Chicken fried in the oven. Less oil and soooo delicious! Goes great with sides or on a bun.

5 large skinless, boneless chicken breast, halved lengthwise
¾ cup vegetable oil, divided
¼ cup white vinegar
2 tablespoons salt, divided
1 tablespoon garlic powder, divided
2 teaspoons cayenne pepper, divided
¾ cup all-purpose flour
½ cup shredded Cheddar cheese
2 tablespoons chopped fresh chives

Steps:

  • Mix chicken, 1/4 cup vegetable oil, vinegar, 1 tablespoon salt, 1 1/2 teaspoon garlic powder, and 1 teaspoon cayenne pepper together in a large bowl. Cover with plastic wrap; place in the refrigerator.
  • Preheat oven to 400 degrees F (200 degrees C).
  • Pour remaining 1/2 cup vegetable oil into a shallow baking pan; place in the preheating oven for 20 minutes.
  • Mix remaining 1 tablespoon salt, 1 1/2 teaspoon garlic powder, 1 teaspoon cayenne pepper, and flour together in a shallow bowl. Spread out evenly in the bowl.
  • Remove baking pan from the oven. Dredge chicken in the flour mixture, one piece at a time, and gently place into the hot oil.
  • Bake chicken in the preheated oven, turning once halfway through, until golden brown, about 30 minutes.
  • Top chicken with Cheddar cheese and chives.

I'm too lazy to fry chicken the traditional way. I've experimented with chili powder, Greek seasoning etc. in place of the paprika or poultry seasoning. Try what you like.

1/4 cup Butter Flavor Crisco
1 cup flour
2 teaspoons paprika or 2 teaspoons poultry seasoning
1 teaspoon salt
1/2 teaspoon pepper
4 skin-on bone-in chicken breasts

Steps:

  • Heat oven to 425 degrees.
  • Melt Crisco in a 13" x 9" baking pan.
  • Combine flour, paprika, salt and pepper in a bag.
  • Shake chicken pieces, one at a time, in bag to coat with flour mixture.
  • Place chicken skin side down in baking pan.
  • Bake, uncovered, 30 minutes.
  • Turn chicken.
  • Bake 30 minutes longer.

2 cups low fat sour cream
4 cloves garlic, minced
6 chicken drumsticks
6 bone-in chicken breast halves, with skin
4 cups crushed cornflakes cereal
4 tablespoons crushed dried rosemary
3 teaspoons dried sage
3 tablespoons garlic powder
salt and pepper to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Place a cooling rack on top of a large cookie sheet. Spray the rack with vegetable cooking spray.
  • In a medium bowl, mix together sour cream and minced garlic. In another bowl, stir together the cornflake crumbs, rosemary, sage, garlic powder, salt and pepper. Coat the chicken with the sour cream mixture, then roll in the cornflake mixture. Arrange chicken pieces on top of the cooling rack.
  • Bake for 1 hour in the preheated oven, until meat is no longer pink, and juices run clear.

I like to par boil the potatoes and place them in the baking pan along with the chicken. They can easily be butter tossed and seasoned after they roast. Also, I have found that 1/2 a cup of bread crumbs isn't enough to well cover 4 breasts.

4 boneless skinless chicken breasts
1/2 cup breadcrumbs
1 teaspoon salt
1/2 teaspoon paprika
1/8 teaspoon salt
1/8 teaspoon ground black pepper
2 eggs, beaten
1 lb small red potato
1 tablespoon butter

Steps:

  • Heat oven to 375°F.
  • Place chicken breasts between layers of plastic wrap or waxed paper; pound to 1/2-inch thick and set aside.
  • In a shallow dish, combine bread crumbs, salt and paprika on a plate.
  • Season chicken breasts with salt and pepper; dip into beaten egg, then coat with bread crumb mixture.
  • Place in an oven-proof dish and bake until lightly brown, crisp and no longer pink on the inside.
  • Meanwhile cook the potatoes in water to cover until they are tender but not mushy, about 12 minutes. Drain, toss with butter and season with salt and pepper.

1 1/2 teaspoons kosher salt, divided, plus more for sprinkling
1/2 cup all-purpose flour
1 1/2 teaspoons garlic powder
1 teaspoon smoked paprika
1/2 teaspoon onion powder
1/4 teaspoon cayenne pepper
1/4 teaspoon freshly ground black pepper
1 egg
1/4 cup mayonnaise
1/4 cup buttermilk (60 milliliters)
1 to 2 teaspoons hot sauce
5 cups cornflakes, finely crushed
1/4 cup honey
2 teaspoons hot sauce
1/4 teaspoon crushed red pepper flakes
1/4 cup apple cider vinegar (60 milliliters)
1 tablespoon lemon juice (15 milliliters)
2 teaspoons Dijon mustard
2 teaspoons honey (or spicy honey from above)
1/2 teaspoon celery salt, optional
2 tablespoons extra-virgin olive oil (30 milliliters)
1/4 red onion, very thinly sliced
1/2 cabbage head, such as savoy, red or Napa (about 6 cups sliced)

Steps:

  • For the chicken: Preheat the oven to 425 degrees F (220 degrees C) and line a baking sheet with a baking rack. Lay out the chicken and pat each piece dry with a piece of paper towel. Season with 1 teaspoon kosher salt.
  • In a large bowl, combine the flour, garlic powder, paprika, onion powder, cayenne pepper, remaining 1/2 teaspoon kosher salt and pepper and stir well. Add the chicken pieces into the bowl and toss to coat each piece. Set aside.
  • In a smaller bowl, whisk the egg with the mayonnaise, buttermilk and hot sauce. Scatter the crushed cornflakes into a shallow dish.
  • Remove the chicken from the flour mixture one piece at a time and tap off any excess flour. Dunk and thoroughly coat the chicken in the buttermilk mixture, allow excess to drip off, then roll and press into the cornflake crumbs. Place the chicken onto the rack-lined baking sheet and continue until all of the chicken is coated, making sure to leave space between each piece.
  • Bake the chicken until the internal temperature reaches 165 degrees F (75 degrees C) and the coating is golden brown, about 20 to 25 minutes for chicken breasts or thighs and 30 to 40 minutes for drumsticks. Season the chicken immediately with kosher salt and allow it to rest for about 5 minutes.
  • For the spicy honey: Combine the honey, hot sauce and red pepper flakes in a small bowl. Transfer to an airtight container to store at room temperature for up to 1 month.
  • For the slaw: Whisk together the vinegar, lemon juice, mustard, honey, celery salt and oil in a large bowl. Stir in the onion.
  • Thinly slice the cabbage and shred the carrot on the large side of a box grater. Then add to the bowl. Season with salt and pepper and mix very well to combine.
  • Serve the chicken with the spicy honey and slaw.
