EGG AND TORTILLA CHIP BAKE
Tortilla chips and eggs are baked with pepper jack cheese, mild green chiles and fresh cilantro for an eye-opening breakfast casserole.

Steps:
- Preheat the oven to 375 degrees F. Lightly coat a rectangular 2-quart baking dish with cooking spray. Spread half of the chips in the bottom of the prepared baking dish.
- Whisk together the milk, ancho chile powder, eggs and a pinch each of salt and pepper in a large bowl until well combined. Stir in the green chiles, cilantro and 1/2 cup of the pepper jack; pour into the baking dish. Bake until the casserole is set around the edges but a little loose in the center, 20 to 25 minutes.
- Sprinkle the remaining chips over the casserole. Sprinkle with the remaining 1/2 cup pepper jack and continue to bake until the cheese is melted and the casserole is set in the center, about 10 minutes more. Let stand 10 minutes. Top with whole cilantro leaves, salsa verde and/or pickled jalapenos. Serve with sour cream.
OVEN CHIPS
This easy alternative to deep fried chips tastes just as good and is easier to cook. You can substitute any seasonings you like for the herbs and sea salt. Adapted from Alex Barker's cookbook "Potato - a celebration of the world's most versatile vegetable".

Steps:
- Preheat oven to highest temperature, generally 240 degrees Celsius.
- Lightly oil a large shallow roasting tin and place it in the oven to get really hot while you prepare the potatoes.
- Cut the potatoes in half lengthwise, then into long thin wedges, or thicker ones if you prefer.
- Brush each side lightly with oil (or just pop them into a large bowl, pour some oil over and mix them around a few times to coat them).
- When the oven is really hot, remove the pan carefully and scatter the potato wedges over it, spreading them out in a single layer over the hot oil.
- Sprinkle the potato wedges with the herbs and salt and roast for about 20 minutes, or longer if they are thicker.
- They will be ready when they are golden brown, crisp and lightly puffy.
- Remove from oven and serve with a dollop of mayonnaise.

Egg and chips is one of my all time favourite meals - I'm a classy girl! I always worry about frying the eggs so discovered that they work in the oven (best not ask how). The best potatoes to use for this are King Edward or Maris piper.

Steps:
- heat oven to 220°C.
- Put chips in a roasting pan and scatter over garlic and rosemary. Drizzle with oil and toss to coat.
- Roast for 35 - 40 mins giving the tin a good shake halfway through.
- Make two gaps in the chips and crack an egg in each gap. Return to the oven and cook until the eggs are to your taste.
- Serve with tons of salt and vinegar!

DAD’S EGG AND CHIPS - LAVENDER AND LOVAGE

- Peel the potatoes and cut into wedge shaped chips about 2cm thick and 8cm long. Put the potatoes in cold water to remove some of the excess starch prior to frying, then drain and dry.
- Heat oil in a chip pan or deep frying pan and place all of the chips in the oil. Fry until the chips are light golden brown, moving them around during frying to get them all evenly coloured and crispy. Remove them from the pan and drain on soft kitchen paper. Season to taste with salt.
- When the chips are nearly cooked, heat up some oil in another pan and add the eggs. Fry them to your taste, as in sunny-side up, over easy or over with the yolk broken.
- Serve the freshly fried chips with the fried eggs straight away, with vinegar and sauces or pickled onions.

- Preheat the oven to 200°C/fan180°C/gas 6. Cut the potatoes into medium-thick chips. Drop into boiling water, bring back to the boil and cook for 5 minutes. Drain well, and spread out to cool and dry fully (this is vital!).
- Heat the fat in a large, deep baking tray for 10 minutes. Add a chip – if it fizzes, your fat is hot enough; if not, heat for another 5 minutes. Add the chips in a single layer and give them all a good basting. Cook for 35 minutes, until really golden. Lift from the fat with a slotted spoon and drain on kitchen towel. Sprinkle with coarse sea salt.
- Fry the eggs to your liking. To be really indulgent, you can fry them in goose fat too. Serve with the chips.
