CREAMY RICE PUDDING
The easiest, creamiest, classic British rice pudding recipe you'll ever find. Wonderful when enjoyed both hot and cold.

Steps:
- Heat oven to 350ºF (175ºC)
- Butter the inside edge (no need to do the bottom) of a baking dish, then add the rice and the milk and cream (if using).
- Now add the sugar, and stir until it dissolves.
- Add a pat of butter, and a little sprinkle of nutmeg.
- Place the dish in the center of the pre-heated oven, and set the timer for 30 mins.
- After 30 minutes, take the dish out of the oven, stir well, and return it to the oven. Set the timer for another hour.
- Check the pudding after an hour, and you may have to break the skin to check the rice. Continue to cook for up to another half hour, if necessary. The rice pudding is ready when it has started to thicken (it won't be runny).
- Remove the rice pudding from the oven, and let cool slightly before serving. Spoon into dishes, and serve with a dash of cinnamon, if desired. Rice pudding is also delicious when served cold. Add some chopped fruit, raisins, or coconut. It's a very easy dessert to make, and to serve. You can even serve it to look like an egg, as they do in Italy-just place a peach half on top.

- Preheat oven to 300 degrees F (150 degrees C). Grease a 2 quart baking dish.
- Beat together the eggs and milk. Stir in white sugar, uncooked rice, butter, vanilla extract, raisins, and nutmeg. Pour into prepared pan.
- Bake for 2 to 2 1/2 hours in the preheated oven. Stir frequently during the first hour.

- Place uncooked rice in a 3 quart saucepan, and add water. Bring to a boil. Reduce heat, and simmer for 25 to 30 minutes.
- Preheat oven to 325 degrees F (165 degrees C).
- In a large bowl, combine beaten eggs, milk, sugar, vanilla extract, and salt. Mix well. Stir in rice and raisins. Pour into a 10x6x2 inch baking dish.

BAKED RICE PUDDING RECIPE
Baked Rice Pudding is a dry and solid variation of the normal wet and creamy pudding. This backed variation is popular in southern states and is also known as old fashioned rice pudding. As name suggests, this recipe involves use of oven for baking. The baking process helps it develop wonderful custard and transforms it into a rich and comforting dessert.

- Directions:Preheat oven to 325 degrees F (165 degrees C).Stir together milk, beaten egg yolks, sugar, vanilla extract and salt in a large bowl. Add cooked rice and raisins and stir to mix well.Grease 8x8x2 inch square baking dish with butter and pour prepared mixture in it.Place it in oven and bake until light brown in color or for around 1 hour. Stir it once (after 30 minutes) in between. After one hour, verify if it's cooked properly or not by inserting the toothpick or knife and quickly taking it out. If it comes out clean, it means that pudding has cooked properly now. If toothpick or knife does not come out clean, then let it cook for 5 more minutes and check again.Take it out from oven and sprinkle ground cinnamon over it. Let it cool for 10 minutes at room temperature.Serve baked rice pudding warm or cold as you like.

- Preheat oven to 325 degrees F with rack in center of oven.
- Butter 4 (6 oz) ramekins.
- Add 1/2 cup milk, 4 tsp rice, 2 tsp sugar, and a pinch of salt to each ramekin.
- Finely grate a little nutmeg over each, then stir to combine.
- Put ramekins in a shallow baking pan and bake until most of milk is absorbed and tops are golden-browned, about 1 hour (a skin will form).
- Cool puddings in ramekins on a rack, about 1 hour.
- Discard skin from top of puddings, then stir 1 TBSP cream into each.
- Puddings can be served at room temperature or chilled.
