SIMPLE BRAISED SHORT RIBS

Braising is the best way to cook short ribs, and this simple recipe teaches you how to get flavorful, fall-off-the-bone meat with ease.

Vegetable oil, for searing (or other neutral oil)
2 pounds beef short ribs
Kosher salt and black pepper
1 yellow onion, sliced
1 teaspoon dried thyme
1 teaspoon to 1 tablespoon all-purpose flour (See Note)
1 quart unsalted or low-sodium beef stock
3 dried bay leaves

Steps:

  • Heat the oven to 350˚F.
  • Heat a thin layer of oil in a Dutch oven or other large oven-safe pot with a lid over medium-high heat. Meanwhile, pat the short ribs dry with paper towels and season all over with salt and pepper. Sear the short ribs (in batches if necessary) until browned all over, adding more oil as needed, and then transfer to a platter.
  • In the same pot, add the onion, thyme, and some salt and pepper (and more oil if the pot is dry), and cook, stirring occasionally, until the onions start to soften, a few minutes. Sprinkle with the flour and cook for about 1 minute more while stirring.
  • Add the beef stock, bay leaves, and browned short ribs back to the pot, let come to a simmer, cover, and place in the oven until tender, about 2 hours. Serve.

MOLE BRAISED BEEF SHORT RIBS

4 lbs beef short ribs, cut into 2-3 inch pieces
1/2 white onion, diced
1 large carrot, quartered and thinly sliced
3 cloves garlic, minced
1/4 cup salsa verde
1 chipotle in adobo, chopped*
1 tablespoon tomato paste
1 tablespoon natural peanut butter
3 tablespoons all purpose flour
2 tablespoona cocoa powder
1 teaspoon cumin
1 teaspoon coriander
1 tablespoon chili powder
1/2 teaspoon smoked paprika
1 teaspoon ground oregano
1 cup beef broth
1 cup red wine
1 cinnamon stick
2 tablespoons extra virgin olive oil
Coarse salt, ground black pepper

Steps:

  • Preheat oven to 300°F. Toss ribs in 1-2 teaspoons of coarse salt, pinch of pepper, and 2 tablespoons of the flour until evenly coated.
  • In a large dutch oven or braiser, heat olive oil over medium high heat and sear ribs, 1-2 minutes on each side. Remove the ribs from heat to a plate and let rest.
  • Add the onion and carrot to the skillet and cook for 4-5 minutes, stirring frequently, until somewhat softened.
  • Add garlic and saute 30 seconds to 1 minute, until fragrant.
  • Add tomato paste, cocoa powder, remaining flour, and peanut butter to the pot. Cook 1-2 minutes, stirring frequently, until fragrant and starting to deepen color.
  • Pour wine into the pot, cook 1 minute, until it has somewhat reduced. Scrape up any browned bits on the bottom of the pot.
  • Stir in remaining ingredients. Cook for 2-3 minutes, stirring frequently.
  • Turn off heat and add the seared ribs back to the pot. Cover and place on a middle rack in the oven. Cook for 2 to 2 1/2 hours, until ribs are tender and falling off the bone. They should slide right off the bone when done!
  • Remove ribs from sauce. Remove and discard the cinnamon stick. Skim fat from the sauce and using either an immersion blender or in batches in a regular blender, blend until smooth. Add salt to taste.
  • Drizzle ribs with sauce and garnish with fresh parsley as desired. Serve over your favorite mashed potatoes or roasted veggies!
  • Turn a 5 quart slow cooker on high. Toss ribs in 1-2 teaspoons of coarse salt, pinch of pepper, and 2 tablespoons of the flour until evenly coated.
  • In a large skillet, heat olive oil and sear ribs, 1-2 minutes on each side. Remove the ribs from heat to a plate and let rest.
  • Add the onion and carrot to the skillet and cook for 4-5 minutes, until somewhat softened. Remove from heat and add to the slow cooker.
  • Whisk the rest of the ingredients into the slow cooker. Place seared ribs in the liquid.
  • Cook 4-5 hours on high or 8-9 hours on low, until ribs are tender and falling off the bone. They should slide right off the bone when done!
  • Remove ribs from sauce. Remove and discard the cinnamon stick. Skim fat from the sauce and using either an immersion blender or in batches in a regular blender, blend until smooth. Add salt to taste.

1 cup all-purpose flour
1 teaspoon ground coriander
1 teaspoon ground cumin
1 teaspoon garlic powder
1 teaspoon ground mustard seeds
2 pounds beef short ribs, cleaned, excess fat removed and cut into 2-inch pieces
Salt and freshly ground black pepper
Olive oil, for browning
6 dried pasilla chiles, seeded and stemmed
1 cup hot water
2 carrots, peeled and roughly chopped
2 cloves garlic, smashed
1 white onion, roughly chopped
1/2 bunch celery, roughly chopped
2 cups red wine
2 tomatoes, quartered
3 to 4 cups beef broth
Two 16-ounce cans white hominy or pozole, drained
1 tablespoon chopped fresh cilantro
1 tablespoon chopped fresh parsley
Lime wedges, for garnish

Steps:

  • Place the flour with the coriander, cumin, garlic powder and ground mustard in a shallow dish, and mix well with a wooden spoon. Generously sprinkle the short ribs with salt and pepper, then dredge both sides in the seasoned flour one by one, making sure to shake off any excess flour.
  • In a large Dutch oven over medium heat, add 2 tablespoons oil. When the oil smokes, add the short ribs in batches. Brown the short ribs until a golden crust starts to form, about 5 minutes on each side. Once brown, reserve and continue until all the ribs are brown, adding more oil as needed. Set the ribs aside.
  • While the short ribs are browning, heat a cast-iron skillet over medium-high heat. When the skillet is hot, add the pasilla chiles and toast until they start to smoke, about 4 minutes. Remove the chiles and submerge in the hot water. Allow to steep until they become soft and pliable, about 10 minutes. Remove from the water and puree in a blender with 1/4 cup of the steeping water. Set aside the puree.
  • Preheat the oven to 350 degrees F.
  • Add the carrots, garlic, onions and celery to the Dutch oven. Cook until the vegetables caramelize, about 15 minutes. Deglaze the pot with the red wine, and then add the tomatoes, beef broth, hominy and reserved pasilla chile puree. Bring the whole mixture to a simmer. Start adding all the browned short ribs back into the pan. Cover and cook until the short ribs barely start falling off the bone, about 1 hour 30 minutes.
  • Season with salt, pepper, cilantro and parsley; garnish with a lime wedge and serve.

I love recipes that let the oven do the slow cooking for me especially in the cooler weather. Gives a little extra heat to the house and the smell of the braising food will make you crazy all day.

6 lb beef short ribs, bone in
2-3 Tbsp olive oil, extra virgin, or more for browning ribs
kosher salt
1 large spanish onion, cut into 1/2 inch pieces
2 celery stalks, cut into 1/2 inch pieces
2 large carrots, scrapped and cut into 1/2 inch pieces
2 clove garlic, smashed
12 oz tomato paste
2-3 c hearty red wine
2 c water
1 bunch fresh thyme, tied with kitchen string
2 bay leaves

Steps:

  • 1. Season each short rib generously with salt. In a Dutch oven heat oil.enough to accommodate all the meat and vegetables with olive oil and bring to a high heat. Add the short ribs to the pan and brown very well, about 2 to 3 minutes per side. Do not overcrowd pan. Cook in batches, if necessary. Preheat the oven to 375 degrees.
  • 2. While the short ribs are browning, puree all the vegetables and garlic in the food processor until it forms a coarse paste. When the short ribs are very brown on all sides, remove them from the pan. Drain the fat, coat the bottom of same pan with fresh oil and add the pureed vegetables.
  • 3. Season the vegetables generously with salt and brown until they are very dark and a fond has formed on the bottom of the pan, approximately 5 to 7 minutes. Scrape the pan fond and let it reform. Scrape the fond again and add the tomato paste. Brown the tomato paste for 4 to 5 minutes. Add the wine and scrape the bottom of the pan. Lower the heat if things start to burn. Reduce the mixture by half. Return the short ribs to the pan and add 2 cups water or until the water has just about covered the meat.
  • 4. Add the thyme bundle and bay leaves. Cover the pan and place in the preheated oven for 3 hours. Check periodically during the cooking process and add more water, if needed. Turn the ribs over halfway through the cooking time. Remove the lid during the last 20 minutes of cooking to let things get nice and brown and to let the sauce reduce.
  • 5. When done the meat should be very tender but not falling apart. Serve with the braising liquid. My favorite accompaniment is creamy polenta and green vegetable.

If you weren't already sure about how easy and delicious braised short ribs can be, consider this classic and straightforward recipe an excellent gateway. The ultimate hands-off, do-ahead dinner, these are done on the stovetop in a large Dutch oven but can easily be adapted to a slow cooker if that's your thing. When purchasing the ribs, ask for the thickest, meatiest ones available as they tend to shrink quite a bit once braised.

2 tablespoons vegetable oil
5 pounds bone-in short ribs, at least 1 1/2 inches thick
Kosher salt and freshly ground pepper
2 large heads garlic, halved crosswise
1 medium onion (about 10 ounces), chopped
4 ribs celery (about 8 ounces, chopped
2 medium carrots (about 6 ounces), chopped
3 tablespoons tomato paste
2 cups dry red wine (about half a bottle)
2 cups beef stock or bone broth (use beef bouillon dissolved in water if unavailable; chicken stock will work in a pinch), plus more as needed
4 sprigs thyme
1 cup parsley, coarsely chopped
1/2 cup finely chopped chives
1 tablespoon finely grated lemon zest

Steps:

  • Heat oven to 275 degrees. Heat oil in a large Dutch oven over medium-high heat. Season short ribs on all sides with salt and pepper. Working in batches, sear short ribs on all sides until deeply and evenly browned, 6 to 8 minutes per batch. Transfer browned short ribs to a large plate and continue with remaining ribs.
  • Pour off all but 2 tablespoons of remaining fat, leaving the good browned bits behind. Reduce heat to medium, and add garlic, cut side down and cook, undisturbed, until golden brown, about 1 to 2 minutes. Add onion, celery and carrots and season with salt and pepper. Toss to coat and continue to cook until vegetables are softened but not yet browned, about 5 to 10 minutes. Add tomato paste and stir to coat. Continue to cook, stirring occasionally, until tomato paste has started to caramelize a bit on the bottom and up the edges of the pot, about 2 to 3 minutes.
  • Add red wine and, using a wooden spoon, scrape up any browned or caramelized bits. Let this simmer 2 to 3 minutes, just to take the edge off and reduce a bit. Stir in beef stock along with thyme. Using tongs, return short ribs to the pot, along with any juices that have accumulated, nestling them in there so that they are submerged (if they are just barely covered, nestle them bone side up so that all the meat is submerged, adding more beef stock or water as necessary to cover). Bring to a simmer, then cover and transfer to oven.
  • Cook, undisturbed, until short ribs are meltingly tender and falling off the bone (you should be able to shred the meat with a fork), 3½ to 4 hours.
  • Using tongs, remove the ribs from the pot, taking care (for presentation purposes, really) not to let the bone slip out and transfer them to a large plate. (While you could serve the short ribs right out of this pot, the vegetables have all given up their flavor and texture and aren't worth much now, so feel free to strain the sauce for easier eating.) Scatter parsley, chives and lemon zest over the top of the short ribs. Separate the fat from the sauce, season with salt and pepper and serve alongside.

TANGY BRAISED SHORT RIBS



Tangy Braised Short Ribs image

This bright, sweet and salty recipe for braised short ribs will work with bone-in or boneless meat, as long as the short ribs are thick (at least 1 1/2 inch), and not the thinly sliced Korean style. Seasoning your meat with salt and pepper at least 24 hours in advance will greatly improve the flavor of the finished product. And, if you can spare an extra 24, making them a day ahead of serving will make them even better, with all that braising liquid flavoring the meat as it sits. Finishing with herbs and lemon are hardly a revelation in the braised meat department, but they are especially welcome here. The fresh lemon juice at the end transforms the braising liquid into a bright, brothy, spoonable sauce good enough to drink.

5 pounds bone-in short ribs, at least 1 1/2-inch thick, cut into single bone portions (or 3 1/2 to 4 pounds boneless, at least 1 1/2-inch thick)
Kosher salt and freshly ground black pepper
3 tablespoon vegetable or canola oil
2 large yellow onions, quartered
2 heads garlic, halved crosswise
3 tablespoons honey
1/2 cup apple cider vinegar
1/2 cup soy sauce or tamari
4 cups chicken, beef or vegetable broth
4 thyme sprigs
2 cups parsley, leaves and tender stems, finely chopped
1/2 bunch chives, finely chopped
Flaky sea salt
3 lemons, halved, for juicing

Steps:

  • Season short ribs with salt and pepper at least 1 hour (at room temperature) and as much as 48 hours (covered and refrigerated) in advance.
  • Heat oven to 300 degrees. Heat 1 tablespoon oil in a large Dutch oven over medium-high. Working in batches, sear short ribs until deeply golden brown on both large flat sides, 4 to 6 minutes per side. Transfer short ribs to a large plate or cutting board and drain all but about 2 tablespoons fat from the pot. Discard remaining fat. Repeat with remaining short ribs. Drain all fat from the pot and carefully wipe out. (No need to wash, just get rid of any scorched bits.)
  • In the same pot over medium-high, heat remaining 2 tablespoons oil, and add onions and garlic. Cook, stirring occasionally, until the onions and garlic get a bit of color, 4 to 5 minutes. Add honey and cook, stirring until it starts to bubble furiously, turning a darker amber brown and sticking to the bottom of the pot as it cooks.
  • Add vinegar and soy sauce, and, using a wooden spoon or spatula, scrape up the bits on the bottom of the pot. Bring to a strong simmer and cook to reduce by about half, 5 to 8 minutes. Add broth and thyme, and bring to a simmer. Season with salt and pepper and add short ribs back in, bone-side up, making sure they are as submerged in that braising liquid as possible. Cover the pot and place in the oven. Do not look at it or remove the lid for 3 hours. (Nothing bad will happen, promise.)
  • After 3 hours, check the short ribs, they should be extremely tender and nearly falling apart, almost having the jiggly texture of a baked custard or Jell-O. (If not, continue roasting another 20 to 30 minutes.) Remove from oven.
  • At this stage, you can remove the lid and using a spoon, carefully skim as much of the top layer of fat as possible. Increase oven temperature to 425 degrees, and return the pot to the oven, uncovered, to let the short ribs brown a bit on top and thicken the braising liquid a bit, another 35 to 45 minutes. (Alternatively, you can remove the short ribs from the oven, let them cool at room temperature and place in them in the fridge, overnight. When ready to serve, remove them from the fridge and using a spoon, scrape off the solidified fat on the top layer. Return the short ribs, covered, to a 325-degree oven until totally warmed through, 30 to 40 minutes. Remove the lid and increase temperature to 425 degrees, and continue to cook, uncovered, to let the short ribs brown a bit on top and reduce the braising liquid, another 35 to 45 minutes.)
  • Meanwhile, combine parsley and chives in a small bowl and season with flaky salt.
  • Remove the short ribs from the oven and serve straight from the pot or transfer them to a shallow bowl or plate with high sides, spooning the braising liquid over. Squeeze lemons over, letting the juice season the braising liquid. Sprinkle with parsley mixture before serving.
