3 to 4 pounds country-style pork ribs
1-1/2 cups water
1 cup ketchup
1/3 cup Worcestershire sauce
1 teaspoon salt
1 teaspoon chili powder
1/2 teaspoon onion powder
1/8 teaspoon hot pepper sauce

Steps:

  • Place ribs in a greased roasting pan. Bake, uncovered, at 350° for 45 minutes. Meanwhile, in a saucepan, combine the remaining ingredients. Bring to a boil; cook for 1 minute. Drain ribs. Spoon sauce over ribs. Cover and bake for 1-1/2 hours. Uncover; bake 30 minutes longer, basting once.

  • Cut ribs into serving-size pieces; place on a rack in a shallow roasting pan. Bake, uncovered, at 350° for 30 minutes., Meanwhile, in a large saucepan, combine the remaining ingredients. 2 tsp garlic powder ((sub with onion powder))
1.5 tsp onion powder ((sub with garlic powder))

2 - 2.5kg / 4 - 5lb pork ribs (2 racks)
3/4 cup sweet alcoholic apple cider (hard cider) (, or apple juice (Note 2))
1 tbsp olive oil
1/2 cup apple cider vinegar ((Note 3))
1 1/2 cups tomato ketchup ((or Aussie tomato sauce))
1/2 cup water ((or use remaining apple cider!))
1 1/2 tbsp molasses (, orginal (not blackstrap, Note 4))
1/3 cup brown sugar
2 tsp mustard powder
1 1/2 tsp garlic powder
2 tsp Worcestershire sauce

Steps:

  • Combine the Rub ingredients and rub onto both sides of the ribs (most on meaty side). Set aside to marinate for 20 minutes (or overnight).
  • Preheat oven to 160°C/320°F (all oven types).
  • Place ribs on a tray in a single layer. Pour apple cider underneath the ribs, cover with foil then bake for 1 hour 30 minutes or until the meat is pretty tender (Note 5).
  • Remove from oven, turn up to 180°C/350°F. Remove foil, drizzle with olive oil, then return ribs to oven for 15 minutes or until rub becomes nice and crusty.
  • Line a new tray with foil then baking / parchment paper (you'll thank me later).
  • Remove ribs from oven, transfer to lined tray. Pour any juices from tray over the ribs.
  • Flip ribs so the bonier side is up. Slather with Barbecue Sauce, then bake 10 minutes.
  • Remove from oven, then turn ribs over so the meaty side is up. Slather with Barbecue Sauce, bake 5 minutes. Repeat 2 or 3 more times until you've got a thick glaze on the ribs.
  • Cut ribs into individual or multiple rib portions and serve with remaining Barbcue Sauce!

2 cups ketchup
2 cups water
4 teaspoons salt
¼ cup Worcestershire sauce
½ cup white vinegar
½ cup dark brown sugar
4 teaspoons dry mustard
4 pounds pork spareribs

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, combine onions, ketchup, water, salt, Worcestershire sauce, vinegar, brown sugar, and mustard. Split ribs down the center between the bones.
  • Heat a large lightly oiled skillet over medium-high heat. Add ribs and sear until browned. This may have to be done in several batches.
  • Place ribs in a single layer in two baking pans or casserole dishes. Pour half of the sauce over the ribs, reserve remainder.

1 4-pound slab baby back ribs
1 cup mayonnaise

Steps:

  • Preheat oven to 325 degrees. In a bowl combine all ingredients except ribs to make a sauce; season with salt and pepper. On a rack set in a roasting pan season ribs with salt and pepper and brush with a thick layer of sauce. Roast ribs, basting every 30 minutes, until tender and falling off the bone, about 1 1/2 hours. Slice into individual ribs before serving with potato salad.
  • In a bowl, stir together mayonnaise with cilantro, garlic, salt and 7 turns black pepper. Add potatoes and onions and toss to combine thoroughly; cover and refrigerate up to 24 hours before serving.

3 -4 lbs country-style boneless pork ribs
1 teaspoon salt
1 (455 ml) bottle barbecue sauce (the secret to my success is the barbecue sauce that I use. It is made by a certain Tennessee Whiskey)

Steps:

  • Bring water to a boil.
  • Add ribs, one by one; add salt.
  • Boil for about 1 hour, making sure the pot doesn't froth over too much! (When I do that, the next time I turn on my stove it smokes and it is stinky!)
  • Preheat oven to 350 degrees Fahrenheit.
  • Remove ribs from water.
  • Place ribs in a 9 by 4 inch glass baking pan.
  • Pour the barbecue sauce evenly over the ribs.
  • Bake for 20 to 30 minutes.

7 -8 lbs country-style pork ribs, trimmed of excess fat
1 cup flour
1 tablespoon paprika
1 -2 teaspoon garlic, minced
1/4 teaspoon pepper
2 cups chili sauce
1/2 cup chopped onion
2 tablespoons brown sugar
2 tablespoons cider vinegar
2 teaspoons prepared mustard
6 -8 dashes hot pepper sauce, to taste
4 -6 dashes Worcestershire sauce, to taste

Steps:

  • Preheat oven to 325°F.
  • Combine flour, paprika, garlic and pepper in large plastic bag.
  • Add ribs to bag in batches, if necessary, coating well.
  • Arrange ribs in roasting pan (large enough to fit ribs in single layer).
  • Bake for 1 1/2 hours or until ribs are browned.
  • Remove from oven and let cool while mixing sauce.
  • Combine chili sauce, onion, sugar, vinegar, mustard, hot pepper sauce and Worcestershire sauce in medium saucepan.
  • Bring to boil over medium-high heat.
  • Reduce to low and simmer 15 minutes.
  • While sauce is cooking prepare barbecue.
  • Remove sauce from heat and pour over ribs, turning to coat.
  • Grill ribs, basting with sauce, for 15 minutes per side or until ribs are done.
  • Cut ribs into serving pieces.

Low and slow cooking make these oven-baked ribs fall off the bone tender. Once baked, we like to add our sweet and spicy barbecue sauce to the ribs, but use whatever you love. For the most tender ribs, we remove the thin membrane covering the back of the rack. Depending on where you have purchased ribs, this may already be done for you. If not, instructions are in the notes section below. FAQ: We call for baby back ribs in the recipe, but other types of ribs (spareribs, country-style, St. Louis-style) will work with this recipe. Cook time should be similar, we recommend that you check on the ribs while they cook to see how they are progressing. FAQ: Doubling or tripling the recipe below should not change the recipe method or bake time. You might need to use two pans for baking.

2 to 2 1/2 pounds baby back pork ribs
Salt and black pepper
1 tablespoon olive oil
1/4 cup finely diced onion
1/2 teaspoon ground cumin
1/2 cup ketchup, try our homemade ketchup recipe
1 tablespoon hot chili sauce (suggestion Sriracha)
2 tablespoons light brown sugar
1 tablespoon apple cider vinegar
Salt and ground pepper, to taste

Steps:

  • Heat oven to 275° Fahrenheit (135C).
  • If the ribs still have the thin membrane covering the back of the rack, remove it. See how in the notes section below.
  • Season both sides of the ribs with a generous amount of salt and pepper. If you are using a spice rub, add season the ribs with it now. Place the ribs, meat-side up, into a large roasting pan or rimmed baking sheet. (It may be necessary to cut the ribs in half for them to fit into the pan).
  • Cover the pan or baking sheet tightly with aluminum foil, and then bake until the meat falls easily from the bones, 2 ½ to 3 ½ hours. We like to check the ribs after 2 hours to see how they are progressing. The ribs are done when the meat is cooked through and tender.
  • While the ribs bake, make the barbecue sauce. Heat the olive oil in a saucepan over medium heat.
  • Add the onions and cook until soft and translucent, 5 to 8 minutes. Stir in the cumin and cook for an additional 30 seconds.
  • Add the ketchup, hot chili sauce, brown sugar, and apple cider vinegar. Stir to combine, season with salt then cook for 2 minutes. Set aside in preparation for the ribs to finish roasting.
  • Remove the ribs from the oven, discard the aluminum foil and generously brush both sides with barbecue sauce.
  • Optional: Move an oven rack near the top of the oven. Turn broiler to high and broil the ribs for 3-4 minutes, just until the barbecue sauce begins to caramelize. (Keep a close eye on the ribs while they broil so the sauce does not burn.)
  • Store baked ribs, in an airtight container, in the refrigerator for up to 3 days. Freeze, wrapped in foil or freezer paper and in an airtight container, for up to 3 months. Thaw in the refrigerator, and then reheat.
  • To reheat the ribs, wrap in foil or parchment paper and place into a 300°F oven until warmed through, about 30 minutes. If you have some leftover, slather some extra sauce that's been warmed over the ribs before serving.

This is an award-winning recipe for St. Louis Spare Ribs from Historic BBQ. I'm going to walk you through every step of the process. It takes a while - but deliciousness takes time!

1 rack of St Louis Spare Ribs
1 jar Historic BBQ Red Rub Seasoning (or your favorite pork barbecue seasoning rub)
1 bottle Historic BBQ Sweet Zing (or your favorite sweet & spicy sauce)
1/2 cup apple juice
1 stick butter
1/2 cup brown sugar
1/4 cup honey

Steps:

  • 1. Start by finding the tallest bone, normally the 4th one in and cut straight across to remove any extra cartilage
  • 2. Remove the flap of meat on the backside of the ribs - it will prevent the ribs from cooking evenly.
  • 3. Trim off the first bone of the thick end and any ribs on the thin end that are too thin. This should leave you with 10 bones.
  • 4. Remove the membrane from the underside of the ribs. The easiest way to do this is to bend the rack of ribs over one hand and use a paper towel to pull the membrane off with the other hand. The ribs should be COLD at this point - if they're warmed up at all - please put back in the fridge. This helps make it easier to pull off.
  • 5. If there is any excess fat between the bones use a spoon to gently remove it, being careful not to scrape the bones.
  • 6. On the front side of the ribs remove any large deposits of fat and silverskin with a boning knife.
  • 7. Season both sides generously with Historic Red
  • 8. Line a rimmed cookie sheet with foil and place an oven-safe cooling rack on the cookie sheet. Lay the ribs, meat side up on the rack. Put the ribs in the oven at 300.
  • 9. Check the ribs every 30 minutes, spritz with apple juice if they look dry.
  • 10. After 2.5 hours - it's time to wrap the ribs! On a sheet of foil, put down 1/2 stick of butter (sliced), a line of honey and 1/2 the brown sugar. Lay the ribs meat down on the foil, then repeat the process on the back side. Tightly wrap the ribs in foil and add apple juice before sealing.
  • 11. Remove the cooling rack from the cookie sheet and place the wrapped ribs on the sheet.
  • 12. Bake in the oven at 300 for an additional 2-2.5 hours.
  • 13. The ribs are done with a toothpick or thermometer goes into the meat with no resistance.
  • 14. Unwrap the ribs and sauce with History Sweet Zing.
  • 15. Return to the oven on Low Broil for 3-5 minutes - watch closesly!
