CRISPY BAKED CHICKEN CUTLETS

Steps:
- To prepare the cutlets, pound each chicken breast to an even 1/4 inch thickness.
- Next, rub the chicken with Italian seasoning, salt, pepper and olive oil. If time allows, marinate it for 1h to overnight. This will give you the most tender and moist chicken.
- Preheat your oven to 400°F and line a rimmed baking sheet with parchment paper. In a large bowl, whisk together the egg, milk, a pinch of salt and pepper.
- In a shallow dish, combine the garlic powder, panko with parmesan and smoked paprika. Dip the chicken cutlets into the egg mixture, then dredge it into the panko mixture, lightly pressing to coat
- Place the chicken onto the prepared baking sheet and spray with cooking oil spray. Bake in preheated oven for 15 minutes, then flip the chicken cutlets and bake for 5-8minutes more, or until golden and cooked through.
- Sprinkle with fresh chopped parsley, and serve immediately.

- Preheat Oven 350 degrees: Combine the flour, cornmeal and seasonings in a shallow bowl. Place the milk in a shallow bowl. Dip the chicken in the flour mix, milk bath and back in the flour mixture. Place in a baking pan with a drizzle of vegetable oil and bake for 20 - 25 minutes or until the chicken is slightly golden and the juices run clear. Suggestions for serving: Serve with a marinara sauce for dipping.

- Place chicken cutlets in a large bowl. Season with garlic, paprika, pepper, thyme, cilantro, and cloves. Mix in buttermilk. Marinate in the refrigerator for at least 12 hours.
- Preheat the oven to 375 degrees F (190 degrees C). Grease a large baking sheet.
- Mix flour, onion powder, and soul food seasoning together in a bowl. Beat eggs together in another bowl. Pulse pretzels in a food processor until finely crushed. Pour into a shallow bowl.
- Lift chicken cutlets out of the marinade, letting excess drip back into the bowl. Dip chicken cutlets in flour, then in eggs and crushed pretzels. Transfer to the prepared baking sheet. Discard marinade.
- Bake in the preheated oven until chicken is no longer pink in the center, about 40 minutes.

I love fried chicken, but it takes so long and is such a big mess. I came up with this one, and have been making it ever since! Everyone I have given the recipe to has loved it as well.

- Preheat oven to 350 degrees F (175 degrees C).
- Place flour in a shallow plate or bowl and season with salt and pepper to taste. Put the bread crumbs in another shallow plate or bowl and beat the eggs in another bowl.
- Dredge the chicken piece by piece in the flour, then the egg, then the bread crumbs, until all pieces are coated. Pour the oil into a 9x13 inch baking dish. Add the chicken to the dish and sprinkle with paprika to taste. Bake in the preheated oven for 30 minutes, then turn pieces over and bake for another 30 minutes. Remove from oven and drain on paper towels. Enjoy!

- Preheat oven to 400 F.
- Line a large sheet pan with parchment paper. Set aside.
- Pat dry the chicken and pound the breasts to uniform thickness, about ¼ inch thick.
- In a wide bowl combine the marinade mixture ingredients and then dredge in the pieces of chicken breast. Massage well with hand and set aside.
- In a shallow bowl, place the panko bread crumb ingredients and mix well to combine.
- Dredge each breast onto the crumb mixture, coat evenly and transfer to the sheet pan. Lightly spray with cooking spray.
- Bake for 10-12 minutes then flip the chicken breasts to the other side and bake for an additional 10 minutes or until chicken is cooked through and turned golden and crispy. Internal temperature should be 165 F.
- Remove from the oven, sprinkle some parsley on top and serve the crispy chicken cutlets with lemon slices on the side.
