GRUYERE AND EGG BURGERS
Steps:
- Whisk mayonnaise, garlic, lemon juice and lemon zest until blended. Refrigerate., For burgers, combine the next six ingredients, mixing lightly but thoroughly (do not overmix). Shape into eight patties. Grill, covered, over medium direct heat until a thermometer reads 160°, 5-7 minutes on each side. Top with cheese; grill, covered, until cheese is melted, 1-2 minutes longer. Place burgers on bun bottoms. Keep warm., Melt 1 tablespoon butter over medium heat in each of two large skillets (on grill or stovetop). Break eggs, one at a time, into a custard cup or saucer, then gently slide into pans. Immediately reduce heat to low. To prepare eggs sunny-side up, cover pan and cook until yolks thicken but are not hard. To make basted eggs, spoon butter in pan over eggs while cooking. For over-easy, carefully turn eggs to cook both sides but do not cover pan., To serve, spread mayonnaise mixture over bun tops. Add arugula, tomatoes and, if desired, additional mustard to burgers. Top with fried eggs. Replace bun tops.

- Preheat an outdoor grill for medium-high heat and lightly oil the grate.
- Form beef into 4 equal-sized patties and season with salt and pepper.
- Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels.
- Cook patties on the preheated grill until browned and no longer pink, about 5 minutes per side. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).
- At the same time, crack eggs into a skillet over medium heat. Cook until outer edges become opaque, 1 to 2 minutes. Cover, reduce heat to low, and cook until whites are set but yolks are still runny, 2 to 3 minutes.
- Apply mayonnaise to bottom buns and layer cheese, lettuce, burgers, bacon, onion slices, eggs, hot sauce, and bun tops.

PERFECT EGGS OVER EASY

- Crack the eggs: Crack 2 large eggs into a custard cup.
- TIP: Never crack eggs directly into a pan-always crack them into a cup or ramekin. It's the only way to make sure they cook evenly, and you can pour them into the pan right where you want them.
- Heat the pan: Place an 8-inch nonstick skillet over low heat and add 1 tablespoon unsalted butter (don't dare skimp). Brush the butter around the pan.
- Add the eggs: When the butter stops foaming, pour the eggs into the pan, then quickly lift the handle just enough for the eggs to pool slightly on the far side. This will prevent the thin albumin from running out all over the pan.
- Flip the eggs: After 10 to 15 seconds, smoothly lower the handle. Wait another 10 seconds, then lightly jiggle the pan just to make sure that nothing is sticking. Season with 1 pinch of kosher salt and 1 grind of black pepper and cook, still over low heat, for 1 to 11/2 minutes.
- Jiggle again and examine the whites for opaqueness; when they're fully set but not hard, it's time to flip. Here comes the hard part: Flip the eggs by pushing the pan away from you and snapping the far edge upward. As the eggs turn, try to bring the pan up to meet them.
- Return the pan to the heat and slowly count to 10. Re-flip the eggs to their original side. (This time it won't be so difficult.) Slide onto a warmed plate and serve immediately with toast for wiping up all the goodness.
- TIP: Never flip the food up and bring the pan down. Try to meet the food with the pan as best as you can, thus preventing a hard-and potentially yolk-busting-landing.
EGGS OVER EASY
Steps:
- Heat a small non-stick skillet over low heat and add butter. As soon as the butter stops foaming, crack the eggs into the pan. Lift the handle about an inch so that the eggs pool in the far corner of the pan. Hold for 30 seconds or until the whites start to set, then lower the handle and give the pan a jiggle just to make sure there's no sticking. Season with a pinch of salt and pepper and continue to cook over low heat until the whites become opaque. Jiggle to loosen the eggs, then lift the pan, holding it about a foot above the heat. Now, flip the eggs over by pushing the pan away and snapping upward simultaneously. Once the eggs start their somersault, raise the pan to meet them so that the exposed yolks experience the softest landing possible. The goal of course is to avoid breaking the yolks. If you succeed, count to 10 slowly then flip the eggs again, slide them onto a plate and serve. If the yolks do break, act like you meant them to, fry for another minute and serve. They'll still taste great.

- Take the beef out of the refrigerator and allow it to sit at room temperature for about 5 minutes before forming the patties. Form beef into three 5 to 6 ounce hamburger patties. Use your thumb to imprint a dimple into the middle of each burger. (This prevents the middle of the burgers from puffing up while cooking). Season both sides of the hamburgers with salt and pepper.
- Melt 1 tablespoon of butter in a cast iron pan over medium heat. Cook hamburger patties 3 to 4 minutes on each side, depending on how well done you like it.
- Rest burgers covered loosely with aluminum foil for 5 minutes then serve on a buttered bun with lettuce, tomatoes and onion (or how you like it).

- Preheat your grill or a skillet on the stove to medium-high heat. Season 1 pound ground beef chuck with ½ teaspoon each of salt and pepper. Mix well and shape the beef into 4 burger patties.
- Grill the patties or cook on the stove until you reach a nice sear, about 3-5 minutes. If the burgers stick when you try to flip them, they aren't ready! Let them sear another 30 seconds to a minute until they come up easily.
- Flip the burgers and sear the other side about 3-5 minutes, or until the burgers are done to your liking. After flipping, top each burger with 2 slices or more of smoked Gruyere cheese. Cook until it melts. We tend to add the cheese closer to the final 2 minutes of cooking time.
- Remove the burgers from the heat and let them rest 5-10 minutes. While they're resting, cook 4 eggs according to how you like them (ex. fried or poached). Prepare your caramelized onions.
- Toast 4 burger buns. After cooking the eggs, place a burger on each bun. Top with a spoonful of caramelized onions and an egg. Place the top buns back on the burgers, but be gentle so the egg doesn't break. Serve with plenty of napkins and enjoy!

- Combine all the sauce ingredients in a small bowl and mix well. Refrigerate until ready to use. Alternatively, if you want to use the sauce in a squeeze bottle, I recommend blending the ingredients so the relish doesn’t get stuck.
- Heat a large cast iron skillet over medium heat and melt in 1/2 a tablespoon of butter. Place the buns in cut side down until golden brown, this will only take a minute so keep an eye on them.
- Using your hands, form the ground beef into a ball and then gently flatten it into a patty that is about a 1/4” thick. Try to make it slightly larger than your bun as the patty will shrink slightly when it cooks. The exact thickness doesn’t matter but if you go any thicker or thinner, adjust your cooking time accordingly. Generously season one side with salt and pepper.
- Melt the rest of the butter into the skillet and place the burger in seasoned side down (to one side so there is room for the egg). Season the other side with salt and pepper. I like my burgers medium rare and it takes about 1 and a half minutes per side to get there. Feel free to leave it on longer if you like your burger more done.
