BAKED CATFISH FILLETS
These are sooo yummy! They taste almost like fried catfish because of the cornmeal, and come out nice and crispy on the outside and soft on the inside. The ranch dressing adds a real zing, too!

Steps:
- Preheat oven to 425 degrees.
- Whisk wet ingredients together in a bowl and combine dry ingredients on a piece of wax paper.
- Spray a glass baking dish with Pam or olive oil.
- Rinse catfish in cool water and DRY THOROUGHLY with paper towels.
- Dip each catfish fillet in wet ingredients and dredge in breading to coat. Just a nice, light covering is enough. Don't try to completely cover in breading.
- Place catfish fillets in glass baking dish & refrigerate for 10 minutes. This step, plus making sure the fillets are very dry before dipping in the egg will help the breading stick to the fish and NOT the pan!
- Bake at 425 for 10 to 12 minutes per side.
- Serve with lemon wedges for garnish.

OVEN BAKED ONION RANCH CATFISH FILLETS
Catfish fillets dipped in a sour cream/mayo/ranch dressing mixture and rolled in french-fried onion rings. This is another recipe I've found on an old yellowed newspaper clipping and am transferring to Zaar.

Steps:
- Combine sour cream, mayonnaise, and ranch dressing mix in a medium-size bowl. Put half of the mixture in a flat dish, reserving the remaining mixture to serve as sauce.
- Finely crush the onion rings and place in another flat dish.
- Dip fillets in sour cream mixture and then roll in crushed onion rings.
- Place fish on an ungreased baking tray and bake at 350 degrees for 20-25 minutes, or until fish flakes easily. Serve with reserved sauce.

SPICY OVEN-BAKED CATFISH
The egg whites keep the moisture in the fish, I strongly suggest to serve this with creamy lemon sauce (recipe below) it is what makes this extra special and the sauce takes only minutes to make, it can be made up to 1 day ahead if desired, using low-fat sour cream for the sauce will reduce the some of the fat content, using fat-free sour cream it will make it almost totally fat-free, although I have never used fat-free sour cream I cannot say it will be okay, you can of coarse use full-fat sour cream if you wish! Adjust the cayenne pepper to taste.

- For the fish; wash the fish fillets under cold water, then pat dry with paper towels.
- In a shallow bowl mix together the dry breadcrumbs with seasoned salt, black pepper, garlic powder and cayenne pepper.
- In a bowl whisk or beat egg whites until foamy.
- Dip the fillets into egg whites, then dredge in the breadcrumb mixture.
- Place the fillets in one layer onto a well-greased wire rack that is set on a large baking sheet.
- Bake at 400 degrees for 20 minutes or until fish is golden brown (do not overbake).
- LEMON CREAM SAUCE; in a bowl mix together one 8-ounce container of sour cream (low-fat is okay) 1-2 tablespoons fresh chopped parsley, 1/2 teaspoon grated lemon rind, 2-3 tablespoons lemon juice and salt and pepper to taste.
- Cover and chill until ready to serve.

My fiancee and I love to fish for catfish and had been trying to come up with an alternative to fried fish. He came up with this FABULOUS baked catfish recipe! It was so yummy I was inspired to share it the same night! We paired it with corn on the cob and greens. If you are looking for a tasty recipe for baked fish, this is it!!

- Preheat oven to 350 degrees F (175 degrees C).
- Season catfish fillets with seasoned salt. Mix orange juice, lemon juice, Dijon mustard, soy sauce, Worcestershire sauce, and hot sauce in a bowl.
- Heat olive oil in large oven-safe skillet over medium-high heat; fry catfish in hot oil until lightly browned, 1 to 2 minutes per side. Spread mustard sauce on both sides of each fillet; drizzle remaining sauce over fish. Arrange bell pepper, onion, and garlic over fish.
- Bake in preheated oven until fish is easily flaked with a fork, 15 to 20 minutes.

CAJUN BAKED CATFISH
I've been making this recipe for years, and it's very good. I believe I clipped this recipe from the Tulsa World Newspaper in the 80's, but don't remember the origin. This is a nice change from fried catfish. You can use any fish, toss in some shrimp, green pepper, celery and fresh tomatoes are also good. Serve with rice. Posted for ZWT5.

- Arrange fish on baking pan sprayed with nonstick cooking spray.
- Sprinkle with lemon juice.
- In small bowl beat egg whites until soft peaks form.
- Fold in sour cream, onion, garlic, mustard and 1/8 teaspoon white pepper.
- Spoon some of mixture on top of each fillet.
- Bake at 375F for 20 minutes or until fish is opaque or skewer glides easily through flesh.
- Meanwhile in small saucepan melt butter.

- Heat oven to 350. Combine sour cream, mayonnaise and ranch dressing mix in bowl. Pour 3/4 cup of mix into a shallow bowl.
- Crush the onion rings in a lg plastic, resealable bag. Place crumbs in a shallow bowl. Dip each fillet into sour cream mix, then into onion rings, coat evenly.
- Lightly spray a 9" x 13" baking pan w/ cooking spray. Place fillets in pan. Bake 20 mins, or until fish flake easily. Serve w/ reserved sour cream mix.
OVEN BAKED ALMOND CRUSTED CATFISH FILLETS
I can't remember where I got this recipe but I've been making it for several years now. This is real easy to make.

- Set oven rack slightly above the middle of the oven and preheat to 500.
- Cut the catfish fillets into serving size pieces.
- Place the milk in a bowl and whisk the egg into it.
- Add the Cajun spice, minced onion and black pepper to the milk/egg mixture.
- In a separate flat dish, mix the bread crumbs and the sliced almonds. Dip the fish pieces into the seasoned egg wash, then coat them with bread crumb/almond mixture.
- Place the coated catfish fillets on a well greased (olive oil or similar oil) flat baking pan.
- Pour the melted butter evenly over the fillets.
- Place the baking pan on rack and bake for 10-12 min or until fish flakes easily. It is better not to over-cook fish.
