Garlic and Thyme Roasted Chicken With Crispy Drippings Croutons image

This roast chicken recipe puts all of the juices that normally collect at the bottom of the roasting pan (only to be discarded) to gloriously good use. The bird, which is stuffed with garlic, lemon and herbs, is placed on top of a pile of stale bread (all different kinds of breads work, including baguettes, country loaves and even pita) that's been drizzled with olive oil. As the chicken cooks, the juices are absorbed by the bread, resulting in arguably the most delicious jumbo-sized croutons in the history of the world.

Country bread, ciabatta or other sturdy bread, preferably stale, sliced at least 1/2-inch thick
1 tablespoon extra virgin olive oil, more as needed
2 teaspoons kosher salt, more as needed
1/2 teaspoon freshly ground black pepper, more as needed
1 4- to 5-pound chicken, patted dry
1 garlic head, sliced in half horizontally, through the cloves
1 bay leaf
1/2 lemon
1/2 bunch thyme sprigs

Steps:

  • Preheat oven to 425 degrees. Arrange oven rack so that it is in center of oven. Lay bread slices in a thick, heavy-duty metal roasting pan in one layer. (Try not to use a thin or dark colored pan, which may cause bread to burn: see note.) Drizzle liberally with olive oil and sprinkle with salt and pepper.
  • Rub 1 teaspoon salt and 1/4 teaspoon pepper inside cavity of chicken. Stuff cavity with garlic, bay leaf, lemon and thyme. Rub outside of chicken with 1 tablespoon of olive oil and sprinkle all over with remaining salt and pepper. Place it breast side up on bread.
  • Roast chicken until it is deeply browned and juices run clear when thigh is pricked with a knife, about 1 hour 15 minutes. Let rest for 10 minutes before carving. Serve chicken with bread from pan.

1 clove garlic, minced
1 cup dry bread crumbs
⅔ cup grated Parmesan cheese
1 teaspoon dried basil leaves
¼ teaspoon ground black pepper
6 skinless, boneless chicken breast halves

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish.
  • In a bowl, blend the olive oil and garlic. In a separate bowl, mix the bread crumbs, Parmesan cheese, basil, and pepper. Dip each chicken breast in the oil mixture, then in the bread crumb mixture. Arrange the coated chicken breasts in the prepared baking dish, and top with any remaining bread crumb mixture.
  • Bake 30 minutes in the preheated oven, or until chicken is no longer pink and juices run clear.

Oven-Roasted Chicken, With Roasted Garlic and French Bread image

This recipe is fabulous - perfectly roasted whole chicken, with roasted garlic to squeeze right onto the chicken (if you prefer), and crusty french bread, with squeezed garlic. Too-die-for! If you so choose, you can actually skip eating the roasted garlic (unless you are a true garlic-lover, and can't resist :-). Simply cooking the chicken with the garlic in the pan adds incredible flavor to the chicken!. I also sometimes throw in some quartered red potatoes to the pan, which creates amazing roasted garlic potatoes. If I do this, I always sprinkle the potatoes with salt, pepper, and rosemary, too, and sprinkle with olive oil, both at the start of the cooking time, and just before serving (toss well). Makes for a fabulous complete meal!

1 whole chicken
1/2 teaspoon rosemary
1/2 teaspoon thyme
1/2 teaspoon sage
4 heads garlic (in skins)
salt and pepper
4 -6 tablespoons olive oil
1 cup chicken broth
crusty French bread

Steps:

  • Preheat oven to 400.
  • Wash and dry chicken, and remove giblets.
  • Baste (or rub) whole chicken with olive oil.
  • Mix salt and pepper to taste, and all other spices, in small bowl, and then rub over entire chicken (leave a small amount of spice mixture remaining).
  • Put leftover spice mixture, and 4 indiviudal garlic cloves, inside cavity of chicken.
  • Place chicken in large roasting pan (without rack).
  • Take apart remaining garlic bulbs (leaving skins on) and place garlic cloves all around chicken.
  • Pour chicken broth over all.
  • Cover with foil and bake for 1 hour, then remove cover, and bake for 35 to 40 mins, until chicken is browned.
  • Remove chicken from oven and let cool for a few minutes.
  • Carve chicken, while heating up french bread (if you like your bread warmed).
  • Serve chicken pieces and french bread, with roasted garlic cloves.
  • Squeeze roasted garlic (which will squeeze nicely right out of the skins) onto slices of french bread and/or onto chicken pieces, as you eat it (we love to squeeze garlic right onto our chicken, as well as onto the bread).

6 lbs roasting chickens
1 tablespoon fresh rosemary, chopped
8 garlic cloves, crushed
2 medium red onions, quartered
2 heads garlic, whole
2 teaspoons olive oil

Steps:

  • Preheat oven to 450ºF.
  • Remove and discard giblets and neck from chicken.
  • Rinse chicken under cold water; pat dry.
  • Trim excess fat.
  • Starting at neck cavity, loosen skin from breast and drumsticks by inserting fingers and gently pushing fingers between skin and meat.
  • Place rosemary and crushed garlic beneath skin of breast and drumsticks.
  • Lift wing tips up and over back; tuck under chicken.
  • Place chicken, breast side up, on a broiler pan.
  • Cut a thin slice from end of each onion.
  • Remove white papery skins from garlic heads (do not peel or separate cloves).
  • Cut tops off garlic heads, leaving root end intact.
  • Insert meat thermometer into meaty part of thigh, making sure not to touch bone.
  • Bake at 450ºF for 30 minutes.
  • Brush onions and garlic heads with olive oil.
  • Arrange onions and garlic heads around chicken.
  • Reduce oven temperature to 350ºF, bake an additional 1 hour 15 minutes or until meat thermometer registers 180ºF.
  • Cover chicken loosely with foil; let stand 10 minutes.
  • Discard skin from chicken.
  • Squeeze roasted heads of garlic to extract pulp; serve as a spread on French bread, if desired.

Killer roasted chicken infused with garlic and herbs. This has become a family favorite that was inspired by a couple of different garlic chicken recipes (either the garlic was overcooked or the skin was not so good and crisp). Serve it with the baguette to sop up the juices and smear with garlic.

5 heads garlic, cloves seperated and unpeeled
6 -7 lbs chicken, giblets removed
1 package fresh thyme
1 package fresh tarragon
1 lemon, halved
coarse salt, to taste
ground black pepper, to taste
1/3 cup olive oil, plus some for the pan
1 baguette, sliced,for serving

Steps:

  • Preheat oven to 450 F Lightly coat the bottom of your roasting pan with olive oil, place garlic in a single layer and roast for 20 minutes, stirring from time to time.
  • Remove pan from oven.
  • While your garlic is roasting, wash and pat dry the chicken.
  • Loosen the skin around the breasts and place 1/3 of the thyme and tarragon under the skin.
  • Squeeze half of the lemon juice into the cavity then sprinkle coarse salt and pepper inside to season.
  • Place another 1/3 of the herbs inside the cavity; fill the rest of the cavity with as many cloves of garlic as will fit, setting the rest aside.
  • Tie the legs together with cooking twine.
  • Place the chicken in your roasting pan and surround with the remaining herbs.
  • Drizzle skin with olive oil; massage to coat and then sprinkle with coarse salt and pepper.
  • Roast chicken for an hour and 10 minutes.
  • Add remaining garlic to the pan around the chicken and continue roasting for about 20 more minutes.
  • Your total roasting time should be around 1 1/2 hours, until an instant-read thermometer inserted in the thigh reads between 170- 175 F or the thigh juices run clear when pricked.
  • If the chicken is looking too brown (or just brown enough) when you add the garlic for the final 20 minutes, just loosely cover it with foil for the remainder of the cooking time.
  • Transfer the chicken to a cutting board and let rest, covered with foil, for at least 15 minutes.
  • In the meantime skim the fat from the pan juices.
  • Place the chicken on a platter surrounded with roasted garlic cloves, and spilling out from the cavity.
  • Spoon pan juices over the chicken.

After two hours of slow roasting ,the chicken is fragrant and melt-in-the-mouth tender, and the roasted cloves of garlic are a sublime spread on toasted crusty bread. This aromatic provencale dish cooks the garlics to a soft puree that is sweet, nutty and socially acceptable the morning after. My family have been enjoying this for years, and they think I put a lot of work into it. But instead for two hours you can put your feet up!

2 (1 kg) chicken
2 tablespoons olive oil
salt and black pepper
1 lemon, thinly sliced
10 -14 sprigs rosemary, be generous
4 heads garlic
2 tablespoons olive oil
1 cup plain flour

  • WASH and clean the inside cavity of each chicken, and pat dry with absorbent paper.

4 cups unbleached flour
1 1/2 teaspoons salt
1 teaspoon sugar

Steps:

  • Add water to the machine following with the rest of the ingredients as listed. Be sure not to have the salt (place salt in a corner)and yeast touch.
  • Use the french bread setting press start.
  • When the dough cycle has finished remove dough from machine place it on a floured work surface. Punch down divide into 2.
