It's easy, the ribs are meltingly tender and it's packed full of flavour from the rub, braising the ribs in cider (see Note 1 for subs!) and the homemade barbecue sauce glaze! 2.5 tsp paprika powder
2 tsp garlic powder ((sub with onion powder))
1.5 tsp onion powder ((sub with garlic powder))
1 tsp cayenne pepper ((omit for not spicy))
1.5 tsp dried thyme
1.5 tsp dried oregano
1.5 tsp salt
0.5 tsp black pepper
2 - 2.5kg / 4 - 5lb pork ribs (2 racks)
3/4 cup sweet alcoholic apple cider (hard cider) (, or apple juice (Note 2))
1 tbsp olive oil
1/2 cup apple cider vinegar ((Note 3))
1 1/2 cups tomato ketchup ((or Aussie tomato sauce))
1/2 cup water ((or use remaining apple cider!))
1 1/2 tbsp molasses (, orginal (not blackstrap, Note 4))
1/3 cup brown sugar
2 tsp mustard powder
1 1/2 tsp garlic powder
2 tsp Worcestershire sauce
1 tsp salt
1 tsp black pepper
1 tsp Tabasco or cayenne pepper ((optional, for spiciness))

Steps:

  • Combine the Rub ingredients and rub onto both sides of the ribs (most on meaty side). Set aside to marinate for 20 minutes (or overnight).
  • Preheat oven to 160°C/320°F (all oven types).
  • Place ribs on a tray in a single layer. Pour apple cider underneath the ribs, cover with foil then bake for 1 hour 30 minutes or until the meat is pretty tender (Note 5).
  • Remove from oven, turn up to 180°C/350°F. Remove foil, drizzle with olive oil, then return ribs to oven for 15 minutes or until rub becomes nice and crusty.
  • Line a new tray with foil then baking / parchment paper (you'll thank me later).
  • Remove ribs from oven, transfer to lined tray. Pour any juices from tray over the ribs.
  • Flip ribs so the bonier side is up. Slather with Barbecue Sauce, then bake 10 minutes.
  • Remove from oven, then turn ribs over so the meaty side is up. Slather with Barbecue Sauce, bake 5 minutes. Repeat 2 or 3 more times until you've got a thick glaze on the ribs.
  • Cut ribs into individual or multiple rib portions and serve with remaining Barbcue Sauce!

2 cups sliced onions
2 cups ketchup
2 cups water
4 teaspoons salt
¼ cup Worcestershire sauce
½ cup white vinegar
½ cup dark brown sugar
4 teaspoons dry mustard
4 pounds pork spareribs

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, combine onions, ketchup, water, salt, Worcestershire sauce, vinegar, brown sugar, and mustard. Split ribs down the center between the bones.
  • Heat a large lightly oiled skillet over medium-high heat. Add ribs and sear until browned. This may have to be done in several batches.
  • Place ribs in a single layer in two baking pans or casserole dishes. Pour half of the sauce over the ribs, reserve remainder.
  • Bake ribs in preheated oven for 3 hours. Turn and baste meat every twenty minutes with remaining sauce, using all sauce by two hours. Continue turning and basting ribs using sauce in the pan during the last hour of baking.

1 tablespoon kosher salt (or to taste)
1 teaspoon black pepper
2 teaspoons dry ground mustard
2 teaspoons smoked paprika
½ teaspoon garlic powder
½ teaspoon onion powder
¼ cup brown sugar (light or dark)
1 rack pork spare ribs (whole or St. Louis-style, about 3½ to 4 pounds)
1½ cups barbecue sauce

Steps:

  • Preheat the oven to 300°F.
  • In a small bowl, mix together the rub ingredients until well-combined.
  • Place the ribs on a double layer of aluminum foil large enough to wrap the ribs. Note: I always fold together two pieces of foil to make one big piece for each layer
  • Sprinkle the ribs with the rub on both sides, evenly covering the ribs.
  • Wrap the ribs with the foil (fold the foil over long-ways down the middle and then fold the sides up from the bottom so the juice doesn't leak out). Place the foil packet on a large baking sheet.
  • Bake for 3 hours or until the meat is tender.
  • Remove the ribs from the oven, open the foil, and let the ribs cool completely, about 45 minutes to 1 hour. Cooling the ribs will allow you to move them around more easily in the next steps without them falling apart. Note: If you want to make the ribs a day or two ahead of time, remove the ribs from the cooking liquid and store them covered in the refrigerator. When you are ready to serve them, proceed with the recipe.
  • While the ribs are cooling, preheat the grill to high.
  • Once the ribs are cooled, remove them from the foil and cooking liquid and grill, basting with the barbecue sauce and turning frequently, until they are heated through and the sauce begins to caramelize, about 10 minutes. Note: I usually cut the rack of ribs in half before grilling to make them easier to handle.
  • Cut the ribs into pieces. Serve with extra barbecue sauce, if desired.

SAUCE
1 c tomato ketchup
1 c apple cider divided
2 tsp yellow mustard
1 tsp garlic salt
1/2 tsp ground black pepper
1/4 tsp ground cumin optional
1/4 tsp cayenne pepper( add more for extra spicy sauce)
1 tsp worcestershire sauce
2 tsp dark molasses
1/2 c brown sugar
2 Tbsp honey
1 c chopped onion ( i used a sweet onion)
1 c finely chopped apple
2 clove minced garlic
6 oz can tomato paste
RIBS
21/4 c apple cider
2 c apple bbq sauce
1-2 racks of baby back or spare ribs
1/4 tsp black pepper
1/2 tsp garlic powder

Steps:

  • 1. Chop Apple and onion. Fry onion on medium high heat in oil. Cook until starting to caramelize. Add in chopped Apple and 1/4 cup Apple cider. Cook on medium stirring occasionally, until apples are softened, and cider cooks off. Add in the garlic. Cook for a minutes stirring. Remove from heat.
  • 2. Place apples and onions in a food processor with 1/4 cup Apple cider. ( if needed add a bit more cider if it doesn't blend. Blend until it is a sauce consistency. Add mixture to a sauce pan. Add 1/2 cup of cider And remaining ingredients except for tomato paste.
  • 3. Stir occasionally and cook over medium heat for about 3o minutes. Add paste. Stir well and cook additional 10 minutes. Remove from heat. ( store in fridge or use right away)
  • 4. Ribs Heat oven to 325 degree's Foil line a sheet pan. Turn rack of ribs over. Pull skin off the back. I insert a knife under the skin on one side separating it from meat. Grasp skin with paper towel and peel off.
  • 5. Place 2 cups of Apple cider in foil lined pan. Stir in 1/2 cup of sauce. Place ribs on top of cider bone side down. Sprinkle with garlic powder and black pepper. Spread 1 cup of sauce on top. Cover tightly with foil. Place in oven and bake 2-3 hours, or until ribs are almost falling off the bone.
  • 6. Remove from oven. Heat oven to broil. Drain off liquid from pan. Baste top of ribs with sauce. Place back in oven on broil. Broil until sauce is a little sticky and lightly browned. About 5 minutes. Cut up and serve.

This is a method I got from FoodNetwork's Alton Brown, and it's foolproof. I've tweaked the ingredients many times, in many ways, but it's always turned out great. This is my favorite variation, and the only way I make barbecued country ribs.

3 lbs country-style pork ribs
3/4 cup tomato ketchup
3/4 cup beer
1/2 cup real maple syrup (dark grade B is best.)
1 medium onion, chopped
3 garlic cloves, chopped
1 teaspoon louisiana style hot sauce, plus more to season
1 tablespoon Worcestershire sauce
2 sheets heavy duty weight aluminum foil (18x36 inch)

Steps:

  • Fold each sheet of foil in half lengthwise.
  • You now have two double thick sheets measuring 18x18 inches.
  • Stack them on top of each other, folded sides on top, and triple fold the three cut edge sides together, crimping firmly, leaving the folded edge side open.
  • You now have a double thickness foil bag.
  • Put the foil bag on a large baking sheet with sides (in case of leaks) and fill with the ribs, being careful not to puncture the bag if the ribs are 'bone-in'.
  • Mix together the ketchup, beer, syrup, onion, garlic, Worcestershire, and hot sauce.
  • Pour into the bag with the ribs.
  • Triple fold and firmly crimp the top folded edges of the foil.
  • Put the bag, still on the baking sheet, into a 300 degree oven for 3 hours.
  • Remove from the oven, cut a corner of the foil bag, and drain the liquid contents into a sauce pan.
  • Crimp the cut edge and set the ribs aside, still sealed in the foil.
  • Bring the liquids to a boil and reduce to a glaze-like consistency (like b-b-que sauce).
  • While the sauce is reducing, preheat your oven broiler.
  • Place the ribs on a oil-sprayed broiler pan, being careful to keep as whole as possible, as they will be very tender.
  • Taste the sauce and add more hot sauce if you want more spiciness.
  • Brush the ribs generously with the sauce and broil close to the heat until the sauce starts to bubble and caramelize (about 1-2 mins.).
  • Turn the ribs, and repeat.
  • If you want a thicker coating, do this brush-and-broil process one more time per side.
  • (I usually do.) Serve with any extra sauce to pour over.
  • NOTE: If you don't have or can't find the dark maple syrup, dark corn syrup is a good substitute.

3 lbs. of your favorite cut of pork ribs
1 large yellow onion, chopped
2 medium shallots, finely chopped
12 cloves of garlic, rough chopped
2 large roasted red peppers sliced in ½ inch widths (or buy a jar of them)
2 medium carrots, chopped
1 ½ cups of chicken stock
1 small can of tomato paste
4 tablespoons of plain BBQ sauce (smoked)
1 teaspoons of salt
2 teaspoons of coarse ground pepper
½ teaspoon of smoked sweet paprika
1 teaspoon of dried basil
½ teaspoon of thyme
1/3 cup of olive oil

Steps:

  • First, you're going to sauté and brown the meat, and then you are going to slow cook it in the oven. If you have a large oval shaped Dutch oven, you will want to use that. Otherwise, just get the largest frying pan you have. If you can avoid slicing up the pork rib rack into sections, that would be great. Otherwise, go ahead and cut it in 2 halves and brown each separately.
  • Start by preheating the oven to 350. Next, get your pan of choice and heat ¼ cup of the oil over medium heat. Sprinkle the meat side of the ribs with some of the pepper, and the regular salt. Sauté your meat for about 2 to 3 minutes on each side until browned.
  • When browned, pour ¼ cup of the chicken stock over the ribs and deglaze the pan or your Dutch oven. If you're using the Dutch oven, cover with the lid and place it in the oven. If you didn't have one and used a frying pan, transfer the ribs and the liquid to a large and deep baking pan (lasagna pan works good), cover tightly with foil, and place it in the oven.
  • While the ribs are in the oven, get a large frying pan and heat the rest of the olive oil over medium heat. Sauté the shallots and garlic for about a minute, then add the onion, and continue to sauté until the onions become translucent and begin to brown. Next, add the carrots and stir occasionally. Continue to sauté for a few more minutes and add the remaining chicken stock and the paprika, as well as the basil and thyme. Reduce heat to low and add the tomato paste and bbq sauce and stir well so that everything is well blended together. Taste for flavor and add salt and pepper if needed.
  • Finally, add the sliced roasted red peppers and allow the sauce to begin to bubble. Transfer the sauce to the pot with the ribs, making sure that all the ribs are well covered. Recover pot tightly and continue to bake for 60 minutes at 325. Be very careful to use oven proof mitts or pot holders, as the Dutch oven lid and sides is extremely hot.
  • When done, remove the pot from the oven and let sit covered for about 5 to 10 minutes. Get your serving platter ready. Remove the ribs first and set on the platter. Since the pork most likely sweat out a lot of oils, to reduce the calories and fat content, you will want to put your sauce through a strainer to get rid of excess oil.
  • Once done, spoon the sauce over the ribs or around the ribs, it's your choice. Serve with steamed rice or wonderful boiled new potatoes. Sprinkle some chopped parsley over the ribs as garnish.

3 1/2 to 4 pounds bone-in country style pork ribs (or about 2 to 2 1/2 pounds boneless)
Kosher salt and freshly ground black pepper
3 tablespoons extra virgin olive oil ( divided )
1 large onion ( chopped or sliced)
1 large carrot (diced)
2 ribs celery (chopped)
3 to 4 medium cloves garlic (finely minced)
3/4 cup apple cider
1/4 cup cider vinegar
1 cup chicken broth
2 tablespoons tomato paste
2 bay leaves
1/2 teaspoon dried leaf thyme

Steps:

  • Gather all ingredients.
  • Heat the oven to 300 F (150 C/Gas 2).
  • Sprinkle the pork ribs with kosher salt and freshly ground black pepper.
  • Heat 2 tablespoons of olive oil in a large Dutch oven over medium heat. Add the ribs, in batches if necessary, and sear on all sides. Remove to a plate and set aside.
  • Add the remaining 1 tablespoon of olive oil to the pan. Add the onion, carrot, and celery. Cook, stirring until onion is translucent and lightly browned. Add the minced garlic and continue cooking for 1 to 2 minutes longer.
  • Add the ribs back to the pan. In a bowl, combine the cider, vinegar, chicken broth, and tomato paste; blend well. Add the bay leaves and thyme; pour over the ribs. Cover the Dutch oven and bake for 3 hours, or until very tender.
  • Skim the fat from the juices and remove bay leaves. Taste and add salt and pepper, if needed. If desired, thicken the juices (see note below).
  • Serve the ribs with the vegetables and juices, along with boiled or mashed potatoes. Note: To thicken the juices, combine 1 1/2 tablespoons of flour with 2 tablespoons of cold water, stirring until smooth. Bring the skimmed juices to a simmer on the stovetop; stir in the flour mixture and cook, stirring, until thickened.

4 pounds bone-in country style pork ribs (or 2½ pounds boneless)
1 medium onion
3/4 cup barbecue sauce, divided
1 tablespoon garlic powder
1 tablespoon brown sugar
1 teaspoon Kosher salt
1 1/2 teaspoon ground black pepper
1/2 teaspoon cayenne pepper
1/2 teaspoon onion powder
1/2 teaspoon ground cumin
1/2 teaspoon paprika

Steps:

  • Gather the ingredients.
  • Preheat oven to 250 F. Combine garlic powder, brown sugar, salt, pepper, cayenne, onion powder, cumin, paprika, and chili in a bowl and stir until completely blended.
  • Place ribs on a large baking sheet. Dry well and sprinkle dry rub on them, turning ribs around to get them evenly coated. Rub mixture into meat.
  • Line a large baking dish with heavy-duty foil.
  • Peel and roughly chop onion and add chunks to foil-lined dish.
  • Arrange seasoned ribs on top of chopped onion in baking dish. Cover tightly with another piece of foil and transfer to oven. Let ribs cook for two hours without opening oven.
  • After two hours, remove dish and drain off any liquid that has collected in the dish. You'll want to keep this liquid, so pour it into a large heatproof bowl.
  • Pour 1/2 cup of the barbecue sauce over ribs and use a barbecue brush to spread sauce evenly on all sides of the ribs. Recover dish tightly with foil and return it to oven for another 2 hours.
  • Remove dish from oven and increase oven temperature to 350 F.
  • Remove foil covering and drain off any more liquid into same bowl as before. Brush remaining barbecue sauce onto ribs so that they're evenly coated.
  • Don't cover the dish this time. Transfer ribs to oven for 10 minutes, just enough time for sauce to caramelize slightly without drying out ribs.
  • Meanwhile, pour liquid you set aside through a strainer lined with cheesecloth to filter out particles of spice rub and any other little bits. Cover and refrigerate liquid overnight.
