SLOW ROASTED SALMON AND POTATOES RECIPE
Tender, flakey slow-roasted salmon and potatoes. An easy dinner, flavored Mediterranean-style with fresh garlic, thyme, rosemary and a splash of lemon juice.

- If you're making the potatoes, start by heating the oven to 450 degrees F. If not, skip to step 5.
- Put the halved potatoes in a large mixing bowl. Season with kosher salt, black pepper, 1 teaspoon fresh thyme and 1 teaspoon dry rosemary. Add 2 teaspoons minced garlic and 2 tablespoons extra virgin olive oil. Toss to make sure the potatoes are well coated.
- Arrange the potatoes, cut side down, on a sheetpan or baking dish. Roast in the heated oven for about 25 minutes.
- Remove the potatoes from the oven and push the potatoes to one side of your pan to make room for the salmon.
- Turn the oven heat down to 250 degrees F. Wait for the heat to lower to this point.
- Brush the bottom of the sheet pan where you made room for the salmon with a bit of extra virgin olive oil. Season the salmon with kosher salt on both sides and put it in the pan next to the potatoes.
- Drizzle about 3 to 4 tablespoons extra virgin olive oil over the salmon fillet. Spread the remaining fresh garlic on top (I use the back of a spoon to spread the garlic evenly all over the fish fillet). Sprinkle the remaining rosemary and fresh thyme.
- Roast the salmon in the 250 degree F heated oven for 15-18 minutes for medium rare, or up to 25 minutes for medium, depending on thickness of fish (insert a fork in the thickest part of the salmon, it should meet no resistance and should flake easily). To be sure, insert an instant read thermometer in the thickest part of the fish, it is ready when the internal temperature registers 125 degrees F for a medium-cooked salmon.
- Squeeze some fresh lemon juice on top of the salmon. Serve immediately.

SALMON WITH ASPARAGUS AND POTATOES
The salmon is roasted alongside the vegetables, then served with a slightly sweet bell-pepper relish.

- Preheat oven to 425 degrees. In a large ovenproof skillet, toss potatoes and asparagus with 2 teaspoons oil to coat; season with salt. Roast 15 minutes (and leave in oven).
- In a small skillet, sprinkle salmon (flat side down) with salt. Transfer pan to oven, next to vegetables; roast until salmon is opaque throughout and vegetables are tender, about 10 minutes.
- Meanwhile, make relish: In a small bowl, whisk together orange zest and juice, vinegar, honey, and remaining teaspoon oil. Stir in bell pepper and mint; season with salt and pepper.
- To serve, spoon vegetables into a shallow serving bowl or plate; top with salmon and relish.
BAKED SALMON STEAK
Something I created myself when trying to figure out what to do with some salmon steaks, spinach, chives, and thyme ended up being very delicious. Serve with sweet potato fries and acorn squash or with your choice of sides.

- Preheat oven to 350 degrees F (175 degrees C). Lightly grease an 8x8-inch baking dish with olive oil.
- Pour 1/4 cup olive oil in a shallow bowl and dip salmon steaks in oil to coat. Stir garlic salt, onion salt, paprika, black pepper, and salt together in a small bowl; sprinkle seasoning onto salmon. Place salmon steaks into the prepared baking dish and sprinkle with chives, thyme, and spinach leaves. Sprinkle Parmesan cheese over the fish and seasonings.
- Bake in the preheated oven until the salmon is cooked through and the flesh flakes easily, about 45 minutes.

ROASTED SALMON WITH RED POTATOES AND DILL
This is one of those great meal ideas for after work. I'm always looking for quick, easy and delicious dinners that combine fresh ingredients in a flash. I believe this originally appeared in Good Housekeeping magazine but have seen it on other cooking sites with no reference.

- Preheat oven to 450°.
- In a 15 1/2" x 10 1/2" jelly roll pan, toss potatoes with oil, salt and pepper. Roast potatoes in oven for 10 minutes.
- After 10 minutes, remove pan from oven. With spatula, push potatoes to one end of the pan to make room for the fish.
- Place fish in pan, sprinkle with 1/2 t. salt. Return to oven and continue roasting with potatoes for 15 minutes or until fish flakes easily and potatoes are brown. At this point, you may need to remove the fish and continue roasting the potatoes until done.
- Transfer fish to a platter, top with horseradish sauce and half of the fresh or dried dill.
- Toss potatoes with remaining dill and serve alongside the salmon.

PAN ROASTED SALMON STEAKS WITH SHERRY VINEGAR-HONEY GLAZE AND SPICY TOMATO RELISH AND PARSLEYED POTATOES

- For the Spicy Tomato Relish: Combine all ingredients in a medium bowl and let rest at room temperature for 30 minutes. For the Salmon: In a small saucepan over high heat, reduce the vinegar to 1/4 cup. In a mixing bowl, combine the vinegar syrup with the mustard, honey and ancho chile powder and season to taste with salt and pepper. Let rest at room temperature for 30 minutes. Heat the tablespoon of oil in a medium saute pan until almost smoking. Brush the salmon on both sides with the glaze. Place in the pan and cook until lightly golden brown. - Scrub potatoes and cut each in half. In a 9- by 13-inch pan, mix potatoes with 2 teaspoons oil, then turn potatoes cut side up.
- Bake in a 425 degree oven for 10 minutes. Turn potatoes cut side down and bake until barely tender when pierced, about 10 minutes longer.
- Meanwhile, with a vegetable peeler, pare peel (orange part only) from orange. Mince peel. In a small bowl, combine peel, remaining 2 teaspoons oil, oregano, cumin, chili powder, chopped cilantro, and pepper.
- Rinse salmon and pat dry. Rub seasoning mixture on cut sides of fish.
- Push potatoes to sides of pan. Set salmon steaks in a single layer in the center of the pan. Bake until salmon is opaque but still moist-looking in the center of the thickest part (cut to test), 8 to 10 minutes.
- As salmon bakes, use a small, sharp knife to cut membrane from orange; discard. Cut between membranes to release fruit segments; discard any seeds.
- Transfer salmon steaks to warm plates, and add equal portions of potatoes. Garnish with orange segments and cilantro sprigs. Add salt to taste.
