CUBE STEAKS BAKED IN GRAVY
After looking over all the cube steak recipes this is what I came up with. My family loved these and now they want cube steaks at least once a week!! Fork tender you don't need a knife for these! Mashed potatoes go well with these.

Steps:
- Brown the cube steaks in 1 tablespoon butter, until browned on both sides.
- Transfer the browned cube steaks to a covered casserole dish.
- Saute the onions and Mushrooms in remaining tablespoon butter until softened about 5-6 minutes.
- Place the mushroom/onion mixture over the browned cube steaks in casserole dish.
- Mix the soups until well combined, add the minced garlic, Worcestershire sauce, kitchen bouquet stirring until well combined.
- Pour mixture over cube steaks and mushroom onion mixture.
- Place in preheated 350°F oven, covered and bake for 2 hours.
CUBE STEAK PARMESAN
This is a great Italian style way to prepare beef or venison cube steaks. Double the ingredients for a crowd!

- Preheat the oven to 350 degrees F (175 degrees C). In a shallow dish, stir together the flour, salt and pepper. In a separate bowl, whisk together the eggs and water with a fork. In a third bowl, or shallow dish, mix together the cracker crumbs, 1/3 cup of Parmesan cheese and basil.
- Heat the oil in a large skillet over medium heat. Dredge the cube steaks in the seasoned flour, dip into the egg mixture, and coat with the cracker crumb mixture. Place them in the skillet, and fry just until browned on each side. Arrange steaks in a single layer in a greased casserole dish.
- Bake for 25 minutes in the preheated oven. Meanwhile, in a medium bowl, stir together the tomato sauce, sugar, 1/4 teaspoon of oregano, and garlic powder. Spoon over steaks when the 25 minutes are up. Top each steak with mozzarella cheese and remaining Parmesan cheese; sprinkle remaining oregano over the top. Bake for 5 more minutes, or until the cheese is melted, and the sauce is hot.

- In a shallow bowl, combine 2 cups flour and seasonings; set aside. In another bowl, combine buttermilk and evaporated milk. Remove 3-1/2 cups for gravy and set aside. Dip cube steaks into buttermilk mixture, then into flour mixture, coating well. Repeat. , In a skillet, heat 1/2 in. of oil on high. Fry steaks, a few at a time, for 5-7 minutes. Turn carefully and cook 5 minutes longer or until coating is crisp and met is no longer pink. Remove steaks and keep warm. , Drain, reserving 1/3 cup drippings in the skillet; stir remaining flour into drippings until smooth. Cook and stir over medium heat for 5 minutes or until golden brown. Whisk in reserved buttermilk mixture; bring to a boil. Cook and stir for 2 minutes. Add Worcestershire sauce and pepper sauce. Serve with steaks.

Chicken fried steak is some serious comfort food but it can come with lots of extra calories when it is pan fried in oil. Try this oven-baked version that cuts the fat down considerably yet maintains a great texture and flavor.

- Preheat the oven to 400 degrees F. Lightly grease a rimmed baking sheet. Place the round steaks between two sheets of waxed paper and pound to 1/8-inch thick using a meat mallet or rolling pin. Set aside. In a shallow dish, combine the flour, seasoned salt, and bread crumbs. Mix well. In another shallow dish, whisk together the egg whites and milk. Dip each piece of steak in the bread crumbs, coating well and pressing the crumbs on so they adhere. Then dip the meat in the egg mixture, coating completely and letting any excess liquid drip off. Then, again, dip the meat into the crumbs and coat well. Place the coated steaks on the baking sheet. Spritz with non-stick cooking spray or olive oil. Place the baking sheet in the oven and bake at 400 degrees F for 10 minutes. Turn the steaks over and spray again with cooking spray. Bake for 10-12 more minutes, or until the coating is crisp and lightly browned. While the chicken fried steak is in the oven, place the gravy in a microwave safe dish and microwave for 2 minutes, or until heated. To serve, place one steak on each plate and top with about 1/4 cup of gravy. Serve hot.

- 1. Preheat oven to 350. Heat olive oil in large (cast iron works best) skillet on med-med/high heat.
- 2. Mix flour, salt & pepper (I prefer fresh ground) in pie plate.
- 3. Dredge cubed steaks in flour mixture.
- 4. Brown steaks maybe 5 min. per side.
- 5. Turning over a few times.
- 6. Place cooked cubed steaks in a deep casserole dish. Drain oil from skillet, reserving steak/flour residue.
- 7. Mix soup mix with 2 cups water in a bowl.
- 8. Pour water into cast iron skillet.
- 9. Turn heat higher whisking to loosen browned bits in skillet. I sometimes add some of the leftover flour at this time... mixture does not need to be thick as it thickens in the oven.
- 10. Pour this mixture over cubed steaks.
- 11. Bake, uncovered, for 1 hour.
- 12. Makes its own gravy & cubed steaks are so tender, you won't need a knife!
OVEN FRIED DEER/BEEF CUBED STEAK
You can judge the amount of ranch dressing and Bisquick mix according to how many pieces of cubed steak you are cooking. When cooked this looks just like fried steak and its so delicious!

- 1. Lightly season each side of cubed steak. Spray metal baking pan well with spray Pam to avoid meat from sticking to pan.
- 2. In two separate bowls, one with ranch dressing and one with Bisquick mix. Take one piece of meat at a time first coat each side well in ranch dressing. Then roll side to side in Bisquick. Immediately place on metal pan. Separating each piece.
- 3. Lastly, top each piece with Squeezed Parkay Butter. Bake uncovered in oven @ 375 degrees for 45 minutes.

FRIED CUBE STEAK

- Heat oil in a large pan over medium heat.
- Mix together flour, seasoned salt, and pepper in a large shallow plate.
- Sprinkle both sides of the meat with salt and pepper.
- Dunk both sides of each piece of meat into the flour mixture, until well coated.
- Add butter to pan right before frying. Once melted, add the meat and cook. Flip when sides are deep golden brown and cook about 1 minute on the other side. Remove to a paper towel-lined plate. Serve immediately.
