MOM'S OVEN-BARBECUED RIBS
My mom made these tender ribs for special Sunday suppers when we were growing up. A few common ingredients are all you need to make the zesty sauce that coats them. Steps:
- Place ribs in a greased roasting pan. Bake, uncovered, at 350° for 45 minutes. Meanwhile, in a saucepan, combine the remaining ingredients. Bring to a boil; cook for 1 minute. Drain ribs. Spoon sauce over ribs. Cover and bake for 1-1/2 hours. Uncover; bake 30 minutes longer, basting once.

HOT OVEN BARBECUED RIBS
This is an adopted recipe from Mean Chef. I have since tried this recipe, I have found that it does have a little bit of a bite to it with a very nice lemon after taste. If I were to make it again I would cut down on the hot sauce just a little. My DH thought it was a bit to hot, but to me it just had a bite. The ribs turned out perfectly tender. I also squeezed my lemons in a bowl then added to the blender, so I would not get any seeds in there. I also mixed my, Salt, black pepper and red pepper flakes together before putting on my ribs. In the very end of cooking I also put them under the broiler just for a minute or so.

Steps:
- Squeeze juice from lemons into blender or food processor.
- Slice lemon rinds and set aside.
- Add green pepper, onion and celery to blender and puree.
- Transfer mixture to 3-quart saucepan.
- Stir in tomato puree, sugar, hot sauce, red pepper flakes and reserved lemon rinds.
- Simmer covered for 20 minutes.
- Discard rinds (Can be refrigerated for 2 weeks).
- Rub ribs with salt, black pepper, and red pepper flakes in a large glass-baking dish.
- Pour vinegar over ribs.
- Refrigerate covered at least 4 hours or overnight.
- Remove ribs from marinade and place in a shallow roasting pan.
- Roast at 350°F for 1½ hours.
- Increase oven temperature to 400°F.
- Roast for 30 minutes.
- During last 15 minutes of cooking, baste with 2 cups of the barbecue sauce.
MOUTH-WATERING OVEN BARBECUED RIBS
These oven barbecued ribs are a compilation of several different recipes and techniques. They are so good they can even hold their own against charcoal barbecued ribs! Smoked hot paprika is HOT, so beware. Since you won't use all of the rub or eat all of the sauce, the sodium count per serving is actually lower than what is printed.

- Bring ribs to room temperature and wipe clean with damp paper towels.
- Pat dry.
- Preheat oven to 325°F.
- Mix together the rub ingredients and sprinkle over both sides of ribs, rubbing in the mixture as you go (you will have some rub left over).
- Bake the ribs covered for 2 1/2 to 3 hours, and mix together the barbecue sauce, letting it stand while ribs are cooking.
- Remove ribs from the oven and raise oven temperature to 375°F.
- Slather the ribs with barbecue sauce mixture and cook for 30 minutes longer, uncovered.
- Baste with sauce at least once during this cooking period.
- Serve remaining sauce on the side.
- Sauce and rub may be doubled for 4 pounds of ribs.

- Preheat oven to 300 degree F (150 degrees C).
- Cut each full rack of ribs in half, so that you have 4 half racks. Sprinkle salt and pepper (more pepper than salt), and 1 tablespoon chile pepper over meat. Wrap each half rack in aluminum foil. Bake for 2 1/2 hours.
- Meanwhile, heat oil in a medium saucepan over medium heat. Cook and stir the onions in oil for 5 minutes. Stir in water, tomato paste, vinegar, brown sugar, honey, and Worcestershire sauce. Season with 2 teaspoons salt, 1/4 teaspoon black pepper, liquid smoke, whiskey, garlic powder, paprika, onion powder, dark molasses, and 1/2 tablespoon ground chile pepper. Bring mixture to a boil, then reduce heat. Simmer for 1 1/4 hours, uncovered, or until sauce thickens. Remove from heat, and set sauce aside.
- Preheat an outdoor grill for high heat.
- Remove the ribs from the oven, and let stand 10 minutes. Remove the racks from the foil, and place on the grill. Grill the ribs for 3 to 4 minutes on each side. Brush sauce on the ribs while they're grilling, just before you serve them (adding it too early will burn it).

- Preheat oven to 350 degrees F (175 degrees C).
- In a large bowl, combine onions, ketchup, water, salt, Worcestershire sauce, vinegar, brown sugar, and mustard. Split ribs down the center between the bones.
- Heat a large lightly oiled skillet over medium-high heat. Add ribs and sear until browned. This may have to be done in several batches.
- Place ribs in a single layer in two baking pans or casserole dishes. Pour half of the sauce over the ribs, reserve remainder.
- Bake ribs in preheated oven for 3 hours. Turn and baste meat every twenty minutes with remaining sauce, using all sauce by two hours. Continue turning and basting ribs using sauce in the pan during the last hour of baking.
