- Turn the oven to 180°C/fan160°C/gas 4. Peel the potatoes and carefully cut them in half, then into quarters. Peel the carrots and cut each carrot into about 4 or 5 even pieces.
- Prick the sausages all over with a fork - this helps the fat to run out of the sausages, so that they don't split open as they cook. Heat the olive oil in a heavy-based casserole and fry the sausages, turning often, until lightly golden all over - this should take about 10 minutes. Remove the sausages from the pan and put them on a plate.
- Add the chopped onion to the casserole (there will still be some oil in the pan from the sausages) and continue to cook over a low heat for 5-10 minutes, until the onion is slightly soft. Add the garlic and paprika and cook for another minute.
- Add the chopped potatoes and carrots and stir everything around in the casserole so that the vegetables are coated with the oil.
- Add the tomatoes and stock (to measure the stock, you can use the empty tomato can - filled up, it will hold 400ml of stock) and the bay leaves. Bring to a simmer (so it's just bubbling gently). Return the sausages to the casserole.

- Preheat oven to 400 degrees F (200 degrees C).
- Heat 2 teaspoons olive oil in a large skillet over medium heat, and cook and stir the sausage until browned. Transfer the cooked sausage to a large baking dish.

- Place Dutch oven over medium-high heat and brown sausage links. As they brown, begin breaking them into bite sized pieces. When they are browned, remove them from the pot, and add a little hot water, and scrape up any brown bits that are stuck to the bottom. Give it a quick rinse and wipe it dry with a paper towel. Spray with non-stick cooking spray.
- Add bread cubes to the bottom of the pan.
- Top with 3 cups of cheese. Then sausage pieces. Top with mushrooms.
- Whisk together eggs, milk, mustard and the bottoms of the green onions.
- Pour over the top. Cover and refrigerate 8 hours or overnight.
- Remove from the fridge for about 30 minutes before baking. Preheat oven to 350 degrees.
- Bake for 55 minutes covered. Remove lid, top with remaining cup of cheese, bake for another 5 minutes, or until cheese is melted.
- Let stand 5-10 minutes before serving. Top with fresh tomatoes the the tops of the green onions.

A hearty and easy supper entree. I need to say up front that this one is a spin-off of Mareesme's: Recipe #199769 -- but I didn't have the proper ingredients for that fine recipe so I changed to smoked sausage and I eliminated the stovetop techniques, so it's all just baking/broiling. Hey, this was GOOD and I credit Mareesme for turning me on to the basic ingredients and some shrewd seasoning with the little touch of brown sugar. - Preheat oven to 350-degrees F.
- Cut the smoked sausage into 6 pieces.
- In a 9" x 9" ungreased baking dish, layer in half the sauerkraut and then lay out the sausage on top of it. Cover with the remaining sauerkraut.
- Spread the diced onion over the sauerkraut, lay out the bacon slices across the casserole, and then sprinkle the brown sugar over it. Pour the water over the casserole which will make the sugar dissolve a bit. Cover with aluminum foil and bake on the middle rack for 90 minutes.
- At the end of the 90 minutes, remove the aluminum foil and, on the same rack, BROIL for 6 minutes. Serve hot along with mashed potatoes.

- Turn the oven on at 450°F/230°C. You're gonna have to cut up the veggies. Sorry about that. Onions, Pepper, Garlic, tomatoes and potatoes. Put them into an oven safe casserole dish.
- Drizzle them pretty generously with olive oil and sprinkle the salt and pepper. Also a little bit of red pepper flakes if you want. Toss everything together with a big spoon or just use your hands. Poke some holes in the sausage and lay them out on the veggies.
- Put it in the oven. Pour some wine. Get out on the deck. 10 minutes. One glass of wine. Turn the sausage links over. 10 more minutes. Another glass of wine? Take one of the links out and cut it in half. If there isn't any pink in the middle it is done. If not just give them another five minutes while you get a little more wine comfort.
