SIMPLE BAKED FISH IN FOIL WW

Simple Baked Fish in Foil Ww image

This is so simple, I can't believe I couldn't find it anywhere on zaar. The onion keeps the fish from drying out and gives a lovely mild flavor. We especially like Telipia, but any white fish can be used, as well as any of your favorite fish seasonings. We like lemon pepper or Dominant One (an all seasoning mix from hubby's Indiana hometown spice factory www.marionkay.com). Fresh fish from a camping trip is good also, in fact this method is great for outdoors, as it can be cooked on the grill for 20 min, clean up is a snap, just toss the foil.

1/4 teaspoon salt
1/4 teaspoon pepper
1 1/4 lb cobia or sea bass fillets, cut into 4 pieces
2 tablespoons olive oil
1/3 cup dry white wine
1/2 cup reduced-sodium chicken broth

BAKED COBIA OR LEMON FISH WITH DIJON MUSTARD CRUMBS RECIPE - (3.6/5)

Baked Cobia or Lemon Fish with Dijon Mustard Crumbs Recipe - (3.6/5) image

Provided by therman

Number Of Ingredients 10

1/3 cup mayonnaise
1 Tbsp Dijon mustard
1 tsp lemon juice (or lime juice) and zest
1/4 tsp Cayenne pepper
3/4 cup Panko breadcrumbs
1 Tbsp minced fresh parsley
1/4 tsp sea salt
1/2 tsp black pepper
1/2 tsp smoked paprika
4 (6 to 8 ounce) pieces Cobia fillet or lions, 3/4 to 1 1/2 inch thick

Steps:

  • 1. Adjust oven rack to upper-middle position and heat oven to 450 degrees. Use shallow baking dish 9 X 11 and spray bottom lightly with Pam or vegetable oil spray. In a shallow bowl, whisk together mayonnaise, Dijon mustard, lemon juice, lemon zest and cayenne pepper, set aside. In a second shallow bowl, mix together breadcrumbs, parsley, sea salt, black pepper and paprika. 2. Rinse fish in cold water and pat dry with paper towels. Lightly season with salt and black pepper. Brush the top of each fillet with mustard and mayonnaise mixture (thicker is better). Place fish into breadcrumb mixture and press firmly to build a heavy crust onto the mustard mixture. Arrange fish in baking dish with the crumbed side facing up and coat liberally with vegetable oil spray. Bake until fish is golden brown 12 to 15 minutes or until thermometer reaches 125 degrees at center. Serve with rice, fresh steamed vegetables and side salad. Serves 4

WHAT IS COBIA AND HOW DO YOU COOK IT? FIVE COBIA RECIPES
what-is-cobia-and-how-do-you-cook-it-five-cobia image

From simplyhealthyfamily.org
Estimated Reading Time 5 mins
  • Broiled. Slices of broiled cobia and slices of lemon on the plate. One way is to broil cobia. Start by preheating the broiler. You can then brush the pan with olive oil so as the cobia fillets won’t stick to the pan.
  • Fried. Slices of broiled cobia on the chopping board. You can also fry cobia. To absorb excess moisture, pat the fish with paper towel. You can then sprinkle the fish with salt and pepper.
  • Grilled. Slices of broiled cobia on the plate. Preheat the grill to medium-high heat. I usually set it to about 400 degrees Fahrenheit. Again. To prevent the cobia from sticking, the grates should be covered by olive oil.
  • Sauteed. sauté cobia and vegetables on the plate. You can also sauté cobia. Start by placing a skillet over high heat, then putting in 3 tablespoons of olive oil.
  • Baked. You can also bake cobia fillets. However, you would have to spend some time in doing so because baking cobia would take around 20 to 30 minutes. The wait is worth it, so to speak because you would end up with a delicious meal.
