EASY OVEN ROASTED POTATOES
Simply seasoned, easy oven roasted potatoes make the ideal side dish for a meat and potatoes dinner. A high baking temperature makes the potatoes sizzle and brown nicely.

Steps:
- Preheat the oven to 450ºF.
- Clean and cut the potatoes into 1/2"-1" cubes.
- In a large bowl, toss the potatoes with the oil and spices.
- Spray a shallow baking pan or cast iron pan with cooking spray or rub lightly with oil. Spread the potatoes in the bottom of the prepared baking pan. Try to have the potatoes in a single layer with space in between for the ultimate crispiness.
- Bake for 25 minutes, or until potatoes are tender. Stir the potatoes once after about 15 minutes of baking so they brown on all sides. Turn the broiler on low and broil the potatoes for about 5 minutes to brown them even more. This is optional, but it makes the potatoes crispy. Watch the potatoes closely while they are under the broiler so that they don't burn.
- Serve immediately.

- Rinse and dry potatoes with a paper towel and transfer to a large bowl. Add olive oil, seasoned salt, salt, and black pepper; mix well. Spread potatoes on a baking sheet.
- Bake in preheated oven for 30 minutes, turning potatoes occasionally. Continue baking until potatoes are tender and golden brown, about 30 minutes more.

- Preheat oven to 425 degrees. In a large pot of salted boiling water, cook potatoes until just tender, 10 to 12 minutes. Drain. Let potatoes dry 10 minutes, then spread in an even layer on a rimmed baking sheet.
- Drizzle potatoes with oil, and dot with butter. Taste a potato for seasoning. Add more salt if necessary, and season with pepper.
- Roast potatoes until beginning to turn golden, 30 to 35 minutes. Distribute onion evenly over potatoes. Reduce heat to 400 degrees, and roast until potatoes are golden and onions are tender, 25 to 30 minutes. Garnish with rosemary.

- Preheat oven to 350°F with rack in upper third. Butter a 3-to 4-quart shallow baking dish.

- 1. Peel & quarter potatoes. Place in a large kettle cover with water and bring to a boil. To check pierce with a fork, they do need to be firm; drain.
- 2. In a casserole dish or cookie sheet with sides; drizzle with olive oil; place in oven at 350 degrees to get the oil hot
- 3. Remove pan with hot oil (be careful it can splatter)gently place your potatoes on the lightly oiled pan (do not layer potatoes); sprinkle with season all salt (& pepper is you like) and lots of paprika.

- 1. Peel, and slice the potatoes.
- 2. Place in dutch oven and cover with water and boil until tender (about 30-40 minutes).
- 3. Place in large mixing bowl and add 1/2 c. milk, a little at a time until you reach desired consistency. If you need more, add until desired consistency) ½ stick butter, 1 t. salt, 1 t. fresh ground pepper. Mash potatoes. The texture should not be too thin, nor too thick.
- 4. Once the potatoes are mashed, place them in a pastry bag and squeeze onto a well-greased baking sheet (I like to use parchment paper on my baking sheet) and in a rounded shape about 3-4" round (into several little personal sized rounds). Sprinkle with paprika and Parmesan and place in oven at 325/ until golden brown, about 30 minutes.
- 5. Remove from sheet when done using a spatula to serve individually.

- Preheat your oven to either 475 or to 375 degrees fahrenheit (I will explain later!). Place a metal pan in your oven while it preheats. If you have room, a good roasting pan is perfect.
- Now start with the potatoes you like best. My two choices would be Russets (my go-to for most things because they taste more “potato-y” to me) or Yukon golds.
- Drain your potatoes well and put them in a bowl. Add 2 tablespoons olive oil (or, if you have access and are feeling decadent, duck fat, goose fat or beef fat… any of these are an indulgence that’s totally worth it), 2 teaspoons of salt, and ½ teaspoon of black pepper.
- Now, let me explain the two possible oven temps. Both ways work just fine. I like the higher temp for the shorter time. But the lower temp for the longer time works great too.
- I recommend carefully shaking or gently stirring the potatoes every 10-15 minutes, for even browning. And, if you want to add minced, fresh herbs like sage, thyme, or rosemary, I recommend tossing them into the pan for the last 10 minutes, so you don’t risk burning them.
- There should be some oil remaining in the pan when you remove it from the oven. Pour it off and discard. Check the potatoes for salt, pepper, and a further showering with fresh herbs (if using).
