EASY ROASTED CHICKEN THIGHS

- In a bowl, toss chicken with oil and lemon juice; season with salt and pepper and marinate 1 hour (or up to a day).
- Preheat oven to 375 degrees. Roast chicken, skin-side down, in an oiled roasting pan, 20 to 25 minutes; flip and roast 10 more minutes.
- Stir together mustard and honey and season with salt and pepper. Brush glaze onto chicken and broil 5 minutes.

- Whisk soy sauce, chili sauce, paprika, parsley, and pepper together in a large glass or ceramic bowl. Add chicken thighs and toss to evenly coat. Cover the bowl with plastic wrap and marinate in the refrigerator for up to 1 hour.
- Preheat the oven to 450 degrees F (230 degrees C). Line a baking sheet with parchment paper and place a wire rack on the tray.
- Remove chicken thighs from the marinade and shake off excess; transfer to the prepared rack. Discard the remaining marinade.
- Bake in the preheated oven for 15 minutes. Turn and continue to bake until no longer pink in the centers and juices run clear, 10 to 15 minutes more. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

- Place the chicken in a 13x9-in. baking dish coated with cooking spray. Cover and bake at 350° for 20 minutes., In a bowl, combine the sugar, cornstarch and seasonings. Stir in the pineapple, soy sauce and vinegar until blended. Pour over chicken. Bake, uncovered, 20-30 minutes longer or until a thermometer reads 185°, basting occasionally.

- In a blender or food processor, combine lemon juice and salt, and blend for 5 seconds to dissolve salt. Add scallions, garlic, oil, rum, thyme, brown sugar, chili pepper and spices, and blend until mixture forms a paste.
- Rub chili paste all over chicken pieces. If you have time, let marinate for up to 45 minutes at room temperature, or up to 24 hours in refrigerator.
- Preheat oven to 450 degrees. Put chicken in a large baking pan and scatter pineapple around it in one layer. Roast until chicken is cooked through (juices will run clear when pricked with a fork), about 25 minutes.
- Broil chicken and pineapple until chicken skin is crisp and dark brown all over and pineapple is singed in places.
- Serve chicken and pineapple coated with pan drippings, with lemon wedges.

- Into a food processor or a blender add 1 can of pineapple chunks, chopped habanero peppers, green bell peppers, garlic, onion, and olive oil. Be sure not to over blend the marinade, just pulse for a few seconds.
- . I usually prep my chicken by removing any excess fat and feathers that might be on the chicken that I personally do not want. Some of the fat can stay to keep your chicken moist and juicy. I also like to wash my chicken with lemon juice and water to clean it very well (be sure to thoroughly sanitize your area when you are done) BUT this is a personal preference. If you do not wash your chicken simply skip this step. Place the chicken skin side up then, using a sharp knife, place 2-3 medium sized incisions for the seasoning to penetrate the meat. Place the meat into a bowl then season with chicken bouillon, salt, and pepper.
- Add marinade and browning sauce to the chicken then mix very well. Be sure to carefully rub some of the marinade into the incisions. Allow to marinate overnight or at least 4 hours for the flavors to penetrate the meat.
