OVEN-DRIED CHERRIES
In addition to using these cherries in our Crunchy Summer Salad, you can also serve them at room temperature with a mild cheese.

Steps:
- Heat the oven to 300 degrees. Line two baking sheets with parchment, and set aside.
- In a medium bowl, toss red cherries with balsamic vinegar and 1 tablespoon sugar. In another bowl, toss yellow cherries with white balsamic vinegar and remaining tablespoon sugar. Let cherries stand 30 minutes.
- Arrange cherries cut-sides up on the prepared baking sheets. Bake until cherries are wrinkled but still moist, 30 to 40 minutes. Transfer sheets to a wire rack to cool completely. Store the cherries in an airtight container, refrigerated, up to 1 week.

- Heat oven to 225 degrees. Line a baking pan with parchment paper (or a Silpat baking mat, if you're drying figs). Arrange fruit, cut sides up, spaced 1/2 to 1 inch apart, on pan. Sprinkle 1 tablespoon sugar over fruit; depending on fruit's tartness, add more sugar.
- Transfer pan to oven; dry until fruit has shriveled, edges have dried, and centers are still juicy; timing will vary according to variety of fruit, ripeness, and size, 1 1/2 to 4 hours. If juices start to run, baste with juices every hour. Transfer pan to a cooling rack; remove from pan while still warm.

- Set the oven racks at the top and bottom thirds of the oven. Preheat the oven to 170°F (75°C), or its lowest temperature. Line up to 4 baking sheets with nonstick reusable mats.
- Cut the top off of the pineapple, and slice a thin layer off the bottom so it stands upright. Core the pineapple and discard the skin and core. Cut into 2-3-inch (5-7.5 cm) pieces. Arrange in a single layer on a baking sheet.
- Peel the skin off the kiwis, then slice into ¼-⅓-inch (½-1 cm) wide rounds. Arrange in a single layer on a baking sheet.
- Peel the skin off the mangoes. Cut around the pit, then slice into ¼- to ⅓-inch (½-1 cm) wide strips. Arrange in a single layer on a baking sheet. Squeeze the lemon over the mango so it does not oxidize in the oven.
- Remove the tops from strawberries, and cut into ¼-⅓-inch (½-1 cm) wide slices. Arrange in a single layer on a baking sheet.
- Bake the fruit, in batches if necessary, for 6-8 hours, until dried, leathery, and all moisture has evaporated. The kiwis and strawberries should take less time, while the pineapple will take the longest. Crack the oven door every hour or so, especially in the beginning, to allow moisture to escape.
- Let the fruit cool, then store in an airtight container for up to 1 week, ideally with a silica gel packet to maintain dryness.

This is for Bing Cherries. Any sweet cherry can be used. The dried cherries can be used in any baking or sauce recipe.

Steps:
- You may chop the cherries or cut each cherry in half.
- Place the cherries on baking trays or on trays in a dehydrator.
- Set oven 180* or 200*. Turn twice during the drying period.
- Should be dry in 6 to 8 hours, depending on how many cherries on each tray.
- Cool. Pack in Ziplock bags.
- Add cornstarch to bag and shake to mix.

- Pit the cherries. This is much easier with a cherry pitter, which leaves the cherries whole, or you can cut them in half with a paring knife, and remove the pits.
- For the oven, or dehydrator, preheat to 165 F degrees, for about 3 hours, or until the tops look leathery and wrinkled. Then reduce heat to 135, for about 16-24 hours.
- You can tell the cherries are done, when they start to look similar to raisins. They should be hard, but still pliable, a little bit sticky, and when you squeeze them, no liquid should come out.
- Place the patted dry cherries on trays, and cover them with cheesecloth. Also, it is a good idea to put the trays on top of something, so they're not on the ground.
- Leave them in the sun for 2-4 days. It really depends on the temperature and humidity, so check them often.
- Once they are fully dried, place the cherries in a 160 degree oven for 30 minutes. This will kill any (unlikely) bacteria that may have formed. Advertisement.
