Oven Baked Onion Ranch Catfish Fillets image

Catfish fillets dipped in a sour cream/mayo/ranch dressing mixture and rolled in french-fried onion rings. This is another recipe I've found on an old yellowed newspaper clipping and am transferring to Zaar.

2 lbs catfish fillets
1 cup sour cream
1 cup mayonnaise
1 (1/2 ounce) envelope ranch dressing mix
1 (6 ounce) can French fried onion rings

Steps:

  • Combine sour cream, mayonnaise, and ranch dressing mix in a medium-size bowl. Put half of the mixture in a flat dish, reserving the remaining mixture to serve as sauce.
  • Finely crush the onion rings and place in another flat dish.
  • Dip fillets in sour cream mixture and then roll in crushed onion rings.
  • Place fish on an ungreased baking tray and bake at 350 degrees for 20-25 minutes, or until fish flakes easily. Serve with reserved sauce.

I've been making this recipe for years, and it's very good. I believe I clipped this recipe from the Tulsa World Newspaper in the 80's, but don't remember the origin. This is a nice change from fried catfish. You can use any fish, toss in some shrimp, green pepper, celery and fresh tomatoes are also good. Serve with rice. Posted for ZWT5.

3 slices bacon, diced
2 garlic cloves, minced
1 onion, chopped
1 cup butter (2 sticks)
2 teaspoons cayenne pepper
1 1/2 teaspoons Grey Poupon mustard
1/4 teaspoon basil
1/4 teaspoon thyme
1/2 teaspoon oregano
5 dashes Tabasco sauce (or to taste)
2 tablespoons crab boil, spice
1 1/2 lbs catfish fillets

Steps:

  • Preheat oven to 375º.
  • Saute the diced bacon, onion and garlic. Add the butter and herbs. Simmer 3 minutes. Add the fish, stir and simmer 3 minutes more.
  • Transfer to a baking dish and bake for about 20 minutes or until the fish is done.

4 - catfish fillets
1 cup(s) light sour cream
1 - 10 oz pkg ranch salad dressing mix
2 - small cans french fried onion rings
1 cup(s) light mayonnaise

Steps:

  • Heat oven to 350. Combine sour cream, mayonnaise and ranch dressing mix in bowl. Pour 3/4 cup of mix into a shallow bowl.
  • Crush the onion rings in a lg plastic, resealable bag. Place crumbs in a shallow bowl. Dip each fillet into sour cream mix, then into onion rings, coat evenly.
  • Lightly spray a 9" x 13" baking pan w/ cooking spray. Place fillets in pan. Bake 20 mins, or until fish flake easily. Serve w/ reserved sour cream mix.

¼ cup honey Dijon mustard
4 (6 ounce) fillets catfish fillets
garlic salt and pepper to taste
dried parsley flakes

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • In a small bowl, mix together the onion and mustard. Season the catfish fillets with garlic salt and pepper. Place on a baking tray and coat with the onion and honey. Sprinkle parsley flakes over the top.
  • Bake for 20 minutes in the preheated oven, then turn the oven to broil. Broil until golden, 3 to 5 minutes.

4 catfish fillets
2 tablespoons light ranch salad dressing
1 eggs or 2 egg whites
6 tablespoons yellow cornmeal
4 tablespoons parmesan cheese, grated
2 tablespoons flour
1/4 teaspoon red pepper seasoning
1/8 teaspoon salt
1 teaspoon basil
1 teaspoon parsley

Steps:

  • Preheat oven to 425 degrees.
  • Whisk wet ingredients together in a bowl and combine dry ingredients on a piece of wax paper.
  • Spray a glass baking dish with Pam or olive oil.
  • Rinse catfish in cool water and DRY THOROUGHLY with paper towels.
  • Dip each catfish fillet in wet ingredients and dredge in breading to coat. Just a nice, light covering is enough. Don't try to completely cover in breading.
  • Place catfish fillets in glass baking dish & refrigerate for 10 minutes. This step, plus making sure the fillets are very dry before dipping in the egg will help the breading stick to the fish and NOT the pan!
  • Bake at 425 for 10 to 12 minutes per side.
  • Serve with lemon wedges for garnish.

½ cup yellow cornmeal
1 teaspoon paprika
1 teaspoon dried thyme
1 teaspoon salt
½ teaspoon celery seed
½ teaspoon onion powder
½ teaspoon garlic powder
½ teaspoon ground black pepper
½ cup skim milk
cooking spray

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C). Line a baking sheet with aluminum foil and coat with cooking spray.
  • In a shallow dish, stir together the cornmeal, paprika, thyme, salt, celery seed, onion powder, garlic powder, and pepper. Dip the catfish fillets in milk, then place them into the cornmeal mixture and coat liberally; place on the greased baking sheet. Coat the tops of the fillets with cooking spray until wet.
  • Bake for 15 minutes in the preheated oven, or until fish is easily flaked with a fork.

SPICY OVEN-BAKED CATFISH

The egg whites keep the moisture in the fish, I strongly suggest to serve this with creamy lemon sauce (recipe below) it is what makes this extra special and the sauce takes only minutes to make, it can be made up to 1 day ahead if desired, using low-fat sour cream for the sauce will reduce the some of the fat content, using fat-free sour cream it will make it almost totally fat-free, although I have never used fat-free sour cream I cannot say it will be okay, you can of coarse use full-fat sour cream if you wish! Adjust the cayenne pepper to taste.

7 large catfish fillets
2 -3 teaspoons seasoning salt
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
1 pinch cayenne pepper (or to taste)
2 cups dry breadcrumbs (or even better, use panko breadcrumbs)
5 large egg whites, room temperature (beaten until frothy)

Steps:

  • For the fish; wash the fish fillets under cold water, then pat dry with paper towels.
  • In a shallow bowl mix together the dry breadcrumbs with seasoned salt, black pepper, garlic powder and cayenne pepper.
  • In a bowl whisk or beat egg whites until foamy.
  • Dip the fillets into egg whites, then dredge in the breadcrumb mixture.
  • Place the fillets in one layer onto a well-greased wire rack that is set on a large baking sheet.
  • Bake at 400 degrees for 20 minutes or until fish is golden brown (do not overbake).
  • LEMON CREAM SAUCE; in a bowl mix together one 8-ounce container of sour cream (low-fat is okay) 1-2 tablespoons fresh chopped parsley, 1/2 teaspoon grated lemon rind, 2-3 tablespoons lemon juice and salt and pepper to taste.
  • Cover and chill until ready to serve.

1 ½ pounds catfish fillets, cut into serving pieces
1 cup cornmeal

1 tablespoon hot pepper sauce or water

Steps:

  • Preheat an oven to 425 degrees F (220 degrees C). Grease a 13x9 glass baking dish with the oil, and set aside.
  • Rinse the catfish fillets, and pat dry. In a shallow bowl, combine the cornmeal, creole seasoning, paprika, sugar, and black pepper. Combine the eggs and hot sauce or water in a another bowl. Dip the fillets in the egg mixture, dredge in the cornmeal mixture, and arrange in the baking pan.
  • Bake for 15 minutes, or until cooked through and golden brown. Turn once during cooking. Place catfish on a paper-towel lined plate, and serve immediately with additional hot sauce.
