Beef eye of round steaks are simmered in a red wine sauce until tender enough to cut with a fork. This is said to be one of former President Ford's favorite recipes.

2 tablespoons vegetable oil
2 large onions, sliced
12 (4 ounce) beef eye of round steaks
¼ teaspoon dried thyme
1 teaspoon seasoned salt
¼ cup all-purpose flour for coating
1 cup beef consomme
1 cup Burgundy wine
1 teaspoon chopped fresh parsley

Steps:

  • Heat the oil in a large skillet over medium-high heat. Add onions; cook and stir until lightly browned and tender, about 5 minutes. Remove the onions from the skillet using a slotted spoon and set aside in a bowl. Season the steaks with thyme and seasoned salt, then dust them lightly with flour. Fry the steaks in the skillet over medium-high heat until browned on each side, about 5 minutes per side.
  • Pour the red wine and beef consomme in with the beef. Return the cooked onions to the pan. Cook over medium-high heat until the aroma of wine dissipates, 2 to 3 minutes. Reduce heat to low, cover, and simmer for 1 hour. Serve steaks with the sauce and a garnish of fresh parsley.

2 tablespoons canola oil
1 can (10-3/4 ounces) condensed golden mushroom soup, undiluted
1-1/4 cups water
1 cup chopped celery
1 cup chopped sweet red pepper
1/2 cup chopped onion
1/4 teaspoon dried thyme
12 small red potatoes

Steps:

  • Cut steak into six pieces; sprinkle with salt and pepper. In an ovenproof Dutch oven, brown meat in oil on both sides. Stir in the soup, water, celery, red pepper, onion and thyme. Cover and bake at 350° for 1 hour., Add potatoes; cover and bake 1-1/2 hours longer or until steak and vegetables are tender.

1 tablespoon olive oil
2 teaspoons kosher salt
1 teaspoon black pepper
½ teaspoon dried thyme
4 cloves garlic, minced
1 (3 pound) beef eye of round roast
½ cup dry red wine (merlot or cabernet sauvignon)
½ cup beef broth
2 tablespoons cold butter, cubed
Reynolds Wrap® Aluminum Foil

Steps:

  • Combine the oil, salt, pepper, thyme and garlic into a paste, then rub all over the roast. Set aside at room temperature for 1 hour. Forty minutes into the hour, pre-heat the oven to 500 degrees F.
  • On a baking sheet, place two sheets of Reynolds Wrap® Aluminum Foil large enough to cover the roast. Place the roast on the foil sheets and transfer everything to the oven. Roast for 6 minutes per pound.
  • Remove from the oven. Fold up the foil so it wraps the roast then return it to the oven. Reduce the oven temperature to 170 degrees F and roast for one hour. After an hour, check the internal temperature with an instant-read thermometer: 120-125 degrees F will yield a rare center, 130-140 degrees F will yield a medium-rare center, and 140-150 degrees F will yield a medium center.
  • When the roast is finished, remove it and set it on a cutting board to rest. Transfer any drippings from the roast into a saucepan, then combine with the red wine and beef broth. Bring to a simmer over med-high heat and reduce by 1/4; reduce heat to medium-low and whisk in the cubes of butter one at a time until incorporated into the sauce. Add salt and pepper to taste and set aside.
  • Slice the roast into 1/2 inch thick slices and serve with the pan sauce poured on top.

6 eye of the round steaks (about 2 pounds) tenderized
1/2 c all purpose flour
1 -1 1/2 Tbsp seasoning blend (recipe follows)
1 large onion quartered
4-5 clove garlic minced or crushed
1 large red bell pepper, cut in thick strips
1 large green bell pepper, cut in thick strips
3-4 medium carrots, peeled & cut up
1 can(s) 4 oz. sliced mushrooms
1 can(s) 6 oz. tomato paste
1 can(s) 14 1/2 oz. diced tomatoes
1 1/2-2 c red wine ( i used merlot)
1 can(s) v-8 low sodium tomato juice 11 1/2 oz size
2 bay leaves
SEASONING SPICE BLEND
1 Tbsp each kosher salt, garlic powder, onion powder,paprika, coarse ground black pepper, & chive
1 tsp each rosemary & thyme

Steps:

  • 1. Preheat oven to 350 degrees F. This is the Cast Iron Pot with LID that I used to cook the Eye of the Round Steaks in. Add the herbs and spices to a small bowl then rub between fingers to blend and mix spices together. I keep this blend ALWAYS MIXED in an empty spice jar FOR EASY AVAILABILITY.
  • 2. TENDERIZE STEAKS WITH MEAT MALLET or have it done in store before you purchase. Season Both sides of steaks with Spice seasoning Blend.
  • 3. Spray pot with non stick cooking spray, add steaks and position evenly in pot, add any remaining excess flour over steaks, will aid in making a thick gravy.
  • 4. Add carrots, onions, garlic mushrooms and Bay leaves.
  • 5. Add canned diced tomatoes, tomato paste, & tomato Juice.
  • 6. Add the Merlot. Cover with Lid and cook in preheated 350 degree oven for 3 hours or till meat is nice and tender.
  • 7. Serve with mashed Potatoes, & your Favorite Crusty Bread. I made Irish Sweet Cake Bread, and everyone was happy.

1/2 cup flour
1 teaspoon salt
1/2 tablespoon black pepper
1 medium onion, sliced and separated into rings
2 large carrots, thinly sliced

1 (14 1/2 ounce) can diced tomatoes, undraind
1 (8 ounce) can tomato sauce
8 ounces water
1 dash Worcestershire sauce
hot mashed potatoes

Steps:

  • Heat oil in large skillet.
  • Combine flour, salt and pepper.
  • Cut steak into 4 or 5 servings; dredge in flour mixture.
  • Brown on both sides in hot oil; remove to large baking dish.
  • Place vegetables over steak; pour tomatoes, tomato sauce, water and Worcestershire over all.
  • Cover and bake at 350 degrees for 1 1/2- 2 hours, or until meat is tender.
  • Serve with sauce spooned over the mashed potatoes.

2.5-3 pound eye of round roast (beef round roast) (, trimmed )
1 tablespoon garlic powder
1 tablespoon ground black pepper
2 tablespoon coarse sea salt
1 teaspoon dried rosemary
1 teaspoon dried thyme
1 tablespoon vegetable or canola oil
1 large yellow onion
2 cups low sodium beef broth

Steps:

  • Remove the eye of round roast from the refrigerator about 30 minutes prior to preparing it and allow it to come to room temperature.
  • Preheat oven to 250°F and pat the roast dry with a paper towel. Cut the yellow onion into a large dice.
  • Combine the garlic powder, pepper, salt, rosemary and thyme in a small bowl. Rub the roast on all sides with the dry rub.
  • Heat oil in a large cast iron skillet over medium heat. When the oil is hot add the seasoned roast to the pan and sear on all sides - about 2 minutes each side. Turn off heat and remove the seared roast from the pan.
  • Add the onion to the bottom of the skillet in an even layer to create a natural roasting rack. Place the seared roast on the onions and pour broth into the pan.
  • Place the roast in the oven to bake at 250°F until the internal temperature reaches 125°F - the cook time will depend on the exact size of the roast so start checking the temperature at regular intervals using an electronic thermometer starting at 1 hour of cooking. It will take on average about 2 hours for a 3 pound eye of round roast to reach an internal temperature of 125°F
  • Remove the roast from the oven and transfer to a cutting board to rest for 15 minutes. Slice into thin slices against the grain. Strain the juice from the cast iron skillet and serve with the thinly sliced beef.

  • Season Your Steak. Pat the round steak dry thoroughly with paper towels for an effective sear. Season the meat liberally with salt and pepper, as well as any other herbs and spices.
  • Prep Your Pan. Put a large cast-iron, stainless steel or other heavy skillet over medium-high heat for several minutes. Add a heavy coating of canola or other cooking oil, swirl it around and let it become shimmering hot.
  • Sear Both Sides. Place the round steak in the skillet and sear one side for about two minutes, letting it develop a crust. Turn it with tongs and sear the second side the same way, then remove the beef from the pan.
  • Add the Liquid. Pour red wine, beer, beef stock, chicken stock, vegetable stock or another braising liquid into the skillet. Use about 2 cups, or enough to come approximately halfway up the sides of the round steak when you put it back in.
  • Add Some Aromatics. Add aromatics, herbs and spices into the pan, if you wish. Mirepoix, a mixture of chopped carrots, onion and celery, is a standard inclusion when braising.
  • Simmer Until Tender. Return the round steak to the skillet and bring the braising liquid to a boil. Reduce the heat to low to simmer and put a lid over the pan.
