BAKED GREEN BEAN FRIES
Steps:
- Preheat the oven to 425 degrees F.
- Spray a large baking pan with cooking spray.
- Mix the panko, Parmesan, onion powder, cayenne and 1/2 teaspoon salt together in a wide, shallow bowl. Whisk the eggs and milk together in another shallow bowl.
- Toss the green beans in the flour. Working a few green beans at a time, shake off the excess flour and dip in the egg. Let the excess egg drip off and then toss in the panko, patting firmly so the crumbs adhere. Arrange the breaded green beans in a single layer in the prepared baking pan and spray thoroughly with cooking spray.
- Bake until golden brown and crisp-tender, about 10 minutes.

PAN FRIED GREEN BEANS
These green beans were the side dish my grandmother served most often because we all love them. They are done but not mushy like canned beans.

Steps:
- In a stainless steel pot over medium-high heat, combine green beans, garlic powder, onion powder, salt and pepper. Cook, covered, until the beans begin to sweat. Remove lid and stir occasionally until beans are tender.
- When the beans and spices have begun to 'burn' on the bottom of the pan, which will lend a grilled flavor, stir in the olive oil and turn off heat. Cover, and let stand a few minutes. Scrape the bottom of the pan to incorporate the 'burnt' spices. Beans should have a dark, caramel color, but not black.

Steps:
- Preheat oven to 425°F with oven rack 6 inches from heat. Stir together mustard, thyme, rosemary, pepper, and 1 1⁄2 teaspoons of the salt in a small bowl. Reserve 2 teaspoons of the mixture.
- Stir together panko, 2 tablespoons of the oil, and 1 teaspoon of the salt in a shallow dish. Rub pork chops with mustard mixture, and dredge 1 side of pork in panko mixture, pressing to adhere. Place pork on a baking sheet lined with aluminum foil, with dredged side facing up.
- Toss together potatoes, shallots, 1 1⁄2 tablespoons of the oil, and remaining 1⁄2 teaspoon salt in a bowl. Arrange potato mixture around pork chops. Bake in preheated oven until a thermometer inserted in thickest portion of pork registers 118°F, 18 to 20 minutes.
- Increase oven temperature to broil. Toss haricots verts with 1 tablespoon of the oil, and scatter around pork chops. Broil until pork registers 135°F and vegetables are tender, about 5 minutes. Let pork rest 10 minutes (internal temperature will increase to 145°F). Whisk together vinegar, reserved 2 teaspoons mustard mixture, and remaining 2 tablespoons oil; drizzle over vegetables.

- PREPARE BEANS: Boil salted water in a skillet or small wok. Add beans and cook on medium-high for 2-3 minutes until tender or al dente (as you prefer). If your beans are thicker, they will take a bit longer to cook. While beans are cooking, get a bowl ready, half filled with ice and water. Note 1. Drain beans and plunge immediately into the ice water. This stops the cooking process and maintains their bright green colour. Let beans sit in ice water for a few minutes to completely cool down. Drain and pat dry with paper towels. Return them to skillet/wok. Add 2 tablespoons of lemon garlic mixture and toss to coat evenly. Add salt and pepper to taste.
- MAKE PANKO TOPPING: In small skillet, add Panko crumbs. Heat to medium-high and shake pan over heat 3-4 minutes until light golden brown. Add remaining lemon-garlic mixture. Stir to coat crumbs for 30-60 seconds.
- ASSEMBLE AND SERVE: If desired, warm beans on medium high on the stove for 1-2 minutes. Otherwise, leave at room temperature. Transfer beans to a platter or serving bowl. Squeeze some lemon juice over beans if you like. Sprinkle Panko topping over top, Serve with lemon wedges.
