CRISPY OVEN-FRIED PORK CHOPS



Crispy Oven-Fried Pork Chops image

Although it has been slightly modified, this recipe comes from the Quick & Easy Meals 2010 Cooking with Paula Dean cookbook.

2 egg whites
2 teaspoons cornstarch
1 1/2 cups panko breadcrumbs
2/3 cup pecans, finely chopped
1 teaspoon salt
1/2 teaspoon dried rosemary, crushed
1/2 teaspoon rubbed sage
4 pork loin chops, boneless, 1-inch thick
1/4 cup olive oil

Steps:

  • Preheat oven to 400 degrees F.
  • In a shallow dish, whisk together the egg whites & cornstarch until smooth.
  • In a shallow dish, whisk together the bread crumbs (panko), pecans, salt, rosemary & sage.
  • Dip chops in egg white mixture to coat & then dredge each in the bread crumb mixture, pressing bread crumbs gently to adhere.
  • In an oven proof skillet, heat oil over medium heat, then add chops & cook for 3 or 4 minutes per side.
  • Place skillet in oven & bake for 10 to 12 minutes or until pork is cooked through.

4 pork chops, trimmed
2 tablespoons butter, melted
1 egg, beaten
2 tablespoons milk
¼ teaspoon black pepper
1 cup herb-seasoned dry bread stuffing mix

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Pour butter into a 9x13 inch baking pan.
  • Stir together egg, milk and pepper. Dip pork chops in egg mixture, coat with stuffing mix and place in pan.
  • Bake in preheated oven for 10 minutes. Turn chops and bake for another 10 minutes, or until no pink remains in the meat and juices run clear.

4 each boneless pork chops, 1/2-inch thick
1 pinch salt and ground black pepper to taste
1 egg
⅓ cup grated Parmesan cheese
⅓ cup almond flour
½ teaspoon salt
¼ teaspoon pepper
¼ teaspoon garlic powder
1 serving avocado oil cooking spray

Steps:

  • Season pork chops with salt and pepper on both sides.
  • Beat egg in a medium bowl. Mix Parmesan cheese, almond flour, 1/2 teaspoon salt, 1/4 teaspoon pepper, and garlic powder together in a second bowl.
  • Dip each pork chop in egg, then in Parmesan-flour mixture to coat. Place in the air fryer basket and spritz with avocado oil.
  • Cook in an air fryer at 375 degrees F (190 degrees C) until lightly browned, 8 to 10 minutes. Flip pork chops over, spritz with avocado oil and cook until pork is no longer pink in the center, 3 to 4 minutes more.

4 pork chops
2 tablespoons butter, melted
1 egg, beaten
2 tablespoons milk
1/4 teaspoon pepper
1 cup herb seasoned stuffing mix or 1 cup herbed breadcrumbs

Steps:

  • Trim the fat from the meat.
  • Pour butter into a 13x9x2 inch baking pan.
  • Combine eggs, milk, and pepper.
  • Dip the pork chops into the egg mixture.
  • Coat with stuffing mix or bread crumbs.
  • Place pork chops in the pan.
  • Bake in a 425 degree oven for 10 minutes. Turn chops. Bake about 10 minutes more or till no pink remains and juices run clear.

  • Place the pork rinds in a 1-gallon Ziploc bag. Use a meat pounder or a rolling pin to crush them into tiny crumbs, similar to Panko. You can also crush the pork rinds in a food processor. Set the crushed pork rinds aside.
  • Use a pastry brush or your hands to coat both sides of the pork chops with mustard. Sprinkle them with kosher salt, black pepper, and garlic powder.
  • Place about 2 heaping tablespoons of the crushed pork rinds on a plate. Dip one pork chop into the pork rinds and press to coat on both sides. Repeat with the remaining pork chops. You can also do as I do in the video and sprinkle all the pork chops with the "breadcrumbs" on one side, press to adhere, then turn them to the other side (place them on a new, clean plate) and repeat.
  • Coat a nonstick double burner griddle with olive oil and heat it over medium-high heat, 2-3 minutes. Add the coated pork chops.
