Steps:
- Cut a circle in the middle of a piece of bread.
- If you don't have a round cookie cutter, the top of a glass will work.
- Heat a skillet or griddle sprayed with Pam or Mazola.
- Place the bread in the pan.
- Put about 1/2 t butter in the hole in the bread.
- Heat the butter until very hot.
- Crack an egg in the hole.
- Use a spatula to move the white around so it gets done.
- When the egg is fairly well set, turn the bread and egg over to cook the other side, being careful not to break the yolk.
- In the meantime, toast the holes from the bread for dipping in the yolk.
- Oh, and salt and pepper as desired.
- I guess you could toast the bread before you put it in the pan, but I've never tried it that way.
FRENCH TOAST VARIATION OF EGGS IN A BASKET
This recipe may sound weird to some people, but no matter who I make it for, they love it! Oh and it is a great time saver. It only takes 3 ingredients! Traditional eggs in a basket get an added touch by making French toast with the bread first, a quick and easy breakfast with extra protein.

Steps:
- Whisk 4 eggs together in a bowl.
- Cut 2-inch holes out of the center of each bread slice, reserving the cut-outs.
- Heat olive oil in a skillet over medium heat.
- Dip bread into the whisked eggs, covering completely on both sides. Place each piece of dipped bread, 1 at a time, into the hot skillet; immediately crack an egg into the hole of the bread. Cook until egg is over-easy, about 1 minute per side.
- Dip the bread cut-outs into the remaining whisked eggs and cook in the hot skillet until browned, about 2 minutes per side. Place the centers back into the center of each piece of bread to complete the top of the "basket".

- Butter one side of a slice of sourdough bread, (reserving a little bit of butter for later). Use a 2¼" biscuit cutter OR a pint jar lid or jar to carefully cut out a circle from the middle of the buttered side of the bread. Save both pieces of buttered bread.
- Heat a skillet or griddle on medium heat. Place bread (and round cut out) BUTTER SIDE DOWN in hot skillet. Cook for about 2 minutes, or just until the bottom side begins to turn golden brown. Place reserved bit of butter into the hole. Once butter melts, carefully crack an egg into the hole, being careful to not break yolk. Lightly salt and pepper egg. Cook 1-2 minutes (I usually do 2 minutes), until egg begins to set/solidify in the bread. Carefully turn bread to the other side, (trying to not splash egg white all over or break the yolk). Flip over toasted bread round at the same time.
- Continue to cook egg for another minute, or until it reaches desired "done-ness". Transfer the egg in a basket and toasted bread round to a serving plate; garnish with chopped parsley or chives, if desired. Serve, and enjoy!
