ROASTED APPLESAUCE

Roasted Applesauce image

This is without a doubt *the* most fabulous applesauce I have ever had! It's the only apple sauce my kids will eat, The flavor is incredible! So much richer in flavor than apples that have been steamed or simmered in water. I have actually used whatever apples I happen to have in hand. Even those that are looking tired and not so crisp any more. Great with any pork or chicken entree.

  • Place the apples in a 7 quart Dutch oven and bake until the apples get squishy and practically fall apart when you squeeze or toss them around with a spoon. This could take anywhere from 1 to 3 hours, depending on the size of your apples, the variety of apples that you used and how much you stuffed into that Dutch Oven.
  • Once the apples are fully cooked, let them cool for a few minutes and process them in a food mill. Alternately, if you didn't have a food mill, you could transfer the cooked apples into a colander (make sure to place that colander over a large bowl, to collect the applesauce) and then force the apples down the holes with the potato masher.
