OVEN ROASTED MAHI MAHI
Oven Roasted Mahi-Mahi in olive oil and lemon juice, is delicious, flavorful and ready in just 30 minutes.

Steps:
- Preheat an oven to 400°F.
- Lay the bottom of a baking sheet pan with parchment paper and brush with olive oil, then add the fish filets to the pan.
- Brush the fish fillets all over with olive oil, rub in the lemon zest and garlic, then squeeze the juice from 1 lemon over the fish.
- Season with sea salt and fresh ground pepper. Toss the grape tomatoes in 1 teaspoon of olive oil, a pinch of salt and pepper and add to the pan.
- Top fish fillets with fresh thyme and roast until the fish fillets are just opaque in the center, about 10-15 minutes, depends how thick are the fillets.
- Snap off the woody ends of the asparagus and discard.
- In another baking sheet pan, add the asparagus, drizzle with olive oil, juice of half lemon, sea salt and pepper. Toss the asparagus to evenly coat with oil.
- Roast on the top rack of the oven for just 10-15 minutes for a mildly cooked asparagus.
- Remove fish from oven, discard the thyme sprigs and top with fresh thyme sprigs for serving and juice from the remaining half lemon.
- Serve immediately with the roasted tomatoes and asparagus topped with feta crumbles.

- Preheat oven to 425°F. Coat a baking sheet with cooking spray. Stir together mayonnaise and shallot in a small bowl. Spread mixture evenly over mahi-mahi fillets to cover. Arrange fillets in an even layer on prepared baking sheet.
- Stir together panko, tarragon, lime zest, salt, and pepper in a small bowl. Sprinkle mixture evenly over prepared fillets. Bake in preheated oven until panko is lightly browned and a thermometer inserted in thickest portion of fillets registers 140°F, 14 to 16 minutes.

- Preheat oven to 450 degrees F.
- Line a sheet pan with foil and coat with 3 Tbsp. of olive oil.
- Lay the thawed Mahi Mahi fillets onto the oil.
- In a small bowl, combine the blackening spices and mix to combine.
- Thoroughly coat both sides of the Mahi Mahi fillets with the seasoning mixture.
- Bake for 10-12 minutes or until flaky, and the internal temperature reaches 137 degrees F.
- Remove from oven and serve immediately. Serve with your favorite aioli, like this roasted chili aioli, or remoulade sauce.

I was having a Thank you dinner/get-together at a friend's house and was doing 3 courses. I bought the mahi because I thought it would have been interesting to serve, but I had no idea what to do with it! So I took an orange on impulse and some graham crackers and literally tasted what I wanted to do in my mind and out came this lovely seafood dish that was a hit! Served with some tomato and mango salsa or some sauteed vegetables, this will play on your tastebuds. Any Kind of steak-like fish will do (swordfish, salmon) Try 1- 1 1/2 inch fish steaks

- Turn on oven to 375 degrees
- Wash fish with lemon in a glass bowl and drain all liquid. Add all ingredients for fish marinade and let sit for 15 minutes.
- In another bowl, combine orange zest, brown sugar, lemon juice, orange juice and graham cracker crumbs until thoroughly mixed (can also be placed in a food processor).
- Once marinade is set, Coat fish with graham cracker mixture and place on non-stick baking tray.
- Drizzle with Olive oil.
- Cover with aluminium foil and place in oven and let bake for 20-25 mins until tender and cooked in centre. Serve hot.
