow cooker, combine all ingredients and set to low heat. Cover and let cook for 8 to 9 hours.
- Stir and remove to serving bowls. This method works best if started before you go to bed. This way your oatmeal will be finished by morning.
NO-COOK OVERNIGHT OATMEAL
I love making up a few of these at a time for a quick, on-and-go breakfast. You can use different spices or maple syrup and your favorite berry or fruit.

This recipe was given to me by a friend who knows Oatmeal Cookies are my favorite. I have not tried them yet but plan to this weekend. They sound delish to me. They make a lot but I am sure the recipe could be halved.

Steps:
- 1. Mix oatmeal with brown sugar and oil. Let stand overnight. Next morning, stir in beaten eggs, flavoring and salt. Drop from teaspoonful onto greased cookie sheet. Bake at 325 degrees for 15 minutes or until lightly browned. ENJOY!
- 2. Craisins, raisins, nuts, coconut, etc. can be added to these cookies.

VEGAN OVERNIGHT OATMEAL COOKIES {GF, OIL-FREE}

- In a medium bowl, combine the milk, coconut sugar, nut butter, flaxseed meal, cinnamon, vanilla, and sea salt until blended.
- Stir in the oats. Reserve 1 and 1/2 tablespoons dried fruit. Add the remaining dried fruit to bowl. Cover and refrigerate for at least 3 hours or up to 12 hours (the liquid will be absorbed and the mixture firm).
- Preheat oven to 400F (200C). Lightly spray a large cookie sheet with cooking spray.
- Stir the oats to loosen; add the baking powder and vigorously stir to blend.
- Using a small cookie scoop or tablespoon, scoop the dough in small mounds, spacing 2 inches apart, on prepared sheet. Sprinkle the reserved fruit bits on top of cookies.
- Bake in the preheated oven for 11 to 13 minutes until cookies have spread, are golden brown, and the centers are set.
- Remove from oven and let the cookies cool on sheet for 2 minutes before removing to a cooling rack to cool completely.
