This easy oven BBQ chicken recipe is made with boneless chicken breast halves, grill seasoning blend, and a quick and easy homemade barbecue sauce.

For the Chicken:
4 boneless chicken breast halves (skin removed)
2 teaspoons olive oil (or canola oil)
Grill seasoning (to taste)
For the Barbecue Sauce:
1 cup ketchup
3 tablespoons maple syrup (or packed brown sugar)
1 tablespoon Dijon mustard
1 tablespoon apple cider vinegar
2 tablespoons Worcestershire sauce
1 teaspoon chili powder
1 tablespoon olive oil (or canola oil)

Steps:

  • Gather the ingredients.
  • Preheat the oven to 350 F. Rub the chicken breasts with the oil and sprinkle generously all over with the grill seasoning. Arrange in a greased shallow 2-quart baking dish. Alternatively, and for a quicker cleanup, line the baking dish with foil and grease the foil before adding the chicken to prevent sticking.
  • Combine the barbecue sauce ingredients in a bowl and stir to blend.
  • Pour the sauce over the chicken.
  • Cover the baking dish tightly with foil and bake in the preheated oven for 25 to 40 minutes, or until the chicken is tender and cooked through. The chicken should register at least 165 F inside on an instant-read food thermometer , the minimum safe temperature for chicken consumption.
  • Serve with your favorite sides and enjoy.

1 tablespoon vegetable oil
3 cloves garlic, minced
1 medium onion, finely chopped
1 teaspoon paprika
1 teaspoon chili powder
1/2 teaspoon smoked paprika
1 1/2 cups ketchup
1/4 cup apple cider vinegar
2 tablespoons unsalted butter
1 tablespoon Worcestershire sauce
3 1/2 pounds chicken legs and thighs
Kosher salt and freshly ground black pepper

Steps:

  • Preheat the oven to 400 degrees F.
  • Heat the oil in a medium saucepan over medium heat. Add the garlic, onion, paprika, chili powder and smoked paprika and cook, stirring occasionally, until the onions soften, about 8 minutes. Add the ketchup, vinegar, butter, Worcestershire and 1 cup water. Bring to a simmer and cook, stirring occasionally, until slightly thickened and the flavors have blended, about 10 minutes.
  • Pat the chicken dry and season all over with salt and pepper. Arrange the chicken skin-side down on a rimmed baking sheet. Pour the barbecue sauce over the chicken and cover with foil. Bake about 25 minutes. Remove the foil and continue to bake until the chicken is beginning to brown in spots, about 15 minutes. Turn the chicken skin-side up and bake until golden and browned in spots, about 15 minutes more. Toss to coat with the sauce on the baking sheet and serve.

4 whole skin-on, bone-in chicken breasts
1 cup barbecue sauce (such as Sweet Baby Ray's®)
kosher salt and coarsely ground black pepper to taste

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C). Line a baking pan with heavy-duty foil to make cleanup easier.
  • Prepare chicken breasts by cutting off the rib meat if you wish and rinse and pat dry. Leave the skin on. Season chicken with salt and pepper and put in the pan.
  • Bake in the preheated oven until juices start to appear, about 10 minutes. Reduce oven temperature to 375 degrees F (190 degrees C). Remove the pan and generously pour 1/2 of the barbecue sauce over chicken. Continue to bake for 20 minutes. Repeat with remaining barbecue sauce and cook until no longer pink in the centers and skin is crispy, 15 to 20 minutes more.

1/3 cup chopped onion
3/4 cup ketchup
1/2 cup water
1/3 cup white vinegar

1/4 teaspoon salt
1/8 teaspoon pepper

Steps:

  • Preheat oven to 350°. In a nonstick skillet coated lightly with oil, brown chicken over medium heat. Transfer to a 13x9-in. baking dish coated with cooking spray., Recoat skillet with oil. 1 broiler/fryer chicken (3 to 4 pounds), cut up
3 tablespoons butter
1/3 cup chopped onion

This delicious dish is adapted from Cooking in a Casserole by Robert Ackart (1973). The whiskey gives the BBQ sauce a special zip. This recipe calls for chicken breasts, but you may use any part of the chicken that you like.

2 teaspoons salt
1/2 teaspoon pepper
2 teaspoons paprika
6 chicken breast halves, boneless
1 teaspoon salt
1/4 teaspoon pepper
1 tablespoon cider vinegar
1/2 teaspoon chili powder
1 tablespoon Worcestershire sauce
1/2 cup ketchup
4 tablespoons Jack Daniels Whiskey

Steps:

  • Flour mixture: combine all ingredients in a paper or plastic bag. Coat chicken pieces one at a time in bag.
  • Lightly oil a cookie sheet with olive oil. Spread flour-coated chicken pieces evenly on sheet.
  • Combine the sauce ingredients. Using a brush, coat the chicken pieces with sauce.
  • Preheat oven to 350°F Bake small pieces like legs for 60 minutes. Larger pieces like breasts may take up to 90 minutes. Every 30 minutes, turn the pieces over and coat with BBQ sauce. Give a final coat just before serving.

Before discovering Zaar, I had a a terrible habit of printing off recipes from other sights or clipping them from magazines and newspapers anticipating making them in the future. This particular recipe I printed in Sept/03 and decided to make it yesterday Jan.10/06 as I wanted to try something a bit different with chicken. It is from another site - southernfood.about.com and was very simple to make. My hubby was the taste tester for this particular dish and it must have met with his approval as there was a note on the kitchen table when I got home today that said - "Hope there is chicken left for me for dinner tomorrow. It is really, really good."
