6 medium baking potatoes, scrubbed and cut into 1 1/2-inch pieces
1/4 cup butter, melted
1/2 teaspoon salt
1 garlic clove, minced

Steps:

  • Heat oven to 375 degrees.
  • Place potatoes in a 13 x 9-inch baking dish.
  • In small bowl, combine remaining ingredients.
  • Pour mixture over potatoes and toss well.
  • Bake for 55 to 60 minutes or until crisp, lightly browned and tender.
  • Stir twice during baking.

6 potatoes, cut into chunks
2 tablespoons olive oil
1 teaspoon seasoned salt
1 teaspoon salt
1 teaspoon cracked black pepper

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Rinse and dry potatoes with a paper towel and transfer to a large bowl. Add olive oil, seasoned salt, salt, and black pepper; mix well. Spread potatoes on a baking sheet.
  • Bake in preheated oven for 30 minutes, turning potatoes occasionally. Continue baking until potatoes are tender and golden brown, about 30 minutes more.

1 tablespoon minced garlic
½ teaspoon dried basil
½ teaspoon dried marjoram
½ teaspoon dried dill weed
½ teaspoon dried thyme
½ teaspoon dried oregano
½ teaspoon dried parsley
½ teaspoon crushed red pepper flakes
½ teaspoon salt
4 large potatoes, peeled and cubed

Steps:

  • Preheat oven to 475 degrees F (245 degrees C).
  • In a large bowl, combine oil, garlic, basil, marjoram, dill weed, thyme, oregano, parsley, red pepper flakes, and salt. Stir in potatoes until evenly coated. Place potatoes in a single layer on a roasting pan or baking sheet.
  • Roast for 20 to 30 minutes in the preheated oven, turning occasionally to brown on all sides.

4 medium baking potatoes (or red potatoes, 2-3 pounds), cut into 1-inch chunks
4 large carrots, cut into 1-inch chunks (not in original recipe)
1 medium green pepper (I prefer using only red peppers)
1 medium red pepper
1 onion, chopped coarsely (not in original recipe)
4 tablespoons olive oil
1/2 teaspoon salt
1 teaspoon fresh garlic, minced (4 cloves)
1/2 teaspoon pepper, to taste
2 teaspoons fresh rosemary, chopped (I use 1-2 tsp each dried oregano & basil)
4 teaspoons fresh parsley, chopped (I omit)
1/2 cup Romano cheese grated (I omit for dairy-free)

Steps:

  • Serves 4 Preheat oven to 450 degrees. Scrub potatoes & carrots (I leave skin on) and dice into 1-inch pieces. Core and seed peppers and dice into 1/2-inch pieces. Coarsely dice onion. Set aside. Mix olive oil, rosemary or oregano & basil, salt, garlic and pepper in a bowl. In a baking pan, toss potatoes, carrots, onion and peppers with the oil and herb mixture. (I use broiler pan lined with foil) Bake for 30 minutes or until potatoes are fork tender. Sprinkle potatoes with parsley and Romano cheese, if using. NOTE: I roast at 375 degrees for 40 minutes, stirring gently twice during that period.

Full of great earthy rosemary flavor, these roasted potatoes are scrumptious. The olive oil gives the skin a delicious crunchy texture. We loved the added cheesy flavor and zing from the Parmesan. A fantastic side dish for steak, burgers, or chicken.

2 large Russet potatoes
2 Tbsp olive oil, extra virgin
1/2 tsp sea salt
1/2 tsp fresh ground pepper
1 tsp dried rosemary, crumbled
2 Tbsp grated Parmesan cheese

Steps:

  • 1. Preheat oven to 425 degrees. Wash hands thoroughly. Scrub potatoes and cut into 1-inch cubes.
  • 2. Place potatoes in a plastic bag or in a bowl. Add olive oil, salt, pepper, and rosemary and toss well to cover potatoes.
  • 3. Spread potatoes on a baking sheet that's been sprayed with pan spray. Bake in oven for 15-20 minutes or until potatoes are golden brown and are cooked through.
  • 4. Remove from oven, drizzle with a bit more olive oil and season again if needed. Sprinkle with Parmesan cheese before serving.

Steps:

  • Preheat overn to 450 degrees.
  • Wash and dry the potatoes. Cut into wedges and place in a large mixing bowl.
  • Toss the potatoes in oil, melted butter, garlic, rosemary, salt and pepper.
  • Transfer the seasoned potatoes onto a sheet tray [cookie sheet with sides].
  • Roast for 25-30 minutes. Shake pan occasionally for even roasting. [I usually use a spachula to flip them.].
  • Serve immediately.

1 tablespoon fresh parsley (chopped finely OR 1/2 tablespoon dried parsley)
2 teaspoons fresh thyme (chopped finely OR 1 teaspoon dried thyme)
2 teaspoon fresh rosemary (chopped finely OR 1 teaspoon dried rosemary)
½ teaspoon of kosher salt
½ teaspoon ground black pepper

Steps:

  • Clean and cut potatoes in half or quartered, depending on size. You want the potatoes to be close to 1/2 inch cubes as possible.
  • Optional: Add potatoes to bowl of cold water and soak for 30 minutes.
  • Preheat oven to 425°F and line rimmed baking sheet with foil or parchment paper or lightly spray with nonstick cooking spray.
  • Pat potatoes dry with a paper towel and spread evenly on prepared baking sheet.
  • Drizzle the potatoes with olive oil and toss to coat using tongs or your hands.
  • Combine garlic powder, herbs, salt and pepper in a small bowl and sprinkle over the top of potatoes. Toss with your fingers or tongs to coat evenly. Arrange the potatoes so they are in a single layer and nicely space.
  • Bake for 30 to 40 minutes or until potatoes are fork tender, flipping once during roasting. Serve immediately and enjoy!

  • Scrub potatoes and place in a large pot. Fill pot with water until potatoes are covered by 2-3 inches of water. Bring water to a boil and cook for 12-15 minutes or until potatoes are fork tender. My potatoes were fairly large, so this took close to 15 minutes.
  • Meanwhile, partially freeze bacon for easier cutter. (Ten minutes in the freezer works well.) Slice bacon strips in half, then cut into 1/2-inch pieces. I like to cut my bacon prior to cooking. It's easier to work with in the skillet and easy to drain with slotted spoon.
  • Cook bacon in a skillet until golden, but still flexible. You don't want it crunchy. Remove cooked bacon onto a plate lined with paper towels. Reserve the bacon drippings.
  • Check potatoes and if fork tender, drain and allow to cool. If making this recipe again, I would peel the potatoes before I boiled them or try leaving the skins on all-together. Yukon Golds have a relatively thin skin, so I think this would have added a nice look and texture to the potatoes.
