EGGPLANT CHIPS

Makes crunchy eggplant chips, perfect for a tasty nutritious snack.

1 eggplant, sliced into strips
½ cup soft bread crumbs
⅛ cup grated Romano cheese
1 clove garlic, chopped
2 sprigs fresh parsley, chopped
½ teaspoon dried oregano
salt and pepper to taste
2 tablespoons vegetable oil

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Cut eggplant strips in half again, lengthwise. Lay strips on a baking sheet.
  • In a small bowl combine bread crumbs, Romano cheese, garlic, parsley, oregano, salt and pepper. Sprinkle over eggplant strips and drizzle with oil.
  • Bake in preheated oven for 25 minutes, or until crispy.

Eggplant chips are the perfect homemade snack. They are flavorful, crunchy, and savory.

Olive oil spray
2 Japanese eggplants (1 lb. total weight, unpeeled)
1/2 teaspoon Diamond Crystal kosher salt
1/4 teaspoon black pepper
1/2 teaspoon garlic powder

Steps:

  • Preheat your oven to 450 degrees F. Line 2 large rimmed baking sheets with nonstick foil and spray them with olive oil spray.
  • Using a sharp knife, slice the eggplants very thinly, into 1/8-inch-thick slices.
  • Arrange the eggplant slices in a single layer on the prepared baking sheets. Spray them with olive oil, then sprinkle with salt, black pepper, and garlic powder.
  • Bake the chips in the preheated oven for 15 minutes.
  • Remove from the oven, turn to the other side, spray with more oil, and bake until browned and crispy, 10-15 more minutes.*

450g floury potatoes, such as King Edward potato or Maris Piper
2 garlic cloves , sliced
4 fresh rosemary sprigs or 1 tsp dried
2 tbsp olive oil
2 eggs

Steps:

  • Preheat the oven to 220C/gas 7/ fan 200C.Without peeling, cut the potatoes into thick chips. Tip them into a roasting tin (non-stick is best) and scatter over the garlic. Strip the rosemary leaves from the sprigs and sprinkle them, or the dried rosemary, over too. Drizzle with the oil, season well, then toss the chips to coat them in oil and flavourings.
  • Oven-roast the chips for 35-40 minutes until just cooked and golden, shaking the tin at half time.
  • Make two gaps in the chips and break an egg into each gap. Return to the oven for 3-5 minutes until the eggs are cooked to your liking.

12 Tablespoons Unsalted Butter ((softened))
1/2 Cup Milk
3/4 Cup Brown Sugar ((packed cup))
3/4 Cup Granulated White Sugar
1 Teaspoon Vanilla Extract
2 1/4 Cups Flour ((all purpose flour))
1 1/4 Teaspoons Baking Soda
1/2 Teaspoon Salt
1 1/2 Cups Semi-Sweet Chocolate Chips ((morsels) - Use milk chocolate chips if you prefer a sweeter type of chocolate.)

Steps:

  • Preheat oven to 375 degrees F.
  • Soften the butter in a microwave.
  • Mix the milk, butter, granulated white sugar, brown sugar and vanilla extract in a large bowl. Use an electric mixer to mix these ingredients together. Mix until creamy.
  • Then stir in the flour, baking soda and salt. Use an electric mixer to mix all of the ingredients together. Mix until ingredients are completely blended and cookie dough looks creamy. FYI - Read the tips section below to find out why using an electric mixer results in a much better cookie than mixing by hand (when using vegetable oil). However, don't overmix. Only mix for 1-2 minutes with an electric mixer.
  • Add the chocolate chips chips. Stir in with a wooden spoon until the chocolate chips are evenly mixed throughout the cookie dough.
  • Optional (but recommended) - Chill the dough in a covered bowl in your refrigerator for 30-60 minutes. This helps to prevent the cookie dough from spreading in the oven and reduces the potential for overly thin/flat cookies.
  • Scoop the dough with a tablespoon and place this dough "ball" onto a non-stick baking sheet. You will need at least 2 baking sheets in order to bake all of the cookies at the same time (if they can fit in your oven) or you will need to bake each batch separately (one after the other).
  • Leave space of roughly 2-3 inches between each dough ball because the cookies will spread as they bake.
  • Bake for 8-10 minutes or until golden brown.
  • Remove baking sheet from the oven. Wear oven mitts. Leave the cookies on baking sheet to cool for 2-3 minutes. Otherwise, the cookies might break when removed from the baking sheet.
  • Use a spatula to remove the chocolate chip cookies and place the cookies on cooling racks in order to cool down completely.

Egg and chips is one of my all time favourite meals - I'm a classy girl! I always worry about frying the eggs so discovered that they work in the oven (best not ask how). The best potatoes to use for this are King Edward or Maris piper.

450 g potatoes, chipped
2 garlic cloves, sliced
1 teaspoon dried rosemary
2 tablespoons olive oil
2 eggs

Steps:

  • heat oven to 220°C.
  • Put chips in a roasting pan and scatter over garlic and rosemary. Drizzle with oil and toss to coat.
  • Roast for 35 - 40 mins giving the tin a good shake halfway through.
  • Make two gaps in the chips and crack an egg in each gap. Return to the oven and cook until the eggs are to your taste.
  • Serve with tons of salt and vinegar!

  • Peel the potatoes and cut into wedge shaped chips about 2cm thick and 8cm long. Put the potatoes in cold water to remove some of the excess starch prior to frying, then drain and dry.
  • Heat oil in a chip pan or deep frying pan and place all of the chips in the oil. Fry until the chips are light golden brown, moving them around during frying to get them all evenly coloured and crispy. Remove them from the pan and drain on soft kitchen paper. Season to taste with salt.
