GARLIC-LEMON OVEN BAKED FISH

Steps:
- Melt butter in large glass Pyrex measuring cup and add lemon juice, spices and sugar.
- Place bread crumbs in a shallow bowl or platter.
- Spray a shallow baking dish with vegetable spray.
- Cut fish into individual serving pieces.
- Dip fish into butter and then coat each fillet well with bread crumbs.
- Place bread coated fillets into baking dish.
- Repeat until all fish fillets are covered.
- Spoon the remaining herb butter mixture over fish.
- I also use a pastry brush to lightly tap the tops of the breaded fish to make sure it is all cover.
- You may need to melt more butter to coat fish.
- Bake, uncovered, for 15 minutes at 400 degrees.
- Fish is done when fish flakes easily with a fork.

MAINELY FISH
Steps:
- Preheat oven to 400 degrees F (200 degrees C).
- Center each piece of fish on an individual piece of aluminum foil (large enough to enclose the fish when folded). Sprinkle each piece of fish with salt and pepper. Divide the sliced tomatoes, onion, and red and yellow peppers between the 6 pieces of fish, and place on top of the fillets. Sprinkle evenly with the capers and parsley. Drizzle each fillet with 1 tablespoon of olive oil and 1 tablespoon of lemon juice.
- Fold and seal the foil into a packet and place on a baking sheet. Leave 2 inches between each packet for even cooking.
- Bake in preheated oven for 20 minutes.
- Let rest for 5 minutes and unwrap. One packet per person.

BAKED REDFISH FILLETS
Steps:
- Gather the ingredients.
- Preheat the oven to 350 F/180 C/Gas Mark 4. Lightly butter a shallow baking dish that is large enough to hold the fish fillets in a single layer.
- Pat the fish fillets with paper towels to dry.
- Arrange the redfish fillets in the prepared baking dish skin-side down (if there is skin on the fillets).
- In a cup or small bowl, combine the 1/4 cup of melted butter with the lemon juice, onion, paprika, salt, and pepper.
- Pour the butter and seasoning mixture over the redfish fillets.
- Bake in the preheated oven for about 20 minutes, or until it reaches an internal temperature of at least 145 F/63 C. The fish should flake easily with a fork when done.
- Serve the redfish with lemon wedges and rémoulade sauce, if desired.

Steps:
- Spray a 9x13-inch pan with Pam and wipe gently with a paper towel.
- Add lemon juice and water to pan.
- Salt& pepper the fillets, and lay evenly in pan.
- Smother fillets liberally with mayonnaise.
- Top with dill and generously sprinkle on Old Bay seasoning.
- If Old Bay seasoning isn't available, try Emeril's version at FoodTV.com.
- Bake in 350°F oven for 25 to 30 minutes or until fish flakes.
- Serve with lemon wedges.
