HEALTHY SALMON PATTIES (SALMON CAKES RECIPE)
This low calorie salmon cakes recipe is easy to make and so yummy! You can make these healthy salmon patties with leftover salmon, or canned salmon.You can make this salmon fish cakes gluten-free by using Tamari (in place of soy sauce) and gluten-free breadcrumbs.

- To a large bowl, combine the salmon, red onion, red bell pepper, cilantro, lemon juice, soy sauce, sesame oil, Greek yogurt, and mixed together.
- Add the egg, and one cup of the breadcrumbs, and mix together.
- To a shallow dish (or pie pan) add the remaining breadcrumbs.
- Working with wet hands (so the mixture won't stick to you) make 12 salmon patties. To make this easy, start rolling them in a ball as you would meatballs, and then gently push down into a patty form.
- Coat the patties in the remaining breadcrumbs, moving to a baking sheet as you work.
- Heat a skillet over medium heat, and spray with olive oil. Cook the patties in batches, for 2 to 3 minutes each side, until browned. Then transfer to a paper towel lined plate to drain.
- Serve hot, or cool completely and move to a freezer bag for storage. Salmon patties will hold in the freezer for 1-2 months and the fridge for 3 days. You can reheat on a baking sheet in a 350° oven for 15 to 20 minutes.

I found this while looking for recipes to use all the fish we've been catching. It's similar to Russ's Crab Cakes he makes and just as good. We cooked ours in a little oil in a pan 9no oven) but have submitted the original recipe.

Steps:
- Spray a baking tray with spray oil.
- In a mixing bowl combine first 7 ingredients. Mix well.
- Divide into 8 equal round cakes.
- Coat with flour, then dip in egg and finally coat with the crumbs.
- Place cakes on prepared tray; chill for 10 minutes.
- Meanwhile preheat oven to 190c.
- Spray cakes with oil and bake, turning once (spray again). They will take about 30 minutes in total to cook.

Pat dry the fish fillets with a paper towel. With a sharp knife finely chop (almost mince) the fish fillets. Place the chopped fish, egg, tapioca flour, parsley, chili, spring onions, lemon juice, grated ginger, garlic, olive oil, salt and pepper in a bowl and use your hand to combine. - Cook the fish fillet with 1/2 teaspoon salt in a large pot of water. Once the water starts boiling, let it simmer for 5 to 10 minutes depending on the thickness of the fillet. Remove from heat, cool and separate the flesh from bones and skin if any. Dry the flesh on paper towels. Transfer to a mixing bowl and mash well. (Note1)
- Prepare the vegetables and seasoning mix: Heat 1 tablespoon of oil in a pan, saute the onions, minced ginger and garlic. After 5 minutes, add the tomatoes and saute until they are cooked and mushy. Add all the spices and 1 teaspoon salt and mix on low flame until you get an almost dry consistency. Turn off the heat.
- Cool the mixture and add to the fish along with egg and cilantro. Dry-grind the oats coarsely (to the texture of breadcrumbs) and add to the mixture. Mix well.
- Shape the mixture into about 15 lime-sized balls and flatten them into rounds. Heat the remaining oil in a pan and shallow-fry the fish patties on medium heat, turning them over until you get a uniform golden brown tint.
